A grain whisky made only from malt? That’s also smoky? Paradoxical spirits are something of a calling card for the whiskymakers at Loch Lomond Distillery who operate their site with seriously open minds. We managed to source some of their peated, Coffey-distilled whisky to create a blended grain with a difference.

Experimental Grain Whisky is in many ways the alter ego to Hedonism, our signature expression. The smoke notes that the Loch Lomond parcel bestows are unlike anything we have used before: herbal, moss-like, clinging.

The majority of Experimental Grain Whisky is comprised of grains from the Cameronbridge and North British distilleries. They bring notes of fudge, vanilla and set honey. On top of this the younger whisky from Loch Lomond layers impressions of pine forests and patchouli oil.

Sombra is an award-winning mezcal that is dedicated to sustainable and environmentally friendly production. Sombra Mezcal is made from 100% organic Espadin Agave. After growing up to 10 years, the hearts are harvested and roasted for 2 days over oak wood fires that heat cooking stones in a stone-lined pit. The roasted agaves are then crushed by a limestone tahona, fermented with only native yeast, and distilled in copper stills to create a refined, smooth and balanced Mezcal at the traditional strength of 90-proof.

Following the end of the American Revolutionary War, Johannes Reginald Beam emigrated from Germany to the United States, and eventually settled in Kentucky County. At the time, Kentucky County was still considered part of Virginia, and was overseen by a military governor named John J. Bowman. In order to encourage westward expansion, Virginia issued pioneers who agreed to settle in Kentucky County corn writs, which granted the pioneers 60 acres of land if they agreed to settle in Kentucky and start farming corn. After settling in Kentucky, Beam began harvesting corn and set forth a family tradition by distilling the excess grains he harvested into whiskey. Since then, seven generations of the Beam family have been involved in whiskey production for the eponymous company (the company is actually named after James Beam, who rescued it following Prohibition). Today, Fred Noe a seventh generation master distiller and the great-grandson of Colonel James B. Beam shepherds his family legacy forward. Jim Beam Peach is the epitome of ripe and fresh peaches, combined with the world's finest Kentucky Straight Bourbon Whiskey to create a perfect blend of sweet and woody notes of bourbon. Our Sonoma Coast Chardonnay is 100% barrel fermented and is all about balance. The cool coastal influence provides rich acidity and delicious tropical fruit flavors, while the barrel fermentation lends itself to creamy toasted notes of spice and vanilla. Very food friendly and crowd pleasing!

We work closely with our partner producers and set them up for success.  No haggling.  No exclusivity contracts.  We guide producers through the complicated steps to export in their own names for the first time, and cover necessary expenses including local attorneys, accountants, license fees, and more.  We absorb our producers’ marketing and supply chain costs as our own. We believe in autonomy for producers, be it hiring their own workers or using their own bottling facility. We only step in if they want our help. We connect our partner producers to share knowledge and help each other in production. Revenue from every Erstwhile bottle sold creates jobs in our partner producers’ and vendors’ local communities in Mexico.  Our producers hire their own team of local men and women, on their own terms.

At Dovetail Distillery we malt our own wheat for use in our mash bill in a hand-built cedar cabinet. We then grind the malted wheat, wheat and oats into a fine flour which is then weighed out for our small batch process. We use local water from the Sierra Nevada snow melt to cook our mash and then allow it to ferment in open containers until it is ready to distill. At Dovetail Distillery we use the tried-and-true process of double distilling in a copper pot still to produce a spirit with both a full body and flavor. White Dove is unfiltered to maintain a full flavor.

TASTING NOTES:  White Dove has a strong peppery taste up front which is followed by a buttery caramel finish that lasts on the palette for several minutes.

AROMA:  White Dove has a strong aroma of cut grass and toasted oats.

MAKER'S NOTES:  White Dove pairs well with stone fruits and anything with a floral note. White Dove can easily be substituted in place of gin due to its strong botanical flavor. White Dove is unfiltered in order to maintain a rich, full flavor and body as is the tradition of an authentic Whiskey.
