St-Rémy Signature is the new creation from our Master Blender Cécile Roudaut. With this blend, she wanted to shape a new face for brandy by exploring new production processes and new aromas, while continuing to respect St-Rémy traditions and its historical smooth profile. To do so, she decided to introduce a double maturation process.

The first maturation takes place in new oak casks (Quercus Petraea species with a fine grain) using medium and high heat. These casks will deliver spicy notes, indulgence, and vivacity. The second maturation takes place in traditional casks (Quercus Robur species with a large grain) using high heat only. These casks will deliver roundness, balance and sweetness, and will assert the very personality of our brandy.

The result is a smooth and fruity taste. Its perfect harmony makes it ideal for classic brandy cocktails or creations!

TASTING NOTES

APPEARANCE: Luminous, bright-amber, intensified by fiery, red sparks.

NOSE: A sweet aroma of virgin wood and spices such as vanilla, coconut and almond, as well as fresh fruits.

PALATE: Subtle and smooth. Virgin woody notes are enriched with honey, nut and butter flavours. Fruity notes start fresh, and then become candied. Sweet spices create roundness and balance.

This mezcal is made using traditional production methods that have been passed down through generations of mezcaleros, or mezcal makers, in the region.

The name "pechuga" comes from the Spanish word for "breast," as this type of mezcal is traditionally made by hanging a raw chicken breast above the distillation pot during the final distillation. The steam from the cooking mezcal infuses the chicken breast with flavor, which is then distilled along with the mezcal to create a unique and complex flavor profile.

Don Mateo De la Sierra Pechuga Mezcal is made from 100% agave Espadín, which is cooked in an underground pit oven and then crushed using a traditional stone mill. The resulting juice is fermented using naturally occurring yeasts before being distilled twice in copper alembic stills. During the final distillation, the chicken breast is hung above the still to infuse the mezcal with its unique flavor.

The nose of Don Mateo De la Sierra Pechuga Mezcal is rich and complex, with notes of cooked agave, smoke, and roasted meat, as well as a hint of fruit and spice. Kirk and Sweeney was the name of a wooden schooner that was best known for smuggling rum from the Caribbean to the United States during Prohibition," says August Sebastiani, President of 35 Maple Street Distillery. Just before it entered the territorial waters of the United States, the schooner would drop anchor and sell the rum to smaller boats which would come up alongside the Kirk and Sweeney. The smaller boats, which were faster and more maneuverable than the boats in the Coast Guard's fleet, would smuggle the rum ashore. As other boats followed suit, the edge of U.S. jurisdiction the line where boats like the Kirk and Sweeney dropped anchor became known as the "Rum Line" and the row of ships waiting to sell rum on the Rum Line were said to be anchored on "Rum Row." Kirk and Sweeney 23 Year Old Rum is a rum crafted in the Dominican Republic from raw sugarcane. After being distilled, the rum is aged for 23 years in American oak casks. As a result, it has a deep amber and iridescent copper color along with an aroma of dried fruits and sweet, toasted breads. On the palate, initial hints of honey, toffee and caramelized sugar lead to subtler notes of almond and vanilla, which finally give way to bursts of figs, dried plums, caramel and sherry on the finish. "Playing off the concept of global navigation," says Sebastiani, "we silkscreened an antique nautical map of the main rum smuggling route around the circumference of the bottle"of Kirk and Sweeney Rum. In addition, the neck of the bottle is hand-numbered with the rum's batch and bottle number, while a photo of the Kirk and Sweeney and the bottle's safety seal are printed to look like authentic nautical brass. "The overall design serves as a reminder of the risk so many were willing to take for a good taste of rum during the 1920s," says Sebastiani. This limited edition 23 year old bottling builds off of the success of Kirk and Sweeney's flagship 23 year old rum, which earned a score of 95 points from Wine Enthusiast and was named one of the Top 50 Spirits of 2013.

Hoosier Gameday Lager is a Vienna-style beer brewed by Upland Brewing Company and Indiana University. It has 4.7% alcohol by volume (ABV) and is available in limited drafts at Upland Brewing Company locations, as well as at grocery stores, liquor stores, and convenience stores. 

The beer is made with malted Vienna malt from Sugar Creek Malt in Lebanon, Indiana, and has a balance of malty flavor and refreshing drinkability. Some say it has a crisp semi-sweet malt base, grain, and bold finish hop presence.

