This mezcal is made using traditional production methods that have been passed down through generations of mezcaleros, or mezcal makers, in the region.

The name "pechuga" comes from the Spanish word for "breast," as this type of mezcal is traditionally made by hanging a raw chicken breast above the distillation pot during the final distillation. The steam from the cooking mezcal infuses the chicken breast with flavor, which is then distilled along with the mezcal to create a unique and complex flavor profile.

Don Mateo De la Sierra Pechuga Mezcal is made from 100% agave Espadín, which is cooked in an underground pit oven and then crushed using a traditional stone mill. The resulting juice is fermented using naturally occurring yeasts before being distilled twice in copper alembic stills. During the final distillation, the chicken breast is hung above the still to infuse the mezcal with its unique flavor.

The nose of Don Mateo De la Sierra Pechuga Mezcal is rich and complex, with notes of cooked agave, smoke, and roasted meat, as well as a hint of fruit and spice.
