GLOBAL FLAVORS
Every ingredient for Domaine de Canton has been meticulously sourced. Ginger, revered for centuries for its health and mystical properties, is selected from Asia. Baby ginger is specifically used for its distinct flavor properties and viscosity. The Ginger is hand cut, rinsed, and allowed to dry for several days, in preparation for being married into the overall recipe. Additionally, hand-selected Tahitian vanilla beans and Provencal honey are sourced and added to the recipe in careful amounts. The result is a flavor profile that is exceptionally delicious and balanced.

THE COGNAC TRADITION
French distillers have refined the art of crafting premium spirits for centuries. Baby Ginger that has been meticulously prepared is transported to the St. Dalfour Distillery in France, where it is macerated with a clear crisp distillate known as eau de vie, or "Water of Life." It is then married with French Cognac, distilled in the Aquataine region of Southeast France, an area famous for producing Cognac and Bordeaux wines. Combining the ginger and distinct medley of ingredients with the long-standing traditions of fine French Cognac, creates this one of a kind French Ginger Liqueur.

The name Labiette Castille comes from two specific localities belonging to the village of Sorbets (Gers, France) that are called: “Labiette” on the western part of the vineyards, and “Castille”, to the east. Our logotype represents a Knight of the King, paying tribute to the most famous musketeer D’Artagnan.

Our house was founded in the late 19th century by a native family of Sorbets and is owned by the Lesgourgues family since the mid-1970’s.

Grapes
The house uses the main grape varieties coming from the vineyard located in the Bas Armagnac. Predominantly Baco 22A and Ugni Blanc, and secondary Colombard and Folle Blanche.

Wines
The white wines obtained offers good acidity and low alcohol content that are suitable for traditional distillation.

Distilling
The wines are distilled in a continuous “Armagnacais” column still: this is the perfect way for distilling our wines in Armagnac, hence capturing most of the flavors contained in the wines. Each grape varietal is distilled separately, 24 hours a day, 7 days a week during the autumn season until Christmas time.

The freshly “brandy” comes out from the column still at around 60% alcohol.

Aging
The “brandies” are then stored in French oak barrels (430L each).
The Labiette Castille Armagnacs age in 100% local Gascony oak. These casks will fit best our Armagnacs, giving them time to grow and to capture the genuine flavors and tannins from the oak. Annually, the cask will lose about 3% of evaporation. This qualitative phenomenon is known as “Angel’s share” (la Part des Anges in French).

Blending
Our cellar master, with the members of the Lesgourgues family, oversees the blending (“assemblage”) choosing the different eaux-de-vie that will be making the future Armagnac.
This blending mission is critical in the house’s capacity to create the most exquisite yet singular Armagnacs.

Bottling
All of our Armagnacs are progressively reduced in alcohol, and most of them are bottled at 40% alc after a non-chilled filtration.

Labiette Castille Bas Armagnac VSOP

This Armagnac is produced in the most coveted region of Bas Armagnac. The aromas display a superb balance between vanilla, dried fruit, and oak. Savor the luscious flavors of oakiness, spice and candied prune.  The Labiette Castille Bas Armagnac VSOP is a cellar master blend of 15 premium brandies; each brandy in the blend is aged from 6 to 10 years in Gascony oak casks

Serve as an aperitif before a meal - neat on ice or slightly chilled. Also, use in premium craft cocktails. 

Produced on the famed estate of Chateau de Laubade, the largest and most-awarded family Armagnac estate in France, this Armagnac is fully traceable from vineyard to bottle.  All four varieties of grapes used in its production - Ugni Blanc, Folle Blanche, Baco and Colombard - are grown, vinified, aged, and blended on the 260-acre estate under the watchful eyes of the Lesgourgues family who have owned the estate since 1974.

Tasting Notes

Our 2018 Intercept Cabernet Sauvignon has aromas of ripe blackberries, red currants, and dried herbs. The wine is full-bodied with baking spice flavors and plush ripe fruit with a long, fine-grained tannin finish. 

Food Pairing

Pair with anything off the BBQ, steaks, braised short ribs, and lamb chops.    

Paso Robles

When making Intercept Cabernet Sauvignon we target vineyard sites with well-draining soils and good exposure. This helps us create a juicy, full-bodied wine. We age our Cabernet Sauvignon in French and Eastern European Oak for 18 months. 