Upland Brewing Company partnered with Indiana University Licensing and Trademarks to create the beer, which was based on feedback from fans and the Bloomington community. The beer has a cream and crimson candy color, and some of the sales will go toward IU student scholarships.

Código 1530 Reposado combines the purity of our Blanco and the elegance of our aging process. Aged for six months in the finest Napa Valley Cabernet French White Oak wine barrels, Código 1530 Reposado embraces the agave-driven flavors of Los Bajos tequila, with subtle hints of many of the signature flavors found in whiskeys.

Since our first batch of rum was bottled and distilled in September 2009, the Kōloa Rum Company has been bringing The Spirit of Aloha to the world.

To produce Kōloa Rum, we first start with pristine rainwater from Mount Waiʻaleʻale and the nearby mountain peaks and rainforests that filtered through volcanic strata into vast underground aquifers. Our rums only use pure “tall cane” sugarcane, locally sourced coffee, chocolate and ingredients to develop authentic flavors of the spirits we produce.

Using these unique, authentic ingredients, our premium Hawaiian rums are twice-distilled, blended, bottled, and shipped directly from the distillery in Kalaheo, on the south side of the beautiful Garden Isle of Kauaʻi. The Kōloa Rum Distillery Team is proud to produce and ship across the U.S. mainland, Australia, Austria, France, Germany, Japan and Western Canada. Our rums are distilled in single batches using our vintage (circa 1947) 1,210-gallon copper-pot still, with a copper column and condenser. During the second distillation, the distillate is collected in three sections – heads, heart, and tails. Kōloa Rum uses only the heart of the batch.

Our unique distillation process and quality ingredients used combined to provide the smooth, clean and polished flavor and aroma characteristics that distinguishes Kōloa Rum from most others.

VERMOUTH GUERIN: PINEAU DIFFERENTLY
Crafted from a base of wine mixed with two-year-old Pineau des Charentes, caramelized grape juice, and herbs and spices, then matured in Cognac casks, it brings a new and refreshing style as a vermouth. Their vision is for people to “Pineau differently,” using Guerin Vermouth as a low-ABV aperitif and as a component in their favorite cocktails.

Guerin Vermouth Blanc is crafted from a base of white wine (Ugni Blanc, Colombard, and Montils), two-year-old white Pineau des Charentes, caramelized grape juice, and herbs and spices, including angelica root, cinnamon, cardamom, coriander, nutmeg, and bitter orange peel. It is then aged in Cognac casks for several months. Beautiful clear, shiny golden color. Frank and floral nose with a light green touch, developing notes of hawthorn and green anise. The first sip is soft and warm with notes of white peaches, acacia, and angelica evolving in the long finish.

Crystal Head Vodka is produced by Globefill Inc., situated in Newfoundland and Labrador in Canada. The company was founded and created by Dan Ackroyd and artist John Alexander, the artist who created the distinctive glass skull that the Vodka is bottled in. The company prides itself on being free from additives, unlike most vodkas in the industry. The vodka is filtered a hefty seven times through Herkimer diamonds, giving it an incredibly smooth flavor profile. Dan Aykroyd and John Alexander designed the bottle to symbolize life, reflecting power and enlightenment. Crystal Head Vodka is distilled from Ontario "peaches and cream" corn before being mixed with pristine glacial water from Newfoundland. The Herkimer stones that the vodka is filtered through are said to have healing properties, but it also imparts a distinctive vanilla sweetness to the Vodka that is enhanced by a spicy kick. The finish is lingering with an intense vodka burn. Crystal Head is bottled without additives, glycerol, citrus oils, sugars, or enhancers. The impressive Crystal Head Onyx is a different beast. Crafted with blue weber agaves from a single source in Mexico, it's blended with that pure Newfoundland water for a super-clean and sweeter finish. It's a luxurious black skull-shaped bottle with a matching embossed cap. Onyx is a tribute to the human journey, the dark crystal supposedly possessing the power to absorb negative energy. A different vodka, it features green notes, earthiness, and sweetness that comes from the agave. The vodka is filtered the same way as their other expressions and contains no additives. 

METHOD AND MADNESS Rye & Malt – the first aged experimental distillate release created at the Micro Distillery in Midleton. Innovation is nothing new to Midleton, but the micro distillery has provided the copper canvas for experimentation to run free. This whiskey is the realisation of trial, and error, and brilliant bottled breakthroughs that started with “What if?

Masterfully created by our next generation of innovative whiskey makers, METHOD AND MADNESS Rye & Malt is a distillate-driven whiskey, bursting with floral notes and a spicy character.
