Maker Notes

Mezcal UNION is dedicated to preserving the traditional craft of distilling and promoting socio-economic growth among local communities by bringing together artisanal distilleries and agave farmers. Our mezcal is a meticulously handcrafted blend of agave Espadín and the rare Tobal wild agave, carefully produced and bottled in Oaxaca, Mexico. It boasts a delightful combination of flavors and aromas including a subtle smokiness, notes of butter, mint, cinnamon, mango, herbs, and minerals.

To ensure the sustainability of our mezcal production, we are actively engaged in replanting both species of agave used in our blend. While it takes time for agave to mature, our ultimate aim is to exclusively use agaves that we have replanted, as soon as nature allows. We employ sustainable farming practices to actively prevent soil erosion, ensuring the long-term health of the land and agave crops.

Tasting Notes: Astringent, Dry, Butter, Herbs (mint, pine), Flowery, Sweet, Stone and New Woods.

Aromas in the mouth: The first drink reveals its 100% artisan process with oak woods and mesquite. After you feel the agave caramelized notes, then flowery herbs tones of Tobalá Agave, which starts to turn off the alcohol power leaving a long back sweet taste of Espadín Agave.

Summary of Flavors: Artisan strong body, buttery, artringent, herbal and a sweet clean smoke.

Our Fusion series concludes with an exquisite blend of nuanced Kentucky bourbons. Throughout the series, we’ve showcased the best of our estate-distilled bourbon with carefully curated aged whiskey. Enjoy this special sign off with our favorite creation to date.

TASTING NOTES
Waves of butterscotch and ripe cherry meet mint, coconut, and black pepper. A luscious mouthfeel of red fruit and maple leads to an indulgent finish of caramel sweetness with lasting rye spice.

Charles Woodson built his legend on the gridiron throughout his storied collegiate and professional career and now takes that same dedication to his new craft spirit line.  With the launch of his first spirit, Woodson Bourbon Whiskey, Charles brings his passion for winemaking and sustainability to his craft spirit line by finishing all of his spirits in the same french oak wine barrels used in the wine making process to make his Charles Woodson Wines Napa Valley Cabernet Sauvignon. A 6 month accelerated-aged Kentucky Bourbon. WBW has a unique flavor with a light front end of Cabernet berries with a smooth bourbon middle and a long-lasting Carmel finish on the back of the mouth. The mash was made in Kentucky, then sent in barrels to a manufacturer to accelerate the aging process by using ultrasonic waves (more Bourbon to stave contact). The Bourbon was then finished at our San Diego distillery in French Oak Cabernet wine barrels used to make Charles Woodson's Napa Valley wine.

Our signature four-grain Kentucky Straight Bourbon Whiskey is a homage to generations of proud Louisville distillers. Distinct and unorthodox, this expression sets a new standard for American whiskey while building on the legacy these great bourbon pioneers created as they traveled down their own whiskey rabbit holes.

Crafted from a unique mash that couples malted grains with corn, this superpremium bourbon combines depth with style. Deliberately distilled from our proprietary cooking process and aged in hand-selected barrels, this authentic whiskey is expressly crafted in small batches to yield a flavor like no other.

Over the past several years, Barrell Dovetail has become a highly regarded expression within our portfolio of products and the American Whiskey world. Recently, we became intrigued with applying the concept of “Dovetail” to some of our older stocks. The result is BCS Gray Label Dovetail, which still boasts our award-winning blend of Whiskey finished in rum, port, and Dunn Vineyards cabernet barrels and uses the same finishing and blending method. The difference, as with all our Gray Label offerings, is that we used older and more rare barrels in Gray Label Dovetail. The result harmoniously unites a dark and fruity California cabernet finish, a jammy and pleasurable port finish, and a sweet and funky rum finish to create a well-balanced, iconic whiskey. The component whiskeys are aged up to 20 years, making the final blend significantly more elegant.

An ester-forward bourbon with the brooding depth of cabernet and port casks. The varied distillates and casks come together into a complex palate that showcases the cola notes of whiskey that’s spent many years in oak.​

Appearance: Warm Amber.

