Maker Notes

Basil Hayden Subtle Smoke features the same high-rye mash bill that Basil Hayden loyalists know and love, but uses secondary aging to deliver a unique, layered flavor with a refined hint of smokiness.

We begin by toasting and lightly charring the secondary barrel. This is followed by delicately igniting hickory-smoked chips at a constant feed to produce smoke, which is then pumped into the barrel, resulting in notes of soft char and light butterscotch. This unique flavor provides a smoother, more subtle take on smoky spirits, and creates the perfectly sophisticated, yet approachable introduction to both bourbon and Basil Hayden.

In 1674 Edward Willett went to London and apprenticed to Daniel Mason to learn the pewter trade. When he was twenty-three, Edward received his mark and became a pewterer. He was allowed to strike his touch, pictured here, in the Pewterer’s Hall of London in 1684.

2012

January 27th – The family puts the first barrels of their new-make Bourbon Whiskey into Warehouse A for storage. This would have been Thompson’s 103rd birthday.

2017

On March 17, 2017 (St. Patrick’s Day) the family celebrated it’s 80 Year Anniversary of when Thompson Willett and his family put their first barrels into storage.

The first release was distilled in the early Spring of 2013 and bottled in the Summer of 2022. The proprietary mashbill is barreled at 115 proof in Char# 4 American Oak. We bottle without chill-filtration to preserve the most flavor possible.

Gran Diamante Anejo Tequila undergoes meticulous crafting, deriving its excellence from the choicest Agave Tequilana Weber cultivated on the estate. Patiently aged for eighteen months within pristine, new French Oak barrels, it develops a luxurious body and a velvety texture. Its taste profile reveals graceful notes of subdued spice, pepper, and delicate oak undertones that gracefully linger into a deeply satisfying finish.

This Anejo boasts a robust character and an elegant aroma. Delicate hints of butterscotch, intertwined with cinnamon and nutmeg spices, create a refined bouquet. Further enhancing its allure are faint traces of chocolate and cigar, adding complexity to its aromatic profile.

Glenallachie is situated in Banffshire, at the foot of Ben Rinnes, neighboring several other distilleries. Founded in 1967 by Mackinlay McPherson Ltd Glenallachie is one of the youngest distilleries in Scotland. In 1989 Campbell Distillers acquired The GlenAllachie Distillery, starting production run that lasted for nearly 30 years. In 2017 Billy Walker, Trisha Savage and Graham Stevenson came together to acquire the GlenAllachie facility reincarnating the distillery as The GlenAllachie Distillers Company Limited. The highly anticipated core range of the GlenAllachie distillery from Speyside was finally launched in July 2018. The water for the distillery comes from the dam heads over 2 miles from the distillery. Henshead and Blackstank flow into Beachshach Burn, which supplies the water directly to the distillery, and sits on the North East of BenRinnes. The distillery was designed to be gravity fed, created with horizontal condensers that maintain a consistent temperature, or increase/decrease to alter the character of the spirit. Using a vast amount of aged stock that was obtained along with the distillery, dating back as far as the 1970's GlenAllachie Master Distiller Billy Walker has masterfully created a signature single malt. The most important release in the history of The GlenAllachie Distillers Company; GlenAllachie 12 Year Old, is the heart of their range, a landmark bottling, selected and bottled under the careful eye of Master Distiller Billy Walker. Earning a Gold medal at the 2019 San Francisco World Spirits Competition, this 12 year showcases whisky matured in Pedro Ximnez sherry, oloroso sherry, and virgin oak casks.

In 1934, Ernest Hemingway purchased a boat named Pilar from the Wheeler Shipyard for $7,495. Although he ordered the boat from a catalog, extensive customization was requested (including a livewell and a cockpit enclosed with copper screens) in order to make it unique. The boat would eventually become inextricably linked to Hemingway he used it to catch one of the world's largest sharks in 1935, and, during World War II, the author went hunting for German U-boats in the Caribbean waters on board the ship (the boat was equipped with a sub-machine gun and hand grenades). As a result of his extensive travels, Hemingway was said to have lived a life of perpetual motion, always acting as a trailblazer and never as a spectator. Papa's Pilar Dark Rum is inspired by Hemingway and his thirst for adventure. Papa's Pilar Dark is an ultra-premium sipping rum, bold and complex much like the man who inspired it - Ernest Hemingway. Made of hand-selected rums solera blended in Bourbon barrels, Port Wine casks and Spanish Sherry casks, this 86 proof award-winning rum has a rich, caramelized orange, maple, vanilla, and toasted almond taste profile and a long velvety finish. 2019 Platinum SIP Award, Double Gold recipient: World Spirits Competition, San Francisco.
