Our Extinct Blends Quartet takes inspiration from vanished characters and flavours, reappraising four very different expressions of blended Scotch, using some of our most precious parcels of whisky.

First created in 2001, Asyla was the ethereally beautiful cornerstone of our core range until its retirement in 2018. With Delos, we have focused on capturing Asyla's vibrancy and soothing sweetness, turning to older stocks to achieve this.

THE DEACON

In Scots, a “Deacon” is an adept and proficient master tradesman. The expert distillers behind our Scotch fit the name perfectly: The Deacon is an homage to master craftspeople, whatever their trade may be.

THE DRAM

THE DEACON blend is a masterful blend of both smoky Speyside and peaty Islay malt whiskies, making it a complex, rich, and smoky dram. In our blend, the single malts from Islay have a characteristic peaty smoke flavour, while the single malts from the mainland have a bonfire-like smoke character. A nose of charred orange, sweet malty biscuits and woodsmoke gives way to juicy orange, echoing the nose, on the palate, delicate spice, and tangy peat. The finish is both sweet and smoky, long, and smooth.

Traditional copper pot stills used in our distillation process lend their iconic shine to The Deacon’s stunning bottle, which looks like nothing else on the shelf or back bar, covered in an ornate pattern and stamped with our iconic mascot.

Don Vicente is naturally handcrafted in Destileria El Pandillo, located in the Highlands of Jalisco in a famous tequila town called Jesus Maria. Destileria El Pandillo is one of the best, most sustainable, and most innovative distilleries in the world. It has topped many lists as the best tequila distillery in Mexico.

This is all masterminded by our master distiller Ing. Felipe J. Camarena. Felipe Camarena is a 3rd generation Tequila Distiller and a 6th generation Agave Farmer, a family tradition going all the way back to 1861. His main goal is to produce the cleanest, most natural, and traditionally made tequila there can be. Camarena is also an engineer by profession. REPOSADO

Remarkably smooth. The same body of Don Vicente Blanco rested in American White Oak Bourbon barrels for less than a year. The aging adds a complexity of aromas and flavors. The cooked Blue Weber Agave, minerality, and earthiness are all still very present; with hints of vanilla, caramel, and butter.

Tromba Australia where it all started...

La Tromba is Spanish slang for a sudden and intense rain storm. But it’s much more than that. It means something big is happening – change is brewing and nothing will ever be the same again. 

So when three friends, Eric Brass, Nick Reid and James Sherry, met in Guadalajara back in 2005, it was between sips of tequila that they made a pact to no longer live conventional lives or work typical jobs. For them, everything would change as they vowed to make extraordinary tequila their passion to pursue. They found partners in maverick master distiller, Marco Cedano, and his son, Rodrigo. These were men skilled in the art of turning blue agave into bottled brilliance.

Despite having little money and many naysayers, the partners traveled bar to bar to build the groundswell for their tequila – one made in the rugged Jalisco highlands where the finest tequilas in the world hail from. This is where we work to define a powerful force in new world tequila – Tequila Tromba. Every bottle contains the perfect storm of youthful boldness and weathered wisdom; embodying the adventurous spirit of those who make it for those who wish to take life by storm.

A deep gold color, Tromba Añejo is aged in white oak barrels for 20-24 months and exudes agave flavours rich in complexity. Gentle hints of oak and caramelized agave sweetness paired with rich chocolate, nuts and ripe dried fruit. Expect a sophisticated, honeyed finish.

Crafted from hand-selected bourbon barrels and made with 100% Texas grains sourced from a co-op of Texas farmers, Devils River Distiller’s Select is a “grain to glass” Texas Straight Bourbon.

THE LONE STAR STATE HEAT

Distiller’s Select is distilled and aged in the hot Texas climate for over two years in a new #3 charred American oak barrel. The Texas heat naturally accelerates the aging cycle making it the perfect location for our rickhouse. As the whiskey expands deeper into the oak staves, our bourbon developed its dark color and complex flavor.

WATER AND WHISKEY

Once our Distiller determines our whiskey is ready to bottle, Distiller’s Select is then brought to its final 120-proof by marrying the bourbon with spring water from the Devils River Region. Resulting in a well-balanced, high-proof bourbon.

ABOUT THE PRODUCT

Lychee is a small fruit of a large tropical tree with evergreen foliage (9-15m) and flourishing in summer. Originally from China, it is now grown in China, India, Madagascar and Thailand.
Beneath its thick pink-red skin, the flesh of the fruit is white-translucent, juicy, sweet and slightly tart. The fruit can be eaten simply peeled, or cooked, but also prepared in juice as is, or mixed into a drink.
With its fresh and floral notes, Lichi-Li Giffard Liqueur reveals the typical aromas of the fruit in your cocktails.

Terroir Notes: Our Cypress fermentation tanks within our palenque are surrounded by tropical fruit trees endemic to Ejutla. These trees shed their yeast and pollen with add nuance and yeast strains into the fermentation process.

Its 100% corn grain base is a nod to the traditional grain base used for "authentic" moonshine from the eastern mountains of the US. Despite being bottled at a gentle 80 proof, the whiskey still packs a punch, delivering a smooth and satisfying finish that lingers on the palate.

We use grains that mass production forgot.

The soulful, rich flavors of our no-compromise whiskey begin with our use of only heirloom and heritage grains. Modern agricultural has no interest in these low-yield, finicky grains, yet we could not create the singular profile of each Laws Whiskey without them. We are dependent on the two family-owned farms – the Cody’s in the San Luis Valley and the Ohnmacht’s out on Colorado’s eastern plains – willing to cultivate these specialized grains for us.Terroir is Our Master
Our whiskey chose Colorado. Don’t get us wrong, we think Colorado is a cool place to live, but that’s not why Laws is here. Our terroir-driven whiskey requires the rarified thin air, the hot days and cool nights of the Rocky Mountain region, and the rugged growing conditions of the San Luis Valley and eastern plains that stress our grains just enough to deepen their flavor.

There are No Shortcuts at Laws.

We always have and always will distil every drop we bottle. While our whiskey aged, we didn’t sell any whiskey for our first three years. Time is as critical of an ingredient as our heirloom grains. Every mash bill gets its own optimal distillation process, and we deploy time-intensive sour mash fermentation. We are the first Colorado distiller to bottle bonded whiskeys. For us, these steps are not extra, they’re mandatory to creating Laws Whiskey

At Laws, no person has the title ‘Master Distiller.’ We believe it takes the talents, smarts, quirks and obsessive passion of every Laws co-worker, aka The Village, to make our whiskey. In the Laws Village, you are part of something so much greater than self.

Cooperstown Doubleday Baseball Bourbon

This premium American Bourbon whiskey is a blend of select young and older, more complex bourbons. It drinks with a smooth and caramel coated flavor profile. A mash bill of corn, rye, and barley, this bourbon is “up proofed” by our distiller to 90 proof to help define the brown sugar nose, enhance the subtle notes of butterscotch and toffee, and accentuate the “band-aid” finish so typical of older whiskeys. Housed in a uniquely designed and patented baseball decanter, each bottle is individually blown and formed in the shape of a professional baseball, right down to the 108 raised stitches on the glass ball. Every bottle includes an ash wood stopper (used for baseball bats) and sits on a
raised pedestal base (all one molded piece) which is a clever replica of an actual baseball diamond, complete with the bases and home plate, pitcher’s mound, and running lanes. A blend of young and 5 year old bourbons, it drinks remarkably well, like a fine “older” bourbon should.
