The Origins of Luxury Rums

In the 1800s, Caribbean rums made from native sugarcane in Trinidad, Guyana and Barbados were shipped in casks to the Port of New Orleans to quench the thirst of the growing American spirits market.

Whiskey Del Bac Dorado is a single malt whiskey with the true character of the American Southwest. Using the Scottish model of whisky-making, Dorado is made from 100% barley that is malted and smoked over a velvet mesquite fire, mashed, fermented, copper pot distilled, aged, and bottled on-site.

Dorado has a nose of tobacco and chocolate, giving way to desert campfire embers, and finishing with soft tannins and sweet toffee on the palate. Dorado has a 90 point rating from Whisky Advocate.

For Sentinel, we began with a sweet, bold blend of three-year-old and two-year-old 95% rye-5% malt straight rye whiskies distilled and aged in Indiana. We finished this rye in freshly-harvested mesquited Whiskey Del Bac casks, then filtered it across a bed of Mesquite charcoal from our mesquited malting process, inspired by traditional American whiskey production methods. Add a hot, Sonoran summer.

The result: A striking straight rye whiskey with the bold flavors of a traditional 95% rye, smoothed by the soft roundness of a hint of mesquite. The second release in Mount Gay's Origin Series looks at how the distillation of their rum can impact its flavour profile. Their expressions are made using a blend of rum distilled in copper pot stills and copper column stills, but the two bottles in this set are quite different. Each is made using the same ingredients and maturation methods, but one is made using rum distilled exclusively in copper pot stills, while the other have been distilled exclusively in copper column stills. Fascinating stuff for rum enthusiasts.

Mount Gay Origin Series Vol. 2 - The Copper Stills Rum Tasting Notes

Nose: The aroma of the rum delivers notes of dark chocolate, funky heavy minerals, toasted almond, and vegetable-laden astringency.

Palate: The first sip of the rum provides notes of apricot, banana, dried apple, and tart lime with sweet caramel punctuating the flavors.

Finish: Notes of toasted coconut, limestone, and charred oak form as the rum quickly fades in a dry finish.

About the Brand

Since our first batch of rum was bottled and distilled in September 2009, the Kōloa Rum Company has been bringing The Spirit of Aloha to the world.

To produce Kōloa Rum, we first start with pristine rainwater from Mount Waiʻaleʻale and the nearby mountain peaks and rainforests that filtered through volcanic strata into vast underground aquifers. Our rums only use pure “tall cane” sugarcane, locally sourced coffee, chocolate and ingredients to develop authentic flavors of the spirits we produce.

Using these unique, authentic ingredients, our premium Hawaiian rums are twice-distilled, blended, bottled, and shipped directly from the distillery in Kalaheo, on the south side of the beautiful Garden Isle of Kauaʻi. The Kōloa Rum Distillery Team is proud to produce and ship across the U.S. mainland, Australia, Austria, France, Germany, Japan and Western Canada. Our rums are distilled in single batches using our vintage (circa 1947) 1,210-gallon copper-pot still, with a copper column and condenser. During the second distillation, the distillate is collected in three sections – heads, heart, and tails. Kōloa Rum uses only the heart of the batch.

Our unique distillation process and quality ingredients used combine to provide the smooth, clean and polished flavor and aroma characteristics that distinguishes Kōloa Rum from most others.

Kōloa Dark Rum is made from pure cane sugar, distilled in an impressive vintage 1,210 gallon, steam-powered copper pot still and cut with filtered water from the ancient Mount Waiʻaleʻale.

Appearance
This dark rum is a genuinely deep chocolate brown that rolls with a cloying viscosity around the glass, developing into thick, slowly rolling light black coffee colored legs.

Nose
Kōloa Dark Rum has a robustly vanilla nose that envelopes the perimeter of the glass, upon further and closer whiffs of this aromatic vanilla behemoth subtler notes of dark semi-sweet chocolate, fresh brewed espresso and chocolate cupcakes arrive to round out the olfactory experience.

Taste and Finish
This vanilla-driven dark rum sings from the nose to the glass exactly. It presents itself with robust flavors of vanilla, dark semi-sweet chocolate and lightly finishes with espresso, all encompassed within a dry, highly flavorful dark rum.
