The grapes are placed in wooden boxes, and left to dry in controlled humidity until February of the following year. After pressing, the traditional maceration takes place over a period of more than three weeks, which is followed by up to 3 years aging in the cellars.

In celebration of our 200 year anniversary we have gone to Jerez de la Frontera in Spain, where our exceptional oak casks are seasoned with sherry wine. Created by The Macallan Whisky Mastery Team, the single malt Scotch whisky is a unique expression using a perfectly balanced combination of exceptional European and American sherry seasoned oak casks and inspired by the year end traditions in the home of Sherry wine.

This release is inspired by New Year’s Eve in Jerez de la Frontera: a night full of meaning and tradition, known as Nochevieja, meaning Old Night.

In many cultures around the world, the year’s end is a time for togetherness. A night to be with people we love the most, to reflect on what has passed, and to toast what is to come. With this celebration comes traditions and rituals that have been handed down from generation to generation, until they become part of the soul of a place. 

For this release, the artist Maria Melero has evoked the sights, sensations, and emotions of a Spanish New Year’s Eve celebration in Jerez de la Frontera.

Our Four Grain Bourbon story starts with two Colorado family farms where heritage corn and heirloom varietals of wheat, barley and rye are grown. Those grains find their expression during our labor-intensive cooking technique, bringing each grain’s individual character to life, while open-air sour mash adds soulful complexity. After three years in 53-gallon charred oak barrels, influenced by our high-altitude climate, an entirely novel bourbon unfolds.

This wine expresses the spirit of a few Right-Bank Bordeaux producers with its complex expression of herbs, red fruit, and elegant structure but with a Paso Robles twist of full, mature fruit.

Tasting Notes

Appearance: Bright with a deep ruby core lightening to ruby garnet at the rim, with light staining on slow-forming, persistent tears.

Aroma: Aromatic with rich ripe black fruit along with notes of vanilla, mocha, saddle leather, and warm toasted oak hints.

Palate: Moderate-plus bodied with ripe blackberry and black plum on the entry, evolving into the deeply savory midpalate with smooth, fine tannins and notes of fresh bay leaves, cedar, espresso, and subtle hints of fruitcake. The long and lingering finish features minerality, sweet tobacco, plum preserves, and barrel spice while remaining savory and fresh.

Wilderness Trail Distillery is a craft operation that was launched in 2012 in Bold Danville, Kentucky. Mixing old traditions with modern science, they aim to create fine bourbon and other spirits. Founded by Shane Baker and Pat Heist, a pair with over 20 years of experience with fermentation and alcohol production under their belts, they craft unique spirits using locally-grown grains. Their spirits are hand-crafted and they pride themselves on being "not interested in making the most, just the best." The founders were left with several yeast strains they had collected over the years in the industry and put them to good use in the distillery. The premium corn, wheat, and rye are sourced from the nearby Caverndale Farms and Walnut Grove Farms from Adairville, Kentucky, while their malted barley comes from Louisville. The natural Kentucky limestone springwater completes the 100% Kentucky list of ingredients. Their production methods include the proprietary Infusion Mashing Process, which together with their unique yeast strains results in a softer and uniquely flavorful distillate. They are the first Kentucky bourbon distillery to use a chemical-free clean steam boiler that minimizes off flavors. Instead of sour mash, they rely on a sweet mash, which enables more flavors to be extracted from the grains. They employ a hybrid pot still, as well as two continuous column stills. All the whiskey is distilled, aged, and bottled on-site. Wilderness Trail produces bourbon, rye whiskey, vodka, and bourbon barrel-aged rum. Their Small Batch Kentucky Straight Bourbon expression is made in 12-barrel batches, one fermenter's worth. Crafted from a mash bill of 64% corn, 24% rye, and 12% malted barley, the spirit employs their sweet mash technique and uses their proprietary yeast strains. It enters the barrels at 110 proof and is aged on different floors of their rickhouses before being bottled at 100 proof.

Rock Angel has a more complex and structured taste profile than Whispering Angel bringing it into a more premium realm, giving rosé lovers a bigger and richer wine. If you like the minerality of a Sancerre, you will love this wine. The slogan "It all began with a hushed murmur, and now it's time to embrace the rock" marks the introduction of Rock Angel. This rosé undergoes partial fermentation and aging in large oak barrels, resulting in a flavor profile that's more intricate and well-defined compared to Whispering Angel. This elevates it to a higher-tier, offering rosé enthusiasts a more substantial and opulent wine, perfect for savoring as an aperitif or pairing with a diverse array of gourmet dishes. If you appreciate the mineral notes found in a Sancerre, you'll undoubtedly find delight in this wine.

TASTING NOTES

AROMA: Delicate red berry aromas with mineral notes, along with floral hints and a subtle spice.

PALATE: Rock Angel is rich and racy on the palate. The use of partial oak aging adds a creamy feel and texture to this wine, and the flinty minerality embues it with another layer of complexity.

FINISH: Powerful and elegant. Firm acidity with a long and silky finish.

The Featherbone Factory built by E.K. Warren in the 19th century to manufacture women's corsets sits on the banks of Lake Michigan just across the Indiana border in Three Oaks, Michigan. As the factory changed hands in the twentieth century, it became a production site for everything from buggy whips to pickles. Today, it's home to Journeyman Distillery and Bill Welter, Journeyman's master distiller. Welter, who was formerly a banker in Indiana, began his Journey when his family business was sold in 2006. He moved to Scotland, where he began to learn the art of craft distillation from Greg Ramsay (master distiller at Nant Distillery) and Bill Lark (master distiller at Lark Distillery). After returning to the United States, Welter spent time producing and resting whiskey using a prominent organic & kosher distiller's facility in Chicago before opening the doors of his own distillery in Three Oaks with the intention to offer grain-to-glass spirits from day one/drop one. Not a King Rye is a tribute to George Washington, who was not only the first US president, but also one of America's first distillers. After his victory over the British, he was celebrated by the masses as the first King of America. Washington famously stated that he was Not a King. In honor of the first president, this limited release whiskey is made available on Presidents Day each year. This incredible spirit earned 5-stars / Highest Recommendation from F. Paul Pacult's Spirit Journal, and received a Gold medal at the 2018 Berlin International Spirits Competition.

About the Brand

Hey there! We’re Mom Water, a fruit infused vodka water. That’s right, no bubbles — just pure still water (#drinkslikewater #notaseltzer). There’s also no sugar, no carbs, no artificial flavors or preservatives, and each drink is only 90 calories! We were created by Bryce and Jill Morrison, a southern Indiana couple in search of the perfect poolside drink that wasn’t loaded with sugar and could keep them feeling refreshed on a hot summer day. Jill was never a big seltzer fan or the bloating and headaches that followed after having a few, so she set out to create a light, non-carbonated alcoholic beverage.

After becoming a self-declared mixologist, Jill created a drink that was the perfect, all natural, sugar-free mix of tasty and boozy, and it didn’t take long for it to become a staple among her (and Bryce's!) friends. However, one of their kids accidentally grabbed one of Jill’s specially concocted water bottles from the cooler, so Bryce suggested she properly label them and Jill began to scribble "Mom" on the side. Thus, Mom Water was born.

Ruby red in color with purple tinges, this Italian red blend comes from Valpolicella and is made with indigenous Italian grapes (Corvina, Corvinone, Rondinella). It has a fragrant and intense aroma with hints of ripe cherry, blackcurrant, blackberry and green pepper, followed by hints of cocoa and dried fruit. On the palate, its vibrant juiciness is accompanied by velvety tannins. It has a lingering and tangy aftertaste.
