Wolves is American whiskey made in California from an equally creative group of founders, also based in California.  Wolves is distilled in Sonoma County by 13th generation Master Distiller Marko Karakasevic using an old, slow, brandy still that was imported from Cognac in 1983.

Uniquely, Wolves signature blend consists of whiskey created from refined craft beer, and Rye whiskey.  The flavor profile is unlike anything else on the market.

Wolves is launching The Hotel Series, which are whiskey collaborations with some of the world’s finest hotels. The first release, titled Table 9, is with the Peninsula Beverly Hills.  Table 9 is a variation of Wolves signature blend, with a high-pilsner content, and is named after the most sought after the table in the hotel.

The bottle will not be sold to the public and is initially available exclusively in the hotel.  Certain Wolves clients will be invited to purchase a bottle as well.  320 bottles were produced.

In celebration of the partnership, Michelin-starred chef of The Peninsula, Ralf Schlegel, prepared a private, four-course dinner experience at the hotel, with each course paired with a different Wolves expression.

Made from gently pressed, very ripe, raisin-like grapes, this sweet Malbec comes from the vineyards that surround the winery, at 980 m.a.s.l. (3,215 ft.). It displays an interesting array of aromas: dark berries, tobacco, cloves and cinnamon. I recommend pairing it with cakes, Malbec poached pears and desserts with red berries or semisweet chocolate.

From a Distillery with more ups and downs that a pogoing punk comes Ardcore. Created with roasted black malt, roasted to the extreme, this spirit is all about what happens up front – centre stage. The malt is what defines its distinctive profile. Described as tasting like ‘biting on a spiky ball’, Ardcore is a dram that wears its heart on its sleeve… its black heart!

Notes of charcoal and sweet smoke make for an in-your-face nose, while potent notes of aniseed and dark chocolate stamp this bottle out as one fit only for the most Ardcore of fans.

A masterful union of three well-bred ryed bourbons. All with exceptional pedigree. We open with a bold 14-year old that evokes rich butterscotch and hints of chocolate. Next, and 11 year old excites the palate with a sweet and spicy nose of vanilla and cinnamon. A mission-driven, social impact-driven company, Erstwhile is a boutique agave spirits importer based in Brooklyn, New York.  Our mission: advocate for small, independent, family-owned producers who lack representation outside their local communities in Mexico; and bring their craft to mezcal lovers in international markets for the first time. We work closely with our partner producers and set them up for success.  No haggling.  No exclusivity contracts.  We guide producers through the complicated steps to export in their own names for the first time and cover necessary expenses including local attorneys, accountants, license fees, and more.  We absorb our producers’ marketing and supply chain costs as our own.  We believe in autonomy for producers, be it hiring their own workers or using their own bottling facility. We only step in if they want our help. We connect with our partner producers to share knowledge and help each other in production. Revenue from every Erstwhile bottle sold creates jobs in our partner producers’ and vendors’ local communities in Mexico.  Our producers hire their own team of local men and women, on their own terms. This beautiful Cucharillo, distilled from wild Sotol plants harvested in Oaxaca's southern highlands, is the most aromatic and botanical from Erstwhile Mezcal's 2021 Limited Releases.  Oregano, lemon balm, and other wild mountain herbs that grow naturally in the same hills make a delightful bouquet in the mouth feel and flavor profile.  "Cucharillo" is the local name for the Sotol plant in this part of southern Oaxaca, Mexico.
