As our legend goes, when the tides at Talisker Bay flowed with an unusual force, a luminous creature was drawn from the blackest depths, flooding the deep-sea darkness with its captivating glow. This powerful luminescence was carried on storm-tossed currents to the Talisker distillery, illuminating its new-make spirit. In that spirit too, the vivid luminosity shone, its classic smokiness fading before a radiant tide of spice-bright sweetness rarely seen.

On the shores of Loch Harport, near the western edge of the rugged Isle of Skye, legends easily ring true. Standing apart, its new make spirit cooled by the sea, Talisker has forged its own maritime destiny here since 1830. Sweet, salt-laced, thunderous and smoky, as elemental as land, sea or storm, this is a whisky for the wild at heart, Made by the Sea.

Light shines in every element here. Amid a deep golden glow, salty, smoky hints of a beach bonfire give the mild nose a maritime feel. First fill ex-bourbon casks gift layers of luminous flavour, the texture smoothly oily, the taste sweet and smoky-spicy, salty and fruity, like an orchard in sea mist. Peaty power appears in the chilli-spiced catch of the long finish. This is a legendary Talisker, of ethereal beauty.

Elemental yet also classic in character: maritime malty smokiness merges smoothly with a tide of spice-bright sweetness to form a salt-laced monster that is truly “Made by the Sea”.

First-fill ex-bourbon casks gift layers of flavour; a luminous spiced sweetness bathes storm-tossed notes of smoke and sea in its irresistible glow.

Best served neat, pour 60ml of Talisker 11YO in a whisky glass and enjoy.

TASTING NOTES

APPEARANCE: Deep, glowing gold.

BODY: Medium.

NOSE: Maritime in feel, with light spice-prickle, the first impression suggests a beach bonfire of dry seaweed, then deep-seated notes of maritime saltiness and marine engines take over, on a base of drying fresh linen. All these scents hold together well at reduced strength.

PALATE: Smoothly oily in texture, while the taste is gloriously sweet throughout and smoky-spicy, with a distinct fruity hint, all of which evokes an orchard seen through smoke and sea mist. A fine salty balance in the middle leads the spiciness on into a powerful chili pepper catch as you swallow. With a drop of water, the sweet fruitiness and saltiness come into their own.

FINISH: Long, sustained and lightly smoky, with lingering warming spice.

Our story begins in San Juan del Rio, a town in Oaxaca where artisanal, small batch mezcal has been made for generations.

Pluma Negra is cultivated and distilled by the Hernandez family who have produced Mezcal in the region for nearly 45 years. Our Maestro Mezcalero, Rodolfo Hernandez, is a third generation Mezcalero who uses time honored traditions to create Pluma Negra - animal drawn tahona to crush the maguey, pine barrel fermentation, and double distillation in copper pots.

Pluma Negra proudly presents four expressions of Mezcal that embody the essence and complexity of this distinct spirit - deep rich flavors on the palate, and aromas that can be both delicate and robust on the nose - Espadín, and a cocktail Espadín, Tobalá, and Tepeztate.

ESPADÍN
Espadín grows throughout Oaxaca. Our Maestro Mezcalero employs traditional methods for harvest and distillation.

Donkeys transport machete cut maguey down to where it’s cooked in an underground earthen oven. An animal powered tahona stone grinds the baked maguey, which is placed in pine barrels for wild yeast fermentation. All of our Mezcal expressions are finished with a double distillation process in small batch copper pots.

TASTING NOTES
Espadín is light and fresh on the nose - lime, pear and apple come forward, with subtle herbal and almond notes at the end. It has a light and zingy feel that flows between tangy citrus and briny olives that lingers long on the palate. Espadín is beautifully approachable and perfect for people who are new to experiencing Mezcal.

HOW TO ENJOY
Our 40% ABV Espadín is designed as a cocktail spirit, try mixing over ice with tangy sweet pineapple juice, zingy citrus fruits such as tangerine, orange and lime, or crisp and clean cucumber. Our 48% ABV Espadín is a sipping Mezcal that is best enjoyed neat. Pairs well with lightly smoked fish.

Distillery Information

Death's Door Spirits began back in 2005, in part as an experiment, when a group of people began trying to start farming on the island once more swapping potatoes for wheat. Brothers Tom and Ken Koyen had enough seed to plant five acres, and this grain is used in all of Death's Door Spirits today. The company's new state of the art craft distillery was opened in June 2012, and is the largest craft distillery in Wisconsin, as well as being one of the biggest in the region.

Sasha Crommar, founder of Kystin Cidres, launched the Kystin brand and cidery five years ago in Brittany, France. He just recently opened his boutique cider store in Vannes, Brittany. His goal is to create an innovative brand. He draws on his AOC expertise, Normandy apples and his ties to Brittany to guide his cider making. He currently has 5 hectares (12 acres) planted in orchards in Normandy. A human-sized enterprise and simplicity are important to him. Sasha is striving to create surprising yet subtle flavors - ones that you are happy to drink with your everyday meals and holiday meals. He encourages consumers to think of cider as a refreshing beverage that can go with anything – seafood, chicken, veal – not just crepes!

This traditional Brut Cidre is produced in Brittany, France, from apples grown in the Pays D'Auge area of Calvados. Primarily doux (sweet) and doux-amers (bitter sweet) apples are used in its production giving this beautiful, golden cider a range of complexity that is easy to enjoy. Great for first time drinkers of French cider. 

Aromas and flavors of honey roasted apples and nuts, dried pear, strawberry jam, pineapple shrub and a hint of baking spices.  (Beverage Trade Institute, Gold Medal, 95 points). A hint of apricot and caramel as well. Serve chilled in white wine glasses or stemmed cider glasses. The 330ml (12 oz.) bottle is just right for one or two people. Produced by Sasha Crommar, this cider is a wonderful example of the artisanal approach that Sasha brings to each of his ciders. Subtle yet commanding, it fulfills all your expectations for a classic Brittany Brut cider.
