The Story
The 'Old Pepper' label was proudly produced by Colonel James E. Pepper during his lifetime and marketed as 'The Oldest and Best Brand of Whiskey made in Kentucky.' Through Col. Pepper's advocacy on behalf of the bourbon industry, it was the first label in Kentucky to be bottled at the distillery, and his invention of the 'signature strip stamp' was later incorporated into the Bottled-in-Bond Act of 1897, assuring consumers of the quality of the whiskey in the bottle. Our label today incorporates historic fonts and designs from the 1880s through the turn of the century, including the signature strip label—once again giving consumers valuable information about where and when the whiskey was made and bottled.

Technical
Unique blends of distinct mash bills, consisting of Corn, Rye, Malted Barley & Malted Rye; Aged in new toasted & charred barrels made from Kentucky Oak, air seasoned a minimum of 18-24 months; Water source from the historic distillery well. Distilled and bottled at the historic James E. Pepper Distillery (DSP-KY-5) in Lexington, Kentucky. Aged a minimum of 4 years and bottled at 100 proof. Distilling season listed on signature strip label.

Tasting notes: Very drinkable; Rich notes of caramel, vanilla, spices and malt.

'Old Pepper' Line Extensions / Limited Releases: Single Barrels bottled at barrel proof; Finest Kentucky Oak (secondary finish in a new toasted barrel, bottled at barrel proof); NOTE - some limited releases & single barrels have in the past been bottlings of whiskey distilled at other distilleries; details will be on labels.

Introducing the fifth chapter of the Midleton Very Rare Dair Ghaelach series—Midleton Very Rare Dair Ghaelach Kilranelagh Wood. Once again, the rarity of Midleton Very Rare meets the luxury of Irish oak to bring you an exceptional offering from the pinnacle of Irish whiskey.  

This release takes us to Kilranelagh Estate near Baltinglass, County Wicklow. Situated amid rolling hills and picturesque features, the native Irish woodland on the estate has been managed carefully and in tune with nature by one family, the Westerholt for many years. When their great Irish oak had reached the end of their life cycle and were ready to be felled so the new oak could grow in their place, they knew they wanted their legacy to live on—and Midleton Very Rare Master Distiller Kevin O’Gorman knew that he had the perfect whiskey which would bring new life to these relics of a time gone by through finishing in this Irish oak.

Tasting Notes

Nose: Forest notes of fresh pine accompanied by floral honey and ground pepper at first, while sweet and tropical fruits can be detected amongst the herbal green tea and freshly mown hay. The use of the native Irish oak lends itself to creating distinctive aromas of smoked almonds with sweet vanilla and cinnamon that are complimented by the pot still savoury spices.

Taste: Robust and lively at first with notes of dried chilli flakes and red bell peppers which quickly soften, allowing notes of candied orange and crisp red apple to shine through. The oak continues to deliver sweet vanilla and cinnamon spice throughout, while the pot still spices add a hearty and full-bodied nature to this complex and intricate whiskey.

Finish: Wonderfully long finish which sees the pot still spices and oak linger, almost effortlessly, for an age.

Maker Notes

When we began our wood experiments, one forest stood out from the rest. Jupilles became a French royal forest in the 14th century and then a national forest in 1791. This small but ancient forest is known for its tight-grain oak. Fine wine makers in France and around the world have been curating Jupilles oak for centuries. Our master alchemists worked to create a custom toast profile to match our high-rye bourbon profile. The combination is exquisite, approachable and drinkable.

We take high rye bourbon that is at least 6 years old and add custom toasted French Oak Staves for the last few months of aging to impart natural wood flavors of soft, sweet warm notes that play off of the underlying spice of the base bourbon. The layers of complexity on the nose are sure to arouse your palate and please a crowd of bourbon enthusiasts.

TASTING NOTES

Upon first nosing, you’ll be greeted by the enticing fragrance of spiced caramel, enticing you to take a closer sniff. Accompanied by the delightful aroma of ripe red fruits and crisp apples, the scents intermingle and create a harmonious bouquet reminiscent of a delicious funnel cake.

On the palate, prepare for a delightful experience as sweet raspberry flavors take center stage, complemented by the savory notes of toasted oak. As the taste lingers, you’ll discover subtle hints of tres leche, evoking thoughts of a creamy and indulgent dessert, accentuated by a touch of cinnamon spice.

As the experience comes to its conclusion, you’ll appreciate the creamy mouthfeel that emerges. The flavors evolve, revealing a complex array of sensations, ranging from sweet toffee to velvety vanilla cream. A subtle hint of cold smoke adds an intriguing layer to this enticing finale.
