The first Edition of Colere marks a monumental step forward for not just Westland but the whiskey industry as a whole. This is the first in what will be an ongoing annual inquiry into unique varieties of barley bred outside the commodity system with flavor first as a goal. Colere Edition 1 is made with the varietal that began it all, Alba (a six-row winter barley) and intentionally matured in only used casks to relegate the oak influence to a supporting role and focus the attention on the grain itself.

Westland Outpost Range whiskey Garryana is a series that explores a native species of oak for barrel aging. In Edition 7, the rich and savory Garry Oak interacts with sturdy Washington Wine. The high percentage of both cask types result in a mélange of spices and savory fruits

Founded in 2010 in Seattle, WA, Westland Distillery mashes, distills, matures and bottles American Single Malt Whiskey in the heart of the Pacific Northwest. Situated in the SoDo neighborhood of Seattle, Westland's 13,000 square foot distillery boasts a 5,000 mash-house, five 10,000 liter fermenters and two copper pot stills. It's here where Westland's Master Distiller Matt Hofmann crafts the distillery's core American Single Malt Whiskey. Like single malt Scotch, American single malt whiskey is made using a malted barley made at a single distillery. American single malt whiskeys, however, are less regulated, allowing more room for experimentation. With a specialty mash bill of Washington Select Pale Malt, Munich Malt, Extra Special Malt, pale chocolate malt, brown malt, and peated malt, their specialty Garryana-aged single malt is fermented with Belgian Brewer's Yeast for a total of 144 hours, and aged partially in a distinct oak. Garryana is the embodiment of provenance, an expression of the Pacific Northwestboth its land and its culturein whiskey (producer). This limited edition series of bottlings explores the nature of the unique species of native oak, Quercus garryana (also known as Garry or Oregon oak), and its unique influence on the cornerstone elements of Westland's distinctive house style of American single malt. This 2018 edition of Westland's single malt Garryana whiskey is comprised of 52% pale malt aged in 1st fill ex-bourbon Quercus alba, 27% Westland's proprietary five malt aged in Virgin Quercus alba (new American oak), and 21% pale malt aged in Virgin Quercus garryana. A limited edition release of 2600 bottles! 

GARRYANA EDITION 6

In Edition 6, Garry Oak comingles with both Brandy and Sherry casks. The Brandy gives a bright filter to the savory spice of Garry Oak. The Pedro Ximénez, its classic darker fruits with muted sweetness. Both add something distinct while leaving enough space for the Garry Oak to shine.

TASTING NOTES:
Nose: Raspberry reduction, maple candy, dulce de leche, and a faint hint of clove.
Palate: Cedar, cinnamon, dried apricot, and light caramel.

Solum directly connects us to the primordial essence of the Pacific Northwest through a rediscovery of the oldest style of whiskey. Unearthing eons of flavor imparted by layers of flora unique to this place, we seek to experience the very essence of time through terroir.

TASTING NOTES

Nose: This peated whisky showcases bright notes such as fresh fuji apple, ground cinnamon, charred wood, and strawberry rhubarb crisp. There’s a savory smoke note that teases the nose.

Palate: On the palate, there are complex herbal tones such as burned sage, vanilla chamomile tea, and grain notes of coffee cake, pumpernickel toast.
