On the Rocks Premium Cocktails was launched in 2016 by Andrew Gill, Patrick Halbert, and Rocco Milano in Dallas, Texas with the idea to bring the cocktail bar experience into the comfort of your home. They produce premium craft ready-to-drink cocktails using the finest natural ingredients and proper spirits. Their aim is to bring the whole experience of having a consistently perfect cocktail, without the need for multiple ingredients and equipment, and without sacrificing taste. No preservatives are added and the range is sweetened with cane sugar only. After securing several partnership deals with airlines and hotels that recognized the quality of the product the list includes Four Seasons, Hyatt, Hilton, and Hawaiian Airlines the company took off in a big way. "My focus was to create bar-quality cocktails that had balance and subtlety of character making cocktails that have layers of complexity rather than being overly sweet, boozy, or otherwise. We operate under the belief that good is the enemy of great. We kept working on our drinks until we had great drinks," says co-founder and mixologist-in-chief Rocco Milano. After Beam Suntory joined to provide quality branded spirits for their cocktails, the road was paved for a smash hit. "We couldnt be happier to have gained a partner like Beam Suntory. Their partnership will help us grow our business much faster, and our collaboration will mean that our hand-crafted, quality cocktails will also include some of the world's finest premium spirits," said Halbert of the partnership. Right now their lineup consists of The Old Fashioned, The Aviation, The Mai Tai, The Cosmopolitan, Jalapeo Pineapple Margarita, and The Margarita. On the Rocks The Old Fashioned keeps the recipe simple when creating their take on this timeless classic. Plantation Stiggins' Fancy Dark Pineapple Rum

Born in southern Burgundy, Alexandre Gabriel spent his youth working on his family's farm in central France. After studying at the Macalester College in Minnesota and earning a degree in Lyon, Gabriel began working at Maison Ferrand, one of the oldest cognac houses in France. During his tenure at Maison Ferrand, Gabriel would dispose of used cognac casks by selling them to distilleries in Scotland and the Caribbean. "Our love affair with rum began when we sold the prized casks that once held our Cognac to rum producers, and we fell in love with their product," says Gabriel. The tradition of "pineapple rum" dates back to the 1700s, when Caribbean distillers would soak pineapples in their rum barrels, giving the rum an uncommon richness and sweetness. Although the practice eventually fell out of favor, Gabriel and his partner-in-crime, cocktail writer David Wondrich, decided to revive the tradition after stumbling across several ancient recipes buried in the 1824 English Journal of Patent and Inventions and the 1844 Journal of Agricultural Society. To craft Plantation Stiggins Fancy Pineapple Rum, which is named after Rev. Stiggins, a character in Charles Dicken's "Pickwick Papers," Gabriel steeps the flesh of Queen Victoria pineapples in his aged Plantation Original Dark Rum. Then, seeking more aromatics, Gabriel distills the pineapple rind with his Plantation 3 Stars White Rum, blending the two rums together before letting the new spirit spend additional time in oak barrels. "It's not too weird... that's the strength of it," says Wondrich.

Daniel Weller Emmer Wheat Recipe 1794 Bourbon Whiskey

Launched in 2023, Daniel Weller is an experimental line exploring the impact of different strains of wheat on its storied bourbons, inspired by and named after the trailblazer of the Weller family. This exciting extension of the original wheated bourbon brand demonstrates Buffalo Trace Distillery’s excellence in innovation while honoring a forefather of American whiskey, Daniel Weller – grandfather to William Larue Weller – and the family distilling traditions he passed down to the generations of whiskey pioneers that followed him. The inaugural release is made with Emmer wheat, an ancient Egyptian grain that’s rarely seen in modern-day stills. Aged for nearly 12 years and bottled at 94 proof, the nose is fresh and nutty, with notes of orange zest, hazelnut, cinnamon and caramel; the palate a well-rounded blend of bold oak, sweet honey and orchard fruits with a complex oak-forward finish complemented by baking spice and leather notes.

