This is our interpretation of the essence of California, and its diverse people. Our tribute to this melting pot starts with two of our award-winning California made single malts – STR and Distiller’s Cut. We combine these with two amazing pot-still distilled light whiskies that we sourced from the old Seagram’s plant in Lawrenceburg, Indiana. The result is an easy drinking, refreshing whisky with subtle complexity, perfect for an aperitif before dinner (Highball anyone?) or even an accompaniment to a meal. (42% ABV).

This liquor made with alkaline water has brought a whirlwind of popularity among liquor lovers. Whiskey Del Bac Dorado is a single malt whiskey with the true character of the American Southwest. Using the Scottish model of whisky-making, Dorado is made from 100% barley that is malted and smoked over a velvet mesquite fire, mashed, fermented, copper pot distilled, aged, and bottled on-site.

Dorado has a nose of tobacco and chocolate, giving way to desert campfire embers, and finishing with soft tannins and sweet toffee on the palate. Dorado has a 90 point rating from Whisky Advocate.

Passion fruit is a climbing plant of the Passifloraceae family, native to Latin America. Also called granadilla, this fruit is a small tropical berry with fragrant flesh that differs from other fruits by its small black seeds. Giffard Crème de Fruit de la Passion brings the flavour of this fruit to cocktails with exotic accents.

Whiskey Del Bac Classic is a true American single malt whiskey, borrowing from the Scottish model of whiskey-making but matured in new American white oak. Classic is made from 100% barley malt that is mashed, fermented, copper pot-distilled, aged, and bottled on-site. Classic opens with bright stone fruits on the nose and is balanced with a sweet caramel and oak finish. It was named one of the best whiskies in the world by Wine Enthusiast’s Top 100 Spirits list in 2021.

Ode To Islay is an annual limited release. This expression is a bold, heavily-smoked American Single Malt Whiskey inspired by the super-smoky single malts of Islay. Ode To Islay is our way to raise a glass to tradition and pave your own way with Southwestern ingredients. It is heavily mesquited – not peated. This small batch whiskey release has 900 bottles nationwide. Each bottle has an ABV of 55% and is 110 proof.

Frontera is an annual limited release. We take Whiskey Del Bac Classic American Single Malt Whiskey originally aged in new American White Oak, then finish it in Pedro Ximénez Sherry botas. This American Single Malt is named after the medieval city, Jerez de la Frontera, which sits on what was once the edge of Spain and is known as the world capital of sherry wine. There are 1,200 bottles nationwide. Each has an ABV of 48.5% and is 97 proof.

An anise-based spirit from Lebanon distilled from grape juice with fresh aniseeds, imparting its distinctive fresh flavor.

Varieties
Arak Razzouk is made with special varieties of sweet mountain grapes.

Technical Notes
The grapes are crushed and fermented, and then distilled over a low fire. Natural aniseed is then added and the mixture is distilled. The distilled product is poured into earthenware jars to age and mellow for at least six months.

Food Pairing
Arak should be served cool and not cold. The Crystal clear Arak turns milky white when water is added to it in the portion of 30% Arak and 70% water, or 50% Arak and 50% water depending on each one’s own taste. An ice cube or two is then added to the glass to refresh the drink. It is served before and during the meal and symbolizes a relaxed approach to drinking and eating. The best way to enjoy Arak is to sit behind a delicious Middle Eastern Food Table surrounded by good company.

For Sentinel, we began with a sweet, bold blend of three-year-old and two-year-old 95% rye-5% malt straight rye whiskies distilled and aged in Indiana. We finished this rye in freshly-harvested mesquited Whiskey Del Bac casks, then filtered it across a bed of Mesquite charcoal from our mesquited malting process, inspired by traditional American whiskey production methods. Add a hot, Sonoran summer.

The result: A striking straight rye whiskey with the bold flavors of a traditional 95% rye, smoothed by the soft roundness of a hint of mesquite. Dubbed Sentinel, meaning “one who watches over or is the keeper of”, this rye is befitting of America's oldest whiskey style while imbuing the essence of the desert.
