DEAU VS Cognac

This Deau Very Special cognac is made from expertly distilled eaux-de-vie using the traditional Charentais still method. Slowly aged in new, French-made barrels.

Pale gold color with fresh, intense aromatics of sugared almond with delicate grape blossom and notes of peach and citrus on the nose. Gentle and fresh in the mouth with an elegant oaky flavor developing to a dried fig and vanilla with a touch of orchard fruit. The supple finish is fresh and intense. Perfectly enjoyed in a long drink.

The origins of Deau Cognac began over 300 years ago, when a young entrepreneur, Louis Deau, became a master of the cognac trade, producing exquisite cognacs in the Cognac region. The tradition of Deau Cognac is carried on today by Distillerie Des Moisans, which was founded by Roland Bru in 1962 and has been owned by the Bru Legaret family for three generations. The estate has remained independent from the large cognac houses and is currently run by the founder’s daughter, Veronique Bru Legaret who today presides over the destiny of the DEAU Cognac House. An expert in the art market, she recognizes the nobility of the brand, and its symbolic Griffin, that she has known since childhood. Three centuries after Louis Deau's first creations, she has bought back the old eaux-de-vie and preserved this treasure trove in Les Moisans.

The Moisans estate is passionate about their terroir and vineyards and gives great care to creating the wines that will become Deau Cognac. It is thanks to the land and the vines that the family history carries on. The estate is located in the Petit Champagne region of Cognac, an area renowned for its fine brandies. The main grape variety is Ugni Blanc, which yields lively, fresh wines which are ideal for making cognac. Located in a small hamlet in Sireuil (between Cognac and Angoulême), the estate includes the distillery, the aging cellars, a bottling building, and the offices – something rare enough in Cognac to be emphasized! This proximity of all the processes allows the Moisans estate to always keep careful control over the quality and customer service.

The distillery is a splendid cathedral-like building with twelve Charentais stills that continuously distill from October through March of the following year. The slow heating process of the still combined with double distillation produces eaux-de-vie of unrivalled quality. Double distillation allows the distillery to keep only the aromatic “hearts” of the eaux-de-vie, guaranteeing the high quality of the Cognac. The cellar master of Distillerie Des Moisans personally supervises the meticulous work of distillation. Through his talent and expertise, he gives Deau Cognacs the personality and characteristics that are dear to the Bru Legaret family.

The aging cellars are located on the banks of the Charentes River, in niches of limestone concentration, imparting the ideal humidity for slow and harmonious maturation.

Herout Micro Cuvée No 1 Cider

The 2020 Vintage Micro-Cuvée No. 1 is a still, organic cider distinguished by its golden orange color.  It is fermented for at least 3 months in oak barrels that previously aged Calvados AOC.  This aging process reinforces the level of alcohol and tannins in the finished cider.  A very fine, fruity taste.  5.5% alc/vol. 
Maison Hérout follows the cider-making tradition of their ancestors – their ciders are all organic and fermented naturally with indigenous yeast.  The bubbles are the result of a natural effervescence and occur in the bottle.  Maison Hérout ciders are not pasteurized or carbonated.  Gluten – Free and vegan.
The Orchards
Maison Herout has 25 acres of apple orchards. The average age of the apple trees varies according to the parcels (10 to 65 years old). More than 25 varieties of apples are grown including Rouge de Cantepie, one of the original apples grown in the orchards.  The soil is maintained by being completely covered with grass.
The Terroir
The orchards are situated on the Armorican Massive which is composed of schist and sandstone sediment as well as granite from the primary eras.  With a silty coating, the soils are slightly sandy and pebbly sandy and drain very quickly.
The Production
After grating the apples to obtain the “marc de pommes”, the grated apples are then crushed into a pulp, then pressed.  The resulting pressed juice rests for 3 to 5 days to become naturally clear. This clear juice is then fermented for at least 3 months in barrels that previously held Calvados AOC.  After bottling, the cider then continues fermenting for at least another 2 months so that the natural bubbles can form – leading to a rich, thick robe of foamy bubbles that are the hallmark of Maison Hérout.

Veuve Clicquot presents the third edition of its Extra Brut Extra Old collection. With one of the largest and most varied collections of reserve wines in Champagne (between 400 and 500 wines), the Maison has a unique wine heritage.

True to its expertise in the Art of Blending, Veuve Clicquot enriched its Extra Brut Extra Old collection in 2021 with a new cuvée composed of 8 years selected among its remarkable reserve wines: 1990, 1998, 1999, 2008, 2009, 2012, 2013, and 2014.

A precise Champagne made for wine lovers, this new wine is matured twice. First in vats on fine lees for several years, then in cellars for a further three years before disgorgement, giving it its texture and aromatic complexity. 

On the nose, Extra Brut Extra Old 3 reveals aromas of white flowers, citrus fruits (lemon), white fruits and opens with notes of bread dough and orange peel. The first sip reveals a great freshness on the palate, then comes the complexity and depth. Extra Brut Extra Old 3 has an aging potential of more than 15 years and brings all the precision and liveliness of a rare and complex Champagne.

In 1898, Teddy Roosevelt a Long Island native organized the First United States Volunteer Cavalry, commonly known as the "Rough Riders," in preparation for the Spanish-American War. The regiment comprised 1,250 volunteers from across the country, including cowboys, Native Americans and other pioneers of the West. After seeing action in Cuba, the Rough Riders earned a decisive victory at the Battle of San Juan Hill before returning to Long Island. Upon their return, the soldiers celebrated their victory and presented Colonel Roosevelt with a small bronze statue of a cowboy riding a bucking horse. "There could have been no more appropriate gift from such a regiment," wrote Roosevelt later. "Most of them looked upon the bronze with the critical eyes of professionals. I doubt if there was any regiment in the world which contained so large a number of men able to ride the wildest and most dangerous horses."
