St. George Botanivore Gin a botanical eater of a gin is infused with 19 different herbs and botanicals, including angelica root, bay laurel, bergamot peel, black peppercorn, caraway, cardamom, cilantro, cinnamon, citra hops, coriander, dill seed, fennel seed, ginger, juniper berries, lemon peel, lime peel, orris root, Seville orange peel and star anise. While the juniper, bay laurel and fresh cilantro are added to the gin's botanical basket, the other 16 botanicals are steeped overnight in the copper-pot still. Then, gentle steam heat is added to the still, in order to coax out the flavors and aromas of the herbs and botanicals. Fresh and slightly herbaceous, St. George Botanivore Gin has bright notes of citrus, earth and spice that are complimented by subtle floral undertones. The gin earned a score of 93 points from Wine Enthusiast, which selected it as one of the Top 50 Spirits of 2012. In addition, Park and Bond wrote that it was "a sunshine-drenched greenhouse of a spirit"while Esquire called it "complex and bright." This gin represents a unique expression by one of America's most creative craft distilleries.

Made using juniper, Douglas Fir, California bay laurel, coastal sage and coriander seeds, along with a number of other herbs and botanicals, St. George Terroir Gin is a true California Gin. The coriander seeds are roasted inside a well-seasoned wok, which contributes an earthy, aromatic bouquet to the gin. In addition, the Douglas Fir and coastal sage are distilled individually through Winters' 250-liter copper-pot still, which minimizes seasonal configurables in the botanicals. Finally, while the fresh bay laurel leaves and juniper berries are infused through the still's botanical basket, the remainder of the botanicals are placed directly in the pot, resulting in a cleaner and crisper flavor. St. George Terroir Gin has a stunning bouquet of fresh, forest aromas, including pine and oak. The woodsy notes are complemented by bursts of juniper and sage, and lead to a crisp finish. St. George Terroir is "spectacularly evocative"according to Food and Wine Magazine, and "one of the most distinctive gins made in America"according to GQ Magazine. This gin represents a unique expression by one of America's most creative craft distilleries.

THE SPIRIT

After 30 years of producing their own spirits, St. George Spirits has developed a wicked hobby barrel thieving. Breaking & Entering Bourbon is the product of Winters and Smith going deep into the rickhouses of Kentucky's most venerable bourbon distilleries and selecting 300-plus barrels of bourbon to bring back to California. After sampling each individual barrel (which took three months alone) and experimenting with different blends, Winters and Smith settled on a recipe made up of 80 different barrels, each ranging in age from five to seven years. The result is a criminally delicious bourbon with notes of maple, banana, brown sugar and cinnamon. "We like to think of our spirits as parties in a bottle, and the label is the invitation," says Winters.

Our objective with St. George Raspberry Brandy, explains Winters, was to take an olfactory snapshot to capture exactly what raspberries smell like at their peak of ripeness. We used the whole fruit in its entirety in a deliberate effort to maximize the most elemental and essential flavors and aromas. Once the raspberries have been harvested, they are distilled through copper pot stills without the use of sugar or any other artificial ingredients. The brandy has an extraordinary texture and flavor profile, with rich waves of soft fruit, raspberries, oak and cinnamon that are complemented by a mineral touch. The brandy was named one of the Top 75 Spirits of 2014 by F. Paul Pacult's Spirit Journal.

St. George makes their Dry Rye Gin in the same 1,500-liter copper pot still that they use to make their Terroir and Botanivore Gins. These Gins each have intricate botanicals bills designed to create a layered olfactory experience. St. George's also makes a limited-release, barrel-aged version they call Dry Rye Reposado Gin. Rested in French and American oak wine casks, it has a lovely pink hue and a deep, rich flavor. For their Dry Rye Gin they chose only six botanical ingredients: juniper berries steal the shown this expression, having 50% more than any of their gins. The botanicals are complemented by black peppercorn, caraway, coriander, grapefruit peel, lime peelwhich were all designed to play up the juniper's peppery nature. A base of 100% pot-distilled rye makes for a very unconventional gin, but a unique option for whiskey lovers. This gin has structure, spice, and an impeccably rich mouthfeel. Warm and spicy, it has a natural affinity with bitters, citrus, stone fruit, and ginger (St. George's).

