About Santa Lucia Highlands:

The vineyards here cascade down the southeast‐facing terraces of the Santa Lucia Mountain Range. Evoking the terroir of Burgundy, the Santa Lucia Highlands appellation is home to extraordinary cool‐climate varieties.

About Olson Ranch Vineyard:
All of the grapes for our Santa Lucia Highlands Pinot Noir come from our family’s Olson Ranch, a high‐elevation vineyard with abundant morning sunshine tempered by maritime breezes each afternoon – ideal conditions for growing premium Pinot Noir grapes. Olson Ranch features clay loam soil over fractured limestone.

Viticulture Notes:
The 2012 growing season in the Santa Lucia Highlands was lengthy and cool, with minimal rain and drying winds that created the perfect conditions for our Pinot Noir. This idyllic harvest has delivered well-balanced wines with elegant varietal expression.

Winemaking Notes:
The majority of this Pinot Noir came from Block N45 (Clone 667) and Block N42 (Clone 23) at Olson Ranch. The balance came from Block N29 (Clone 828), Block N17 (Clone777), and Block N48 (Clone 23). Following harvest, the fruit was cooled overnight to about 40°F, hand-sorted and gently destemmed to achieve pure, whole berries.
This wine was crafted in small-lot fermentation tanks, and a portion was fermented with dried stems to add greater complexity and enhance the tannin structure. This wine was aged sur lie, but not stirred, to encourage a smooth, round mouthfeel while retaining the enticing aromas and flavors of the Santa Lucia Highlands fruit. Our 2012 Pinot Noir was aged for eight months in a mix of new and used barrels from select cooperages, including Damy, Dargaud et Jaeglé, Leroi, Billon, Vicard and de Jarnac.

Maker Notes

The making and selling of vermouth in Catalonia, has been documented since the second half of the nineteenth century. At that time, the export of wine and local brandies from the area around Tarragona was really taking off and parallel to this positive industrial and commercial climate, vermouth was able to take root there as a new wine product.

Our Padró & Co. Rojo Clásico is a tribute to the vermouth which was sold originally from wine cellars or enjoyed religiously every Sunday at noon. We want to evoke those herby and slightly medicinal aromas which can transport you back, even now, to the atmosphere inside those local bars and cafés.

TASTING NOTES

Nose: Aromas of sweet spices, cinnamon and clove, in particular, as well as tones of candied fruits.

Mouth: A creamy and fresh palate followed by memories of slightly bitter Mediterranean herbs.

Yuu Baal Tepeztate features delightful herbal nuances derived from wild plants and cooked flowers. Crafted from the mature wild agave Tepeztate, which requires up to 35 years to reach full maturity, this spirit offers dry herbal tones accompanied by a touch of hot spice, cara cara orange, and subtle floral undertones in the distance. The finish is marked by a hint of smoke, while a lingering moderate agave sweetness persists on the palate. Suitable for a variety of occasions, it serves excellently as an appetizer or pairs harmoniously with a diverse range of regional, national, and international cuisines.

Maker Notes

One of the main characteristics of this vermouth is the absence of caramel, allowing it to retain its natural amber colour and recover the essence of the original home-made vermouths. The main herb we use in this vermouth is artemisia, the traditional starting point in any vermouth. But there is another plant that is also very common in vermouth – gentian, containing what is probably the most bitter substance in the world – amarogentin – and we use it in this vermouth.

VINIFICATION
Our base wine for this vermouth is a well-structured Macabeo, perfect for the ageing process and the neutral character of this grape means that it does not interfere with the action of the exceptionally bitter herbs used. The vermouth rests for 9 months in semi-new chestnut barrels before bottling.

TASTING NOTES

Eye: Pale gold with tender green hints. Exceptional brilliance. Sustained effervescence of a very high finesse.

Nose: With a remarkable elegance, the first nose reveals a spring freshness. Subtle floral notes of jasmine and acacia are harmoniously paired with delicate grades of linden. After this first impression of an incredible freshness, a large complexity reveals itself during which notes of citrus fruits and a creamy impression of frangipane express themselves alternately.

Palate: The attack is open, without detour, as a sign of a very great assemblage. The elegance and freshness revealed on the nose can be found back on the palate. The heart of the tasting is of an exemplary righteousness. The aromas of citrus fruits and white fruits (fresh apple) take over. The balance of the final is perfectly revealing the subtle flavor of yellow grapefruit.

Production Notes
Grapes were hand-picked, hand-sorted, and 100% de-stemmed. They underwent a five-day cold maceration followed by fermentation in small, open-top tanks in which a selection of native and inoculated yeasts were utilized along with daily punch-downs by hand to enhance flavor. Wine was aged in oak barrels for 11 months sur lie with battonage (light stirring) in the barrels every other week.

When Tenjaku Whisky was initially created, the goal was to formulate a pure, mellow whisky that would suit any drinking style. TENJAKU PURE MALT WHISKY
Starting with a mash bill of 100% Malted Barley, the whisky is then double copper pot distilled using some of the world’s most pristine waters from the Misaka Mountain range in the Mt. Fuji basin, 250 meters below the surface. This is some of the purest water in the world and where the highest-grade sake’s source their water. Next, Tenjaku Pure Malt is aged in heavily seasoned Kentucky bourbon barrels creating a harmonious blend of 100% aged malt whiskies. The result is a masterful blend of mostly 5yr & 6yr whiskies.

Airem 14 Year Old PX Casks Single Malt Whiskey is a refined expression aged for 14 years in Pedro Ximénez sherry casks. With a captivating aroma of dried fruits and oak, its palate offers a harmonious blend of dark chocolate, figs, raisins, and caramel. The influence of PX casks gives it a velvety texture and a satisfying, sweet finish. This whiskey showcases meticulous craftsmanship, making it a premium choice whether enjoyed neat or in sophisticated cocktails.
