TASTING NOTES
Palate: Bold spice note with black pepper, walnut, vanilla, cinnamon caramel, and cherry.

They called it White Dog. This raw distillate was clear, un-aged and had a hint of sweet corn. Later distillers discovered this spirit was perfect for aging - creating what we know today as fine Kentucky Straight Bourbon Whiskey. We’re still making whiskey on the spot where ancient buffalo once crossed the Kentucky River and following centuries of time-honored distilling tradition. In partnership with the Chicago Rabbinical Council (cRc), Buffalo Trace Distillery produced this Rye Recipe Bourbon Whiskey. Made with the same high quality grains as Buffalo Trace Bourbon Whiskey, this Kosher spirit was aged in specifically designated Kosher barrels. In order to satisfy Passover requirements, these barrels were sold to a non-Jewish executive in a ceremony witness by a representative from the cRc. After aging for seven years, this Rye Recipe Bourbon was bottled at 94 proof after ensuring the bottling lines were cleaned beforehand and that no contact was made by non-Kosher spirits. Released after Passover each year, this Rye Recipe Bourbon is bold and independent, celebrating its heritage from America’s oldest continually-operating distillery.

Dating back to George Washington and the birth of a nation is a proud history of crafting whiskey. Some of the first whiskey distilled in America was Straight Rye. Keeping with the traditions of America’s founding fathers, Buffalo Trace Distillery offers this raw, clear, un-aged and high-proof distillate right off the still. The taste has a hint of spicy rye. This whiskey is known as White Dog. It was later discovered this spirit was perfect for aging and gave way to what we today know as Straight Rye Whiskey. Enjoy this White Dog the way early Americans did more than 200 years ago.

The Oversized Barrel 500L, part of Buffalo Trace's Experimental Collection, revolutionizes whiskey aging by introducing an unprecedented size that transforms the maturation process, infusing the spirit with unmatched flavors and complexities. In examining the impact of barrel size on the final product, bourbon was aged in larger barrels—250L and 500L—alongside the standard 200L, all on the same aging floor and for identical durations. Surprisingly, while the 250L showcased familiar flavor notes similar to standard barrels, the 500L revealed a distinct character, rich in tannins, oakiness, and dryness. This pioneering experiment underscores Buffalo Trace's dedication to challenging conventional norms in whiskey craftsmanship, offering enthusiasts an exceptional tasting journey beyond traditional boundaries.
Buffalo Trace Distillery began experimenting with recipes and barrel treatments more than two decades ago. Currently there are more than 30,000 experimental barrels of whiskey aging in its warehouses. Each of the barrels has unique characteristics and experimental changes in the mash bill, types of wood, barrel toasts and more. Periodically, an experimental whiskey is bottled and sold on a limited basis.
