A blend of 4+ year old Coppercraft-distilled and 9+ year old sourced Indiana bourbon creates a punchy, spicy whiskey. We use brandy blending and proofing techniques that take three months from barrel to bottle.

SINGLE SEASON, SINGLE DISTILLERY

This rare whiskey was bottled under the strict tenents of the Bottled-in-Bond Act of 1897. Aged in the temperate climate of the Northern California coast, the original distillate was altered only by the addition of pure water from the Russian River Valley aquifer. This is the purest expression of Redwood Empire’s craft.

HUMBOLDT REDWOODS STATE PARK
The Redwood Empire stretches from San Francisco to Humboldt Bay and on to the Oregon border. The region is home to majestic coastal redwoods, some more than 2,000 years old. The Patriarch Forest in Humboldt Redwoods State Park is home to Rocket Top, a tree reminiscent of a 365-foot-tall bottle rocket. This rye is as complex and extraordinary as the tree it represents.

A marriage of ex-bourbon and ex-sherry casks, this “Just Hatched” Whisky reveals Cardrona’s underlying character of borage flower honey, vanilla, spice, with weighted spirit on the tongue – an indication of the adult whisky to come.

Tasting Notes
The 2021 Cherry Pie Tri-County Pinot Noir is concentrated with aromas of macerated cherries, cranberries and dark oolong tea. On the palate, this wine has brambly notes of mulberries, ripe Bing cherries with notes of baking spices and sweet toasty oak with a long, silky smooth finish.

The Vineyard
Combining three counties, each in its own AVA, Cherry Pie Pinot Noir showcases the best of each county’s unique flavor profile. The Napa County grapes are sourced from Carneros which is the coolest of the three climates and provides bright earthy red fruit to the blend. San Luis Obispo’s climate generated by the proximity to the Pacific Ocean is vital for the freshness and vibrancy of this wine. The vineyards are located just a few miles from the Pacific Ocean, with a very long, cool growing season. The Santa Barbara County grapes benefit from sandy soils, bright sunshine and cool ocean breezes which combine to lengthen fruit ripening and extend hang time, resulting in intense aromatics and bright acidity.

NOSE: This refined Cognac offers a bouquet of aromas focused on a core of woody and smoky notes of tobacco and cocoa as well as fruity notes of candied fruit and prune.

COLOR: Deep, coppery amber.

TASTE: XO is incredibly rich, full-bodied and stunningly smooth. The initial notes explored on the nose are enriched with aromatic hints of plum, mocha, cedar wood and liquorice.

Our fourth Maker’s Mark Wood Finishing Series may be the easiest way to taste your way through the rickhouse.  The name BRT was given to these expressions because of the influence our consistent practice of hand-barrel rotation (BRT) and temperature has on our whisky process. Made to be enjoyed as a pair, BRT-01 is inspired by the tasting notes found at the hotter top of the rickhouse, and BRT-02 is inspired by tasting notes found at the cooler bottom. Together,  they give people the unique opportunity to experience where the characteristics responsible for the original Maker’s Mark come from, so they can reach a new level of understanding of whisky.

AROMA: Caramel and butterscotch mixed with a sweet spice

TASTE: Bright, brown sugar and stone fruit

FINISH: Warm and toasty, paired with hints of honey
