In this tribute to Thomas Hine, adventurous Englishman landed from England in the 18th century to discover the subtleties within cognac, there is a notably uncommon je-ne-sais-quoi. Both discrete and whimsical, tangy pear and sharp orange zest rally. Homage quietly arises on the limestone land of Grande Champagne where it draws both tension and minerality. A two-decades journey across the Channel will then combine geographic adventure and lifelong tradition. Under the arched vaults of damp British cellars, a recital of candied citrus awakens. Cierto Tequila represents thousands of years of biological and cultural evolution. It is nature’s ritual in a glass –no additives, no artificial ingredients, no shortcuts. Our Master Distillers, Enrique Fonseca and Sergio Mendoza, are fourth- and fifth-generation agaveros, whose family has grown agave since the 1800s. Like fine winemakers who farm the land themselves, their growers' lens and deep knowledge of agave make for the best tasting Tequila. The truth is right here in Jalisco. 

Cierto is made with fully mature, estate-grown agave from the Atotonilco Highlands, where the ancient red clay soil coaxes its roots to grow deeper and absorb its complex minerality. Enrique and Sergio personally tend to each orchard, harvesting plant-by-plant only when they recognize it has reached its potential, at the Maduro and Pinto stages. At La Tequileña distillery in the town of Tequila, agave is hand-cut and slowly cooked in low pressure ovens to yield the juice that forms Cierto's base. Inspired by Scotch whisky-making, we distill twice, in copper pots and column stills, to showcase the natural character of the terroir and agave.

Cierto is made with pure water filtered through ancient volcanic springs at the Volcán de Tequila. Only natural ingredients are used: water, yeast and agave. Nothing artificial is ever added to Cierto. It takes time to perfect a great Tequila. Our aged tequilas are gently matured in French Limousin oak casks which previously held fine wine, cognac and Armagnac – persuading the agave’s delicate essence to emerge. Each blend includes rare tequilas from the Fonseca family’s private tequila library, a vast collection spanning a variety of cellar characteristics.

DESCRIPTION

Cierto Private Collection Extra Añejo is aged in rare French Limousin oak casks. The aroma bursts with oak, cherry, and cooked agave. This luxurious and complex tequila imparts deep notes of tobacco, vanilla, and oak while surrounding the palate with an amazing honey and spice finish. Perfect to sip neat or pair with a fine dessert.

Dorothy Arzner made history when she became the first woman to direct a sound film, Manhattan Cocktail, in 1928. Her directing career spanned the 1920s to the early 1940s. She launched the careers of many actresses including Katharine Hepburn and Lucille Ball. Later, in her teaching years at UCLA, she taught a young Francis Ford Coppola and gave him the confidence to become a film director.

In honor of this free-spirited and independent woman we've crafted a 3-year-old straight rye whiskey. 'Grain to glass' in Sonoma County, our straight rye whiskey was aged for three years in 53 gallon new char oak barrels. Our mash bill is high rye meaning that it has a higher than average rye percentage which results in a final spirit that is bold, spicy and robust in flavor.

The Countess graces our potato vodka, which represents loyalty to the traditions of the finest potato vodkas from Poland. It takes over 9 pounds of potatoes to make one bottle. It is an expensive undertaking. Less than 3% of the vodkas in the world are potato based, and we think that makes ours pretty special.

TASTING NOTES

EYE: Honey

NOSE: Salted pistachios, malt, hay, herbal pine, banana chips, orchard fruit, melon rind, wax and vanilla. Just a wonderful, sweet and nutty, fruity whisky that’s shockingly different from the regular Amrut Classic Indian Single Malt Review.

PALATE: Waxy banana, malt, orchard fruit, melon rind, herbal pine, vanilla, pistachios, golden raisins, oak, baking spice and a touch of black licorice. The palate of the Amrut Cask Strength Indian Single Malt is so much more powerful and decadent with an oaky pop that starts light but grows. This is nice.

FINISH: Long - Waxy banana, oak, spice and, herbal pine and pistachio gelato mix into one of my favorite fades in recent whisky memory.

BALANCE, BODY and FEEL: Well balanced, full body and a warm, creamy, feel.

The second release of the Booker’s Bourbon 2021 Collection is Booker’s Batch 2021-02 ‘Tagalong Batch.’ This batch celebrates the way my dad, Booker Noe, learned the ropes at the distillery - by ‘tagging along’ with his grandfather and my great grandfather, Jim Beam.

The fourth release of the Booker’s Bourbon 2021 Collection is Booker’s Batch 2021-04 ‘Noe Strangers Batch. This batch celebrates the genuine, social nature of my dad, Booker Noe, and the way he could turn a stranger into a friend for life in no time.

