What awards you ask … well recently we’re the Gold medal winner at San Francisco World Spirits Awards 2020 + 2019, got 92 points from Wine Enthusiast and 91 points from Wine Advocate and Whisky Cast!

Our signature single malt is a deliciously balanced and bold whisky for sharing and mixing. Nova is matured exclusively in red wine barrels from wineries making great Australian shiraz, cabernets and pinot noirs.

Tasting Notes

Nose: Like we took bright flavours of red berries and orchard fruit and coated them in soft oak spice.

Palate: Imagine a rich red berry pudding covered in vanilla, caramel and spice.

Finish: Balanced and long. The sweetness fades and the delicious flavour goes on.

To make a whisky that was as affordable and approachable as we wanted, we had to tear up the rule book (a renegade act we relished, we’ll admit). It was worth every effort for this double grain whisky.

Our distillery is nestled in the heart of Melbourne, Australia. Not the outback. Or a sunshine-soaked beach. Melbourne is a bustling city that celebrates unique cuisines and cultures. Here, we ditch the airs and graces and focus on flavor instead.

That's why we use red wine barrels to mature our whisky. We source all our whisky ingredients from just a day's drive away. Then, in the wildly varied Melbourne weather, our whisky draws out its signature fruity, delicious flavor in just three short years. We call this elemental maturation and it's why we couldn't make our whisky anywhere else.

Our Melburnian founder, David Vitale, grew up in a big Italian family. He was born and raised around a food-obsessed, flavor-forward dinner table. And he knows our whisky feels right at home at those moments spent enjoying a meal with others.

Introducing, Peated Finish. We took this special expression out of our whisky vault in celebration of our recent wins at the 2023 San Francisco World Spirits Competition.

This expression is a New World take on an old classic; It's a red wine barrel aged, single malt whisky finished in peated barrels straight off the rugged coast of Islay, Scotland. Melded with Starward's quintessential tropical notes and the smoky, earthy flavors from Islay’s coastal peat. Expect a whisky that's unlike any other. Peated Finish even won a Gold medal at the recent 2023 San Francisco World Spirits Competition. This is something special.

Our twist on the Old Fashioned is a distillery-batched cocktail, patiently perfected. As any bartender will tell you, a good Old Fashioned is notoriously difficult to get right. But fortunately for us, we’ve got expert bartenders and whisky distillers under the one roof.

Meet the latest Starward innovation, Stout Cask. We took our award-winning spirit and aged it in coveted imperial stout barrels sourced from one of our favorite neighborhood Melbourne breweries. This first-of-its-kind single malt is a unique marriage of craft distilling and craft brewing. The result is rich, dark, and delicious.