Nose: Green grape, tart apple, and pollen lead into one very vivid note of just-pressed cider. The notes of gooseberry jam, cranberry sauce, and dried apricot are pronounced and defined. Maple walnut ice cream, tahini, and leather provide a subtle, savory undertone.

Palate: Robust and impeccably balanced, with flavors ranging from strawberry rhubarb pie to fennel pollen. Flan and coconut oil provide a rich and creamy texture that balances some light sandy tannin and modest astringency. Depth seems to come mostly from the oldest Canadian whiskeys, in the form of fennel, poppy seed and peppercorn. Allspice, ginger, and cola notes from the French and American oak round it out.

Finish: A burst of licorice candy and molasses gives way to
Earl Grey Tea with honey. The palate is left with a range of dusty mineral notes, among them necco wafers, oyster shell, and squid ink.

With a splash of spring water: Classical notes of crème brulée and funnel cake take the lead. The complexity here is more savory, with shiso, tomato, and tajin. An unexpected burst of lychee on the finish yields to charcoal and paraffin.

Named after Evan Williams, who opened Kentucky’s First Distillery along the banks of the Ohio River in 1783, it’s aged far longer than required by law. The result is a Bourbon that’s smooth, rich, and easy to enjoy.

Nose: Light with deep vanilla and mint

Taste: Notes of oak, brown sugar and caramel

The flagship expression of the Real de Minas Distillery, Don Amado Rústico is made using the historic method of slowly roasting fully-mature Espadín maguey hearts on firewood embers, before natural fermentation with airborne yeast and a slow double-distillation in ceramic pot stills.

The minero clay-pot still is quite prevalent on the nose with aromatics leaning towards ash, crushed walnuts, roasted corn, and savory spices. A bright, citrus Espadín maguey palate is well balanced against notes of caramel, butterscotch and fresh herbs.

• Halved & quartered (cogollo removed) agave earthen roasted for four days using mix of guamúchil and mesquite wood
• Cooked maguey macerated with proprietary blade spindle destrozadora shredder
• Fermented together with bagaso in 1,400L pine wood vats using airborne yeast strains
• Double distilled in burner heated ceramic pot stills to approx. 53% ABV and reduced with triple distilled demineralized water
• No aging, bottled at 47% ABV

Bartenura's exquisite wine is meticulously crafted from handpicked Pinot Grigio grapes thriving in the sun-drenched hillsides of the Veneto Region. Delicately balanced, it offers a dry profile infused with a delightful fruitiness, culminating in a refreshing and lingering finish. Its versatility shines, perfectly complementing hors d'oeuvres, seafood delicacies, and white meats with finesse. For an optimal tasting experience, ensure it's served chilled, allowing its vibrant flavors to unfold gracefully with every sip.

This was a lofty experiment that worked. The results of this 100-percent rye mash bill, matured in used Uncle Nearest barrels before being bottled at 100-proof, keeps with our tradition of creating some of the most awarded whiskeys in the world. This is rye whiskey, elevated, hitting every mark with its rich flavor profile, incredible balance of spices, and extraordinarily smooth finish.

PALATE: Brimming with light vanilla cream, caramelized sugar and the unmistakable spice of rye.

FINISH: Long, rich and well-balanced.

NOSE: Bold and decadent with notes of praline, nutmeg and white pepper.

Master Distiller & Blender Rob Dietrich wanted to release a rye that demonstrates his evolution on his path as a whiskey maker. One that has depth, but still sessionable, approachable and most importantly, enjoyable to drink. Designed for rye whiskey enthusiasts while establishing this particular rye recipe to uniquely stand apart from the rye whiskey mainstream. The name for this release is aptly dubbed RYE THE LIGHTNING™ because the playlist used in the BLACK NOISE sonic-enhancement process is Ride the Lightning. But Rob Dietrich and Metallica didn’t want to just use the original version — they wanted to amp it up a notch. They chose a playlist consisting solely of the Ride The Lightning portion of Metallica’s June 2012 Orion Music + More festival setlist — the one and only time the band has ever played the album live in its entirety, albeit in reverse track order from the original album.
