Tasting Notes: The aroma starts with a burst of caramel, fudge and baked sugar, backed by hints of fresh fruit and berries. On the palate, butterscotch vanilla combines with notes of toasted oak and a light fruity taste to carry through the finish.

Dos Boots’ agaves are grown deep in the Oaxacan Sierra, only a short drive from Villa Las Margaritas. The rich terroir of the mountain landscape and soil there nurture our agave, giving it its unique and differentiating proper- ties. The piñas, or hearts, of the agaves are hand selected and cooked in a conical underground pit oven, overseen by the expertise of our 4th generation Maestro Mezcale- ro, Petronilo Altamirano. Our agave is milled with a ta- hona stone wheel, fermented in wooden vats, and double distilled in copper alembic stills. Our Mezcal’s flavor is bold, and best described as smooth with herbal, earthy notes and a slight sweet aftertaste. We think it’s deli- cious, and is best enjoyed as a sipping experience or in a craft cocktail.

TASTING NOTES

At first sight, the intense golden colour promises round generosity.

A very expressive and indulgent nose reveals yellow and dried fruit, toasted almonds, hazelnut, maple syrup, meringue and mandarin liqueur.

On the palate it is generous, deep, ample and fresh with aromatic persistence and a long finish. It has notes of nougat, frangipane, pastry, tarte tatin, plenty of citrus with a beautiful finish on pink grapefruit skin.

As we have bedded in our new distillery, we have sought the true expression of Torabhaig. Through tireless trial and dialogue, then using the findings to inform each batch, we have evolved a distinctive signature style, our own flavour profile that we describe as Well-Tempered Peat.

This distillery signature will be the foundation upon which we build our legacy, and we look forward to witnessing this style develop over our first four expressions to be released under the Legacy Series label, as we dig deeper into the complexity of the flavour of peat to deliver truly exceptional and balanced character.

This is the second expression of Torabhaig Single Malt, available from July 2021 under the label ‘Allt Gleann – The Legacy Series’, bottled in small batches drawn from no more than 30 casks each.

At barrel proof, True Blue Cask Strength preserves the bold flavors and aromas straight from our premium barrels. TASTING NOTES

It took over 70 years after the prohibition had ended for the distilling industry to return to New York City. New York had a flourishing distilling industry by the early 19th century, however things changed during the Civil War, when President Lincoln taxed spirits to fund the military. This resulted in many distilleries going underground before the end of the century. The fatal blow for the legal distilling industry in US came in 1920, when the Eighteenth Amendment came into effect making the production of alcohol illegal. It was only in the 21st century that small distilleries started resurging in New York. The New York Distilling Company, located in Williamsburg, Brooklyn, is one of the oldest distilleries in the city, and was founded in 2011 by Tom Potter, a co-founder of the Brooklyn Brewery, and Allen Katz, one of the nation's leading experts on distilled spirits and cocktails. The distillery specializes in gins and rye whiskeys and has been one of the pioneers of the city's distilling renaissance that builds upon the pre-prohibition heritage. Gin distilling in New York began in the 17th century, when Dutch settlers of New Amsterdam (as New York was then called) started making a version of the Dutch spirit genever. However, it wasn't until the early 19th century when the first commercial gin was produced in the US. Gin was a popular drink during the prohibition, as it was simple to make. American gin is a bit different from London and other European gins as a result of using other botanicals. Ragtime Applejack Barrel Finished Rye Whiskey brings together two traditional strong drinks from the northeast US rye whiskey and applejack, which was most probably the first spirit to be produced in the first New York State distillery built in 1640. This whiskey is a version of the distillery's flagship Straight Rye Whiskey. After aging for two years in oak, the rye whiskey is finished for 90 days in barrels that previously held applejack in New York's Black Dirt Distillery.
