THE AROMA
Soft, yet full bodied, Calisco leads with enticing aromatics reflective of the individual grape varietals in its blend. Warm and bright citrus notes lean into richer notes of cacao, dark fruits, white almond and fresh herbs.

THE TASTE
Sophisticated, yet fun and playful like the Spirit of California itself. Aromas reveal floral and herbaceous notes of jasmine and honeysuckle with satsuma mandarin, bergamot, green apple and asian pear.
Soft, yet full bodied with a round mouthfeel that enriches the complex palate of sea brine, cucumber and honeydew melon, lemon verbena and eucalyptus which evolves into a rich finish of blueberry, lavender and chocolate, wrapped in subtle spice notes of Ceylon cinnamon bark and white pepper.

About the Brand

Our company’s history begins in 1885, when the descendants of Don Antonio Faustino de Aceves y Casillas built Hacienda La Capilla. Don Antonio Aceves, better known as “Amo Aceves” was the founder of Capilla de Guadalupe, a town that got its name from the town chapel, built in honor of the “Virgin of Guadalupe”. This town rests under the shade of the Cerro Gordo, in the heart of Jalisco Highs, at 7290 feet above sea level, providing excellent conditions for the growing of agave, such as moderate climate and volcanic ground. Don Antonio was a hardworking man and a passionate promoter of quality. His descendants took advantage of the local Agave farming and formally started the company Hacienda la Capilla S.A. de C.V. in the year 1993. Since those days, the growth of agave has been its core business. La Adelita is a partnership bringing a renowned award winning vintner together with a generational family and visionaries in Mexico to create a uniquely pure and traditional tequila that is a 100% estate program.

In Scots, a “Deacon” is an adept and proficient master tradesman. The expert distillers behind our Scotch fit the name perfectly: The Deacon is an homage to master craftspeople, whatever their trade may be.

THE DRAM

THE DEACON blend is a masterful blend of both smoky Speyside and peaty Islay malt whiskies, making it a complex, rich, and smoky dram. In our blend, the single malts from Islay have a characteristic peaty smoke flavour, while the single malts from the mainland have a bonfire-like smoke character. A nose of charred orange, sweet malty biscuits and woodsmoke gives way to juicy orange, echoing the nose, on the palate, delicate spice, and tangy peat. The finish is both sweet and smoky, long, and smooth.

Traditional copper pot stills used in our distillation process lend their iconic shine to The Deacon’s stunning bottle, which looks like nothing else on the shelf or back bar, covered in an ornate pattern and stamped with our iconic mascot.

Maker Notes

Sam Brannan was tall, charismatic, and had a talent for evocative and powerful writing, as well as distilling fine brandy. In 1846, Sam took a voyage on the ship “Brooklyn” from New York to San Francisco with a printing press in tow. When he landed in San Francisco, he started the town’s first newspaper, The California Star, which debuted on January 9, 1847. 

In 1848, Sam bolted into the old San Francisco Plaza and was the first to announce the stupendous discovery, “Gold, Gold, Gold, from the American River!”. The whole city followed his lead in the search of gold and his newspaper, The California Star, became known as, “The Voice of the Gold Rush.”

The Calistoga Star brandies are a nod to not only Sam’s first newspaper in San Francisco, The California Star, but also his love for distilling brandy he called “Calistoga Cognac” that critics during the era called “a brandy equal to the finest brandies in France”.

Distillate: Barbera and Ugni Blanc grapes from the Central Valley

Aging: Cellared for a minimum of 10 years and maximum of 20 years in a combination of 40% Column aged in used Bourbon Barrels and 60% Alembic aged in French Oak

Color: Amber

Aroma: Candied citrus, vanilla, nutmeg and stewed cranberries

Palate: Lush mouthfeel with a smooth finish; notes of dried figs, toffee, espresso and charred citrus

Dos Artes Tequila is made from estate-grown 100% blue agave, presented in One Liter (1L) hand-painted ceramic bottles, each bottle is unique and has a story of its own. This tequila is distributed in limited amounts.

Aroma: Hints of Caramel, Vanilla, and Toffee.

Crafted with California botanicals including dragon fruit, prickly pear and pepper tree the award-winning Two Shores Gin had its inspiration in Scotland decades ago when a young girl watched her dad make gin in his greenhouse. The recipe was crafted with the help of a London distiller then small batch distilled in L.A., giving it a distinctively premium and smooth quality, perfect for sipping and cocktails.

Named for its "London Tradition and California Spirit," this satin-textured beauty had us wowed for its approachability. After the British defeat at Yorktown in 1781, Kentucky County emerged in the west of the Appalachian mountains. Early settlers received "corn writs," inspiring them to distill bourbon from the excess corn. A SENSORY JOURNEY

This special single malt is inspired by the Ethiopian Arabica bean. Ethiopia is claimed to be the birthplace of coffee as the Arabica bean was the first species of coffee to be cultivated. ​​ 

With a distinct coffee flavour, this whisky exudes notes of espresso, dark chocolate and sweet oak. The intensely flavoured single malt invites you to immerse yourself in a sensory journey through flavour and aroma.

El Tequileño Añejo Gran Reserva begins with 100% premium grown mature Blue Agave from the Highlands of Jalisco. These are combined with the mineral rich water from El Volcan de Tequila and distilled in copper pot stills. Mad River Distillers Silver Oak Rye is a premium American rye whiskey crafted in collaboration with Silver Oak Cellars. THE CLASSIC MANHATTAN

The oldest anise liqueur in France, Pernod is made from distillates of star anise, fennel and 14 other botanicals such as coriander and mint. It has a low liquorice content, which sets it apart from pastis. The original version included wormwood and was produced as absinthe at the Pernod Fils factory from 1805. The Pernod liqueur of today was created in 1938, though a reformulated absinthe based on the original recipe was released in 2005. Pernod merged with Ricard in 1975.
