Tasting Notes
Baked cherry, toasted oak, vanilla cream, and hazelnut create a decadent, complex aroma. On the palate, a balance of wood sugar and spice gives way to a lasting finish of coconut, red fruit, and caramel.

SMALL-BATCH STRAIGHT RYE WHISKEY

Complex and spicy with cinnamon and cloves on the nose, mint and pepper on the tongue and a long, chocolatey finish with hints of oak. Enjoyed neat, on the rocks, or in a cocktail, this smooth blend will amaze robots and humans alike.

Paradigm Rye marries both their comprehensive access to whiskeys across state lines with spirit distilled in Red Hook blended with hand-selected rye whiskeys from Kentucky and Indiana to carry on the tradition of Widow Jane’s unusual Ryes that are both delicate yet a powerful base for classic cocktails. Its intriguing and approachable flavor profile goes beyond the spice notes for which rye is known, and incorporates the sweetness and mouthfeel emblematic of the diversity of rye.

Glen Scotia Victoriana has been bottled at cask strength and finished in heavily-charred oak casks. Victoriana has notes of richly-spiced fruit, vanilla and oak throughout the palate, followed by a gently smoky finish.

With its deep golden color and delicious wood-based flavors, Cincoro Reposado is an evolution of Cincoro’s award-winning Blanco. Distilled in small batches, this rare spirit is characterized by the flavors of toasted oak, caramel and baking spices. Smooth and refined, this is a tequila made for sipping – on or off the rocks.

Old Carter is the passion project of “flavor chaser” partners Mark Carter and Sherri Carter, whose beverage industry roots trace back to award-winning careers in the California wine business. After resurrecting the long-dormant bourbon brand Kentucky Owl in 2011, the two were irreversibly hooked on the art of whiskey making and blending. Kentucky Owl sold unexpectedly in 2017, but by then Sherri & Mark were so enamored with the vibrant spirit of Kentucky’s whiskey community, they made a commitment to carry on their love affair with whiskey by making a statement of their own, right in the Bluegrass. And Old Carter Whiskey Co was born.

Headquartered in Louisville, the Old Carter team produces Straight Ryes, Bourbons and American Whiskies in locations throughout Kentucky. Each bottle is personally crafted by Mark and Sherri, who create every blend and select every single barrel program release together.

Senator Barrel Proof 6-Year Whiskey is a robust, six-year-aged spirit showcasing rich caramel, vanilla, and oak notes with a nuanced spice. Extra Añejo Tequilas are aged at least 3 years in barrels, making the product itself at least 10 years old - accounting for the time agave takes to grow, at least 7 years - by the time it touches your glass.  Some extra añejos lean towards a cognac profile if given a heavier aging, while others that are more gently aged, simply are an extension of an añejo profile, but softer, sweeter, and with more presence of oak.  We suggest that these be sipped neat, or enjoyed with a single ice cube.

InSiete Leguas De Antano Extra Anejo tense golden yellow color, with golden shades and full body. It offers to the nose fruity notes and delicate accents to spices. The agave elegantly blends this aromatic harmony, fulfilling its olfactory promise in the mouth. For 5 years, the barrel coat ends up printing its sophisticated style, becoming the frame that highlights its pleasant personality.

The Sluricane Hurricane, presented in a vibrant red bottle, is a delightful cocktail that embodies the essence of summer and the tropics. This spirited concoction is skillfully crafted by blending rum with a medley of refreshing fruit juices, making it the perfect choice to elevate any celebration. Du Nord is the brainchild of Chris Montana, who decided to open a distillery in his home city of Minneapolis in 2013. It's a family-run operation that combines Chris' city-smarts with Shanelle Montana's country spirit. The craft spirits company has since grown considerably from a garage-type distilling project and works to bring minorities and members of underrepresented communities into their family. The name Du Nord is a tribute to Minnesota's title of "The Star of the North." They offer tours of the Du Nord distillery and operate a Du Nord Cocktail room on the premises. Their lineup currently consists of the L'Etoile Du Nord sipping vodka, Fitzgerald Gin (a London dry and old world style hybrid), Apple Du Nord apple liqueur, and Caf Frieda coffee liqueur. Each and every one of these has garnered awards from some of the most prestigious spirits competitions. Du Nord Mixed Blood Blended Whiskey is the newest member of the Du Nord family. It's an in-house bourbon that has a high-rye mash bill and is blended with sourced whiskeys for a profile that is rye-forward, fruity, spicy, and pleasantly sweet. It's aged for two years before being bottled at 80 proof.

Embedded in the rolling Appalachian hills of Greenbrier County, West Virginia, Smooth Ambler Spirits is a testament to the hard-work and craftsmanship of TAG Galyean and John Little. Working in their state-of-the-art, 5,200 square foot distillery, Galyean and Little combine innovative techniques with locally-sourced grains and a hands-on distillation process to produce remarkable spirits that are bold, complex and perfectly balanced. Old Scout Straight Bourbon Whiskey is steeped in the tradition of the Highland Valley. Together, Galyean and Little hand-selected casks of six and seven year-old small-batch bourbon composed of a mashbill of 60% corn, 36% rye and 4% malted barley. Afterwards, the two distillers blended the bourbon with local mountain water and bottled each bottle by hand at a robust 99 proof (49.5% ABV). The high rye content of Old Scout Straight Bourbon Whiskey gives it an exceptional taste and smoothness, preserved by non-chill and non-carbon filtering. The bourbon has an aroma of tobacco, which opens up to sweet notes of apples and cherries that are nicely balanced by hints of spicy rye, cinnamon and oak. The finish, which is long and flavorful, has notes of baking spices, sweet almond extract and eucalyptus. Old Scout Straight Bourbon Whiskey earned a score of 95 points by Wine Enthusiast and earned the Gold Medal from the American Distilling Institute.

STRAIGHT AGED IN EX-RYE BARRELS .
This beautifully blanched, fragrant rum is fully matured in American rye casks, bringing a beguiling intensity to its flavour. Spicy and peppery notes combined with a smooth, sweet complexity shows a whole different side to Don Papa.

TASTING NOTES

Colour: Amber, golden straw.

Nose: Fruity with hints of rye spices

Mouth: Rich, dry, and velvety.

Finish: Bright, long, and delicate.

Puts to rest the myth that good bourbon only comes from KY. Blend of 70% corn, 20% rye and 10% malt. Fermented with a special, peppery yeast normally used for saison beer. Cinnamon and clove on the nose is backed up by corn sweetness and oak. The body is bold and rich, with the sweetness and spice paired nicely. A different take on bourbon with aggressive spice and a hint of drying astringency. Perfect for sipping neat, or enjoy a new twist on an Old Fashioned.
