You start with a hare-brained idea, you bring together three unique casks, two masters in their own right, and a whole lot of heat and smoke… what do you get? You get the Distillery’s first ever barbecue-inspired whisky – Ardbeg BizarreBQ. Cooked up by renowned Master Distiller, Dr Bill Lumsden, alongside bona-fide god of the grill, Christian Stevenson (AKA DJ BBQ), this mouth-watering malt packs a meaty, peaty punch.

The same way it is with grilling, there’s one vital element in creating our first BBQ-inspired malt – fire. Toasting a selection of three casks, double charred oak casks, Pedro Ximénez sherry casks and BBQ casks, this combined recipe comes together to bring a sweet, tangy, smoky flavour… perfect for BBQ!

Aroma

Puffs of charcoal and soot mingle with smoky wood and aromatic herbs and spices. Treacle toffee, hickory smoked ham and cinnamon-dusted espresso rise up. A splash of water releases distinctively sharp citrus aromas, along with herbal notes such as fennel and aniseed. Grilled artichokes and a suggestion of seared meat sizzles the senses. The undeniable smell of bonfire and BBQ embers lingers in the background.

Taste

The mouthfeel is alive with spice, like BBQ ribs smothered in chilli. A myriad of deep, warming smoke follows close behind in flame-grilled steak, chilli oil, cured leather and clove. Ginger, aniseed and tar crackle on the palate with an aromatic woodsmoke edge.

Finish

The massive, hot aftertaste lingers on and on, with more grilled artichoke, black olives and a sooty note that slowly simmers away.

The journey to create Uncut the Younger began around October 2020. I tried a Straight Bourbon blend before proofing it down and I was really impressed with the flavor profile. It was fruit forward with tons of delicate candy flavors and big cinnamon spice on the finish. My original thought was to create a younger version of Uncut Unfiltered, and release it as a Rare and Limited batch. In December 2020, when the first Rare and Limiteds’ were announced, I quickly realized that a R&L would never retail for less than regular Uncut, so the idea was put on a back burner. A few months later the company that makes our clear stock bottles for Straight, informed me they were coming out with an amber version. I was interested and I knew exactly what to use those for. I let them know I wanted as many as they could get me. Releasing a Rare & Limited younger Uncut was one thing, but being able to offer an affordable cask strength bourbon that could be one of our core expressions AND a high proof lover’s daily sipper, really got me excited. I truly believe having superior and affordable bourbons is essential.  Also I wanted Straight to have a cask strength sibling the way Small Batch has Uncut Unfiltered, it all just made sense. A year and a half later - Uncut the Younger, our second expression in the entry level category is finally here! Consisting mainly of 4 year 36% rye bourbon from several floors and warehouse locations. Uncut the Younger is blended to be fruit forward, with tons of candy flavor notes and finishing with some bold cinnamon spice with gentle heat. It’s non chill filtered so it’s buttery and creamy, drinking more delicately than one would think based on its proof.

Bozal Artesanal De Borrego Sacrificio Mezcal

On the steep precarious hillsides of Oaxaca, Guerrero and Durango varieties of agave, indigenous to the region, grow wild and are heavily sought after by the local mezcaleros. These varietals produce flavors that are exotically intense, with rich earth tones and savory smokiness. From the heart of the maguey these flavors are traditionally extracted to produce mezcal that is wildly refined. Because we at bozal believe that something wild produces a far richer spirit.

Agave

The Espadín agave, known as the genetic Mother of the Blue Weber Agave, is used to produce tequila, and is also the predominant agave used in mezcal production. Unique in itself, the characteristics of this agave showcase the aromas of wet earth, a rich smokiness on the mid-palate, and a finish reminiscent of wild flowers. This variety of agave is a subspecies of the Angustifolia Family of agave.

A small agave varietal, the Tobalá, a subspecies of the Potatorum Family of agave, has broad, spade-like leaves. The compact size of this agave yields limited quantities of mezcal and takes 12-15 years to reach full maturation. At this time, the plant sends up a flower-bearing spike that can be anywhere from 10 to 20 feet high. Known to many as the king agave, Tobalá can only grow from seed and is becoming increasingly rare. This agave offers intensely aromatic mezal with complex notes of tropical fruit.

Taste

A dry mineral base is offset nicely with an abundance of fruit, herbaceous notes and nuttiness. A viscous entry coats the mouth leading to a fruit forward mid palate with subtle sweetness that shines with bright citrus and persimmons. The finish is smooth with flavors of smoked lamb.