ABOUT DANIEL WELLER
While William Larue (W.L.) Weller’s place in whiskey history is widely known as one of the first to sell a “wheated” bourbon in Kentucky, his grandfather’s story has yet to be shared. After fighting in The Revolutionary War, Daniel Weller embarked on a flatboat voyage down the Ohio River with his wife and children, ultimately settling in Kentucky in 1794. Following in his father Johannes Weller’s footsteps, who distilled rye whiskey used as currency in early American barter economy, he soon began producing whiskey and leased his still to proprietors like Jacob Hirsch to supplement his income. When Daniel passed away in 1807, he left no will, requiring his son Samuel to purchase his stills and equipment to continue the family legacy, which he would ultimately pass down to his son William Larue, founder of W.L. Weller & Sons. The Daniel Weller experimental line is inspired by Daniel and his pioneering spirit, with plans to release one limited expression every other year, when each experiment is deemed ready for bottling by Master Distiller Harlen Wheatley.

RUM OLD FASHIONED

Over two hundred years old, the Old Fashioned is the very definition of a “cocktail”: a combination of spirits, sugar, water and bitters. And while this classic is typically made with whiskey, it can in fact be made with almost any base spirit. We make our Canned Old Fashioned with a long-aged, full-flavored, “whiskey-drinker” rum: 5 Years Barbados aged rum, which we combine with Xaymaca Special Dry pot stilled rum, a touch of sugar, and a dash of Bittered Sling’s Malagasy chocolate bitters. The result is a 100% all-natural, gluten-free Old Fashioned in a Can masterpiece.

Serve our Rum Old Fashioned over ice, misted with orange oil and garnished with orange peel.

Weeks of tweaking led us to this combination of tropically fruity malt whiskies from the Glen Elgin and Speyburn distilleries, together with whiskies influenced by Oloroso Sherry casks. Single malt from the Ardmore Distillery lends a herbal Highland peat note.

This is sure to delight fans of warm and vibrant whiskies, whether synaesthetic or not. Though 2019 feels a very long time ago, we are delighted to finally share Mannie’s vision of delicious whisky with the world.

What does a colour taste like?

The Circle is our international bartender competition; it serves as a kind of symposium in which the bar world and whiskymakers can come together to share ideas. ‘Is it possible to make a whisky that evokes the colour of coral?’ was the idea Mannie Monaghan, 2019’s winner, posed to us.

It wasn’t until after Mannie Monaghan won our international bartender programme The Circle in 2019, and we began working on a whisky together, that we learned he is synaesthetic. Mannie wanted his whisky to evoke a particular colour – coral – and so began a unique whisky-making project.

Affecting roughly 4% of the population, those with synaesthesia often experience a blending of their senses – for Mannie, aromas and flavours reveal a spectrum of colour. Not being synaesthetic ourselves, Mannie spent two lengthy sessions in the Blending Rooms, scouring sample boxes for whiskies that matched the warmth and powerful positivity of Living Coral.

We love the bright pineapple and stewed peach aromas that leap out of the glass. The flavour is of vanilla, honey and sultanas soaked in Cognac.

Founded in 1982 by German-born J?rg Rupf, St. George Spirits is one of the oldest craft distilleries in the United States. The distillery, housed in an old World War II airplane hangar on a former naval base on the edge of San Francisco, is home to Lance Winters, nuclear engineer, mad scientist and St. George's master distiller, and Dave Smith, St. George's chief blender. Winters and Smith, who are widely-known for experimenting with different types of spirits, have a laboratory dominated by a 10-liter test still, which sits adjacent to the glass beakers and graduated cylinders that cover every inch of their counterspace. Next to the dusty chalkboards caked with equations for the conversion of sugar to alcohol and intricate diagrams of molecular structures are bottles of experimental whiskies, vodkas and even an aging balsamic vinegar (it's 14 years old already). After 30 years of producing their own spirits, St. George Spirits has developed a wicked hobby barrel thieving. Breaking & Entering Bourbon is the product of Winters and Smith going deep into the rickhouses of Kentucky's most venerable bourbon distilleries and selecting 300-plus barrels of bourbon to bring back to California. After sampling each individual barrel (which took three months alone) and experimenting with different blends, Winters and Smith settled on a recipe made up of 80 different barrels, each ranging in age from five to seven years. The result is a criminally delicious bourbon with notes of maple, banana, brown sugar and cinnamon. "We like to think of our spirits as parties in a bottle, and the label is the invitation," says Winters.