Growing up, the distillery was like Dad’s playground; he loved spending time with his grandfather and everyone else who worked there, asking questions and expanding his knowledge. That’s ultimately how he developed his curiosity and passion for whiskey, and it was how he became such a talented Master Distiller.

The tradition of ‘tagging along’ has continued from generation to generation. I learned much of what I know about whiskey by following in Dad’s footsteps, and digesting all of the information I could while working side-by-side at the distillery. It’s also a tradition I continued with my son Freddie, and one I hope he’ll share with his children in the future.

Tagging along had some other rewards too, such as heading to the nearby lake to cast a line together after a hard day’s work. We all have fond memories of that quality time, and I hope you enjoy this batch as part of your quality time with family and friends too.

Our most popular whisky!  Roundstone Rye® is a very unique rye whisky, made completely from scratch at our distillery in Purcellville, Virginia.  This pre-Prohibition style rye whisky is made from 100% rye grain, sourced locally when available.  It is mashed, fermented, distilled and aged completely in our distillery, before bottling it at a very sippable 80 proof.  Aged in new charred white oak casks for a period of around two years, the whisky is smooth, woody, with that full-bodied fruity-nutty grain flavor typical of a Virginia rye whisky. Roundstone Rye has a delicious woody taste, with notes of caramel, rich butter toffee, and just a hint of lemon in the nose.

Roundstone Rye is a superb sipping whisky, a great whisky in Manhattans, or your favorite rye whisky cocktails.

Winemaker Notes
Graceful, pure and polished, this enticing Chardonnay offers tantalizing aromas of green apple, nectarine and candied citrus, with fragrant hints of roasted nuts and acacia blossoms. On the palate, it is rich and lushly textured, with a flowing elegance that frames the fresh citrus and stone fruit flavors, while carrying the wine to a long, silky finish.

Production
While the growing season began with a mild winter and less than average rainfall, there was enough precipitation to provide ample soil moisture. After an early and ideal budbreak, temperate weather throughout spring and summer produced balanced canopies and steady shoot growth, with relatively small berries. Mid-August brought a week of temperatures over 100º F, providing a final push towards optimal ripeness for our Sauvignon Blanc, Chardonnay, and select Pinot Noir vineyards. While late-season wildfires in Northern California brought logistical challenges, we were able to successfully pick our vineyards during a very busy, truncated harvest, resulting in beautifully pure and aromatic white wines, and lush, spicy and concentrated reds.

This savory spirit stands well on its own — but could be used as a solid backbone for creative cocktails. The caraway, fennel and dill serve many modifiers well, and the orange peel, ginger and sage brighten the traditional spices. Dare we say a California fusion spirit!

The botanicals are macerated overnight and then pot-distilled in micro batches for a truly hand-crafted spirit.

Distilled from a unique blend of thoroughbred grains from the Northern Neck of Virginia; 2/3 rye, 1/3 barley, hand-malted and kiln-dried with applewood and cherrywood smoke. Double pot-distilled at a low 150 to 160 proof to enhance the fruitiness and matured in ex-bourbon barrels with progressive infusions of toasted apple wood and oak chips.

TASTING NOTES

Nose: Sensual aromas of butter roasted chestnuts, clay, dried apple and pickling spices, rye grain sacks

Palate: Silky, with dried fruit and nuts, medium-to-full body, warm and inviting

Finish: Honeyed rye toast, peppery spice, cola, fig and mineral rich

Non-chill filtered. 45% ABV/90 proof

Wonderfully balanced with a great combination of creamy, spicy and subtle understated smoke perfect for all applications and occasions. A great crossover for inquiring bourbon drinkers.

The XO blend is composed entirely of cognacs coming from the Grande Champagne area, the most prestige sub-district.
JCB XO Cognac combines all the characteristics of the Grande Champagne - distinction, the complexity of the aromas and tastes, and long flavors with balanced woody impressions.

JCB XO is a blend of Cognac aged 38-42 years.

Tasting Notes:

Origin: 100% Grande Champagne, a blend of several cognacs which come mainly from vines around the Segonzac area. The vines are on the hillsides, so the terroir is excellent with the vineyards on the slopes, where the vines benefit from excellent drainage, exposure and ripening of the grapes.

Color: Polished mahogany with shades of gilded copper

Nose: The nose expresses mature aromas such as toffee, black chocolate, leather, blond tobacco and hints of white flowers.

Palate: In the mouth the XO is very smooth and nicely balanced by the powerful taste of fine and complex tannins. There is an extraordinary length.
