The story of Nevada H & C Distilling Co. begins in 2004 when the screenwriter Jonathan Hensleigh met co-founder Aaron Chepenik in a bar in Eagle Rock, Los Angeles. They quickly realized they had the same vision of opening a bar, opening The Griffin together. After a couple years of sampling their inventory, they began discussing what they liked and didn't like about the bourbons and vodkas they were selling. One night, the idea of creating their own spirits popped up, which eventually led to them opening the first distillery in the city of Las Vegas. The City Council had to create a license especially for them since none existed beforehand. It took them 6 years of gathering equipment and setting it up, with several hurdles along the way. The bright side was that by the time they opened their doors they had several high-rye bourbons ready, which meant they could begin operating immediately. They have two brands under their belt now, both with several medals from the San Francisco World Spirits Competition: Silver Dollar American Vodka and Smoke Wagon. The latter comprises several bourbons, including the Smoke Wagon Uncut Unfiltered Bourbon. The goal with this expression was to bring the blending philosophy from their Small Batch into a high-proof bourbon meant to be drunk neat. Based on a blend of old and young high-rye whiskeys, it's rich, sweet, and creamy. The raised imagery of desert sage, the Nevada state flower, can be found on the Silver Dollar bottle as well as the amber Smoke Wagon bottles and in the label of the Straight Bourbon. The Morgan silver dollar (replicated on the bottle's face) was minted in Carson city, the state capitol. It is the perfect symbol and name for our vodka due to its Nevada significance and the fact that silver dollar vodka is silver filtered.

Smoke Wagon? Does that mean it's smokey? Smoke Wagon is actually old west slang for the 1873 Colt single action army revolver or "the gun that won the west". Our logo stamped in wax consists of two crossed Smoke Wagons over the state of Nevada. Below it is our motto and a quote from Seneca, bibamus moriendum est. The literal translation is "drink, for we must die" but the meaning is more along the lines of, drink and enjoy today because we won't be around forever. We can only assume Seneca meant to drink responsibly, of course.

The journey to create Uncut the Younger began around October 2020. I tried a Straight Bourbon blend before proofing it down and I was really impressed with the flavor profile. It was fruit forward with tons of delicate candy flavors and big cinnamon spice on the finish. My original thought was to create a younger version of Uncut Unfiltered, and release it as a Rare and Limited batch. In December 2020, when the first Rare and Limiteds’ were announced, I quickly realized that a R&L would never retail for less than regular Uncut, so the idea was put on a back burner. A few months later the company that makes our clear stock bottles for Straight, informed me they were coming out with an amber version. I was interested and I knew exactly what to use those for. I let them know I wanted as many as they could get me. Releasing a Rare & Limited younger Uncut was one thing, but being able to offer an affordable cask strength bourbon that could be one of our core expressions AND a high proof lover’s daily sipper, really got me excited. I truly believe having superior and affordable bourbons is essential.  Also I wanted Straight to have a cask strength sibling the way Small Batch has Uncut Unfiltered, it all just made sense. A year and a half later - Uncut the Younger, our second expression in the entry level category is finally here! Consisting mainly of 4 year 36% rye bourbon from several floors and warehouse locations. Uncut the Younger is blended to be fruit forward, with tons of candy flavor notes and finishing with some bold cinnamon spice with gentle heat. It’s non chill filtered so it’s buttery and creamy, drinking more delicately than one would think based on its proof.

Distilled from a traditional rye mash bill consisting of 51% rye and 49% corn. A high percentage of corn adds a nice rich sweetness that balances out the flavor notes of Rye’s big black pepper and cinnamon spice. Creating a flavor profile that starts off creamy, rich with fruit and candy flavor notes that has a big, bold, complex spicy finish that lingers for an eternity.

The goal behind the creation of this bourbon was to provide an affordable everyday option that showcases the distinct and unmistakable Smoke Wagon flavor. It features delicate sweet notes accompanied by a satisfying rye spice finish. To achieve this, barrels with a high rye mash bill were selected and stored on the top two floors of the warehouse without rotation. The higher temperatures on these floors during the summer led to increased expansion and interaction with the wood, resulting in a bourbon that is exceptionally rich and creamy for its age. The deliberate decision to avoid barrel rotation ensures a smooth and balanced flavor profile without any harsh tannin notes, while the high rye mash bill adds a delightful touch of spiciness and nuttiness to the finish.

We selected barrel of the sweet, delicate 51% rye/ 45% corn/ 4% barley traditional straight rye and blended it with barrels of the big and bold 51% rye/ 49% malted barley straight rye. The end result is an upfront flavor profile that is beautifully sweet and rich with a luxurious mouthfeel. The finish has just enough cinnamon and rye spice to get your tongue tingling while the flavors from the malted barley, such as smoke and malt are still present, but softer and more subtle.

Distilled from a mash bill of 51% Rye and 49% Malted Barley. Big, bold, and unapologetically intense! The Malted Barley really shines through upfront, starting the flavor journey off sweet and creamy with flavor notes of caramel, cereal and what can only be describes as..well..malt. The Rye kicks off the finish with tons of cinnamon spice, big black pepper, combined with smoky flavor notes courtesy of the Malted Barley. Being cask strength only adds to the beautiful intensity of the finish.