We always wait for that special moment, the culmination of our effort and dedication. When that moment finally arrives, we want to stop and enjoy it with the things we love the most.

In 1993 Casa San Matías introduced the world the first extra añejo tequila. San Matías Gran Reserva is unique, a drink of a noble character and a product that reflects the precision that has been our trademark for more than 130 years.

Alcohol content: 38% or 40%

Precis Vodka™ is the product of our unique Liquid Precision technique that combines a traditional Swedish hand crafted technique with a modern distillation process.  It goes through five separate distillations and is ruggedly strained and never filtered, creating a smooth and clean finish.

Tokyo Night Rum is distilled in a copper pot still from local sugar cane molasses from the island of Okinawa. It is then crushed to extract the juices that will create this agricultural rum. There are no added sugars or sweeteners.
A rum with an unparalleled range of aromas, perfect for creating Japanese-style cocktails. Embark on a trip to the land of the rising sun in the blink of an eye!

NOSE: A nose that expresses the typical terroir of the island of Okinawa: iodine and maritime notes

PALATE: Clean and complex in the attack, beautifully lingering

FINISH: Long, wonderfully complex

Made from local cane sugar molasses and infused with yuzu before bottling Tokyo Night Vodka is distilled three times, followed by four filtrations using birch charcoal. Yuzu provides a complex blend of citrus notes embodying the subtle beauty of the fruit.

This vodka offers an explosion of natural flavour, making it a perfect base for cocktails that immerse you in the Japanese way of life.

TASTING NOTES

COLOUR: diamond

NOSE: fresh and citrusy with a touch of lemon grass

PALATE: beautifully lingering but not aggressive

FINISH: pleasantly original

Barrell Bourbon Batch 031 is a blend of 6, 7, 10, 15 and 16-year-old barrels. The blend was built around the sweetness in a group of 99% corn bourbon barrels and a group of wheated bourbon barrels. To bridge these two groupings, we layered in 15 and 16-year-old barrels for their gentle nuttiness and oak. Finally, a selection of 10-year-old barrels was added to bring notes of milk chocolate and tropical fruit.

Severo Reposado is a copper yellow, clean and bright tequila with excellent adhesion. Its aromatic notes are reminiscent of the fresh vanilla bean, sugar, piloncillo and caramel, evidencing barrel aging. The palate shows an integrated texture with a velvety inviting soft expression, with an aftertaste of a firm bouquet leading into a medium-long extension.

FOUNDERS

Our story started with a shop in Perth and founder John Dewar. Together with sons John Alexander Dewar and Tommy Dewar, these three men changed the course of whisky history, and created some mighty fine products along the way. Our Celtic truth knot, a sign of strength and longevity, is constructed from the three D’s representing our founders – John, Tommy and John Alexander Dewar.

Dewar's Japanese Smooth

Dewar’s brings together Scotland and Japan for an amazing flavour experience highlighting a distinctive and harmonious blend of cinnamon, sandalwood and floral notes. Dewar’s Japanese Smooth is an 8-year-old Blended Scotch Whisky finished in Japanese (Mizunara) Oak Casks and is the fourth in an innovative cask series line-up. This rich and full-bodied whisky brings a unique finishing process to the double-aged Dewar’s blend, creating an approachable and smooth whisky with an extraordinary difference.

The true reflection of the Japanese highball, elegant, chilled and perfectly effervescent with unmistakable honey and a hint of cinnamon spice on the palate and a long and slightly dry finish achieving the balance of harmony just like Japanese culture. With this highball temperature is key, the colder the drink, the longer we retain the carbonation. Bubbles carry flavour from the bottom to the top so ice is essential!

100% handpicked Blue Weber agave, double distilled, aged for an incredible three years in charred oak barrels, then bottled in-house at Hacienda Corralejo.

Double Distilled: Perfected by the French in distilling Cognac, the 400 year old Charentais distillation method allows for exceptional retention of aroma and flavor

The Prisoner Red Blend was inspired by the wines first made by the Italian immigrants who originally settled in Napa Valley. The Prisoner is now the most recognized red blend, leading the resurgence of interesting blends by incorporating Zinfandel with the unlikely mix of Cabernet Sauvignon, Petite Sirah, Syrah, and Charbono. Bright aromas of ripe raspberry, vanilla, and coconut give way to flavors of fresh and dried blackberry, pomegranate, and vanilla, which linger harmoniously for a smooth and luscious finish.