According to St. George Master Distiller Lance Winters, St. George Single Malt Baller Whiskey is a California take on the Japanese spin on Scotch whisky. It is crafted from 100% American barley, mostly made of two-row pale malted barley, the remainder lightly roasted. The whiskey is filtered through maple charcoal and matured for 34 years in ex-bourbon and French oak wine casks, before being finished in umeshu barrels, a Japanese style of plum liqueur crafted from 100% California-grown ume fruit. The distinctive label, which re-imagines the legend of St. George as a samurai was designed by Oakland artist Sylvia Solochek Walters, and calligraphy by Eri Takase of Takase Studios.

St. George Spiced Pear Liqueur balances decadence with restraint, achieving incredible depth of flavor with just a few impeccable ingredients of Bartlett pears, cinnamon, clove, organic cane sugar, and malic acid—but its flavor is anything but basic.

The Experience

Decades of distilling Bartlett pears has shown us just what this gorgeous fruit is capable of. The Spirit
As the tongue-in-cheek name implies, our All Purpose Vodka works in cocktails of all stripes. Spirits are our form of self-expression, and All Purpose is a showcase for demonstrating the decadent mouthfeel and supple flavor vodka can achieve with patient, precise distillation.

What’s in it?
Pears (yes, pears) are the secret to All Purpose’s velvet texture and delicate aromatics. St. George built its reputation with pear brandy, so we know how to coax the best from this standout fruit, even when distilling it to vodka proof. Using the same flavorful and aromatic pears that we do in our flagship spirit creates a vodka that is uniquely St. George. All Purpose has no overt pear flavor but it wows with its substantial body and subtle floral notes.

BOTANIVORE GIN
Botanivore is a symphony of flavor comprised of 19 different botanical ingredients working in concert. Think of a meadow in bloom: herbaceous, fresh, and elegant. 

DRY RYE GIN
A base of 100% pot-distilled rye makes this a gin for whiskey lovers—as well as a compelling pour for the adventurous gin drinker. Think of gin as you know it, then think again and brace yourself for a spirit with structure, spice, a gloriously rich texture, and a soft, lush finish.

Most visitors fall in love with New Orleans, but only a lucky few fall in love in New Orleans. St. George head distiller Dave Smith was one of those lucky few. Our NOLA Coffee Liqueur is a tribute to the city where he fell in love. 

What’s in it?
Ethiopian coffee beans, French chicory root, Madagascar vanilla, and organic cane sugar

The Experience
We chose to work with Yirgacheffe coffee beans specifically for their bright berry, chocolate, and round fruity qualities. The coffee’s contribution is complemented by the chicory root’s plum/date notes and bitter undertones.

Sipped neat, NOLA Coffee Liqueur is delicious alongside breakfast, dessert, and any meal in between—with each sip revealing more character. In cocktails, it provides a touch of sweetness, earthy depth, and that robust roasted flavor that coffee lovers crave. NOLA makes an incredible Espresso Martini, but we also love it in a Revolver, a White Russian, or a Coffee Old Fashioned.

St. George California Reserve Apple Brandy is a beautiful expression of fresh California apples. If you’re a fan of Calvados, prepare to up your game.

The Experience

With a bracing dose of bitterness, a bright pop of citrus, and intriguing sylvan notes, Bruto is a bitter aperitivo liqueur with classic roots and fresh attitude.

ruto Americano absolutely bursts with flavor. On the nose you’ll find vibrant citrus backed by cinnamon, sandalwood, and fir. On the palate, Bruto leads with bitter before opening up to an herbaceous mid-palate that gives way to a lingering bitter/citrus finish.

In cocktails, use Bruto anywhere you’d use an Italian red bitter (and in a few places you wouldn’t). Bruto shines in an Americano, where the simple recipe lets its unique botanicals showcase themselves. Try it in a Negroni or a Boulevardier, where it lends new nuance to these beloved classics. St. George Dry Rye Reposado Gin is a barrel-aged expression of our Dry Rye Gin. Rested in French and American oak wine casks, it has a lovely copper-pink hue and a deep, rich flavor that we think of as an offering to the gods of gin, whiskey, and wine!

What’s in it?
Our Dry Rye Gin has only six botanical ingredients: juniper berries, black peppercorn, caraway, coriander, grapefruit peel, and lime peel. Juniper is the star of the show in this spirit, but while gin typically highlights the peppery side of the botanical, the time our Dry Rye Repo spends in ex-wine barrels brings out the fruit qualities of the juniper berry.

The Experience
Dry Rye Reposado Gin has a robust malt character, with piquant spice and the suggestion of stone fruit. It’s a natural in an Old Fashioned, Manhattan, Martinez or any other classic rye cocktail and is also a beautiful complement to drinks that feature sherry, umeshu, and ginger.
