Barrel Strength Bourbon Whiskey
Our Barrel Strength Bourbon Whiskey comes from the top one or two barrels in our warehouses in Kirby. Chosen for their unique character and worthiness to represent the best of Wyoming Whiskey. Bottled at barrel-proof to capture the maximum flavor and richness. This is the true test of the spirit, and as pure as bourbon-making and whiskey-drinking can be.

TASTING NOTES

COLOR: Deep copper to mahogany

NOSE: Intense notes of Demerara sugar, plum pudding, rich Austrian Sachertorte with apricot jam, and dark chocolate-covered espresso beans.

PALATE: Notes of dark dried fruit with sweeping waves of cherry cobbler with a buttery cinnamon-biscuit crust, moving towards a good balance of rum raisin ice cream, prunes in syrup, chocolate-covered orange peels, nutty marzipan, croissants with honey butter, and a whisper of smokey barrel char.

FINISH: Long and luscious, with excellent balance between the candied citrus and dark fruit, molasses, dark chocolate, buttery and nutty notes, and brown baking spices, with a final big “Wyoming hug.”

The Bruichladdich Thirty has spent the entirety of its maturation life in handpicked, exceptionally rare ex-Bourbon casks. A limited and refined single malt Scotch whisky, The Bruichladdich Thirty is bottled at 43% bringing the sweetness of toasted oak, honey and soft vanilla to the fore.

Delicate yet complex, a hint of dark chocolate complements the spirit’s elegant floral profile while the gentle influence of sea air lingers – a subtle nod to the whisky’s all Islay maturation.

DESCRIPTION
Small Batch Release - Latest Batch 11 -Added to the range in 2015, The 36 year old edition is vibrant, fruity and floral on the nose, with aromas of tropical fruits layered with winter spices from the Oloroso Sherry butts. Rich yet sweet on the palate, the fruity tones develop into oaky flavours of raw heather honey and roasted chestnuts. The depth of this whisky is reflected in its remarkably long finish with waves of fruit fading to an enticing winter spice finish. A very special dram indeed.

Cordon Negro Rosé’s bright, fruity personality envelops the senses in the glass with fresh raspberry and fruit cocktail aromas. The toasty palate mixes strawberry jam and red currant to deliver a pleasant mouth feel, wrapped up in a slow, light, sweet finish.

Vinification
The late harvested Garnacha grape, also known as Grenache in France, collects sun and warmth a month longer than most cava grapes, proffering abilities to build higher levels of sugars, translating to higher alcohol content. The indigenous and rare Trepat grapes, by contrast, are low altitude, low sugar grapes that ripen mid harvest, delivering lower alcohol levels upon fermentation. The combination of the two makes for a delightfully complex, nicely balanced blend with a rosy complexion. At harvest, the grapes are processed separately, then transferred to stainless steel tanks where proprietary yeasts from Freixenet's own collection begin the first fermentation. After 10 to 12 days of interaction with the yeasts in perfect 59 to 63 degree atmosphere of the caves, the wines are racked, fined, filtered, and prepared for blending in traditional méthode champenoise, heralding the second fermentation.
