Red Stag by Jim Beam Black Cherry has a balance of soft, dark cherry aromas backed by traditional bourbon oak. The palate finishes with warm, black cherry and smooth bourbon notes.

Following the end of the American Revolutionary War, Johannes Reginald Beam emigrated from Germany to the United States, and eventually settled in Kentucky County. At the time, Kentucky County was still considered part of Virginia, and was overseen by a military governor named John J. Bowman. In order to encourage westward expansion, Virginia issued pioneers who agreed to settle in Kentucky County corn writs, which granted the pioneers 60 acres of land if they agreed to settle in Kentucky and start farming corn. After settling in Kentucky, Beam began harvesting corn and set forth a family tradition by distilling the excess grains he harvested into whiskey. Since then, seven generations of the Beam family have been involved in whiskey production for the eponymous company (the company is actually named after James Beam, who rescued it following Prohibition). Today, Fred Noe a seventh generation master distiller and the great-grandson of Colonel James B. Beam shepherds his family legacy forward. A mission-driven, social impact-driven company, Erstwhile is a boutique agave spirits importer based in Brooklyn, New York.  Our mission: advocate for small, independent, family-owned producers who lack representation outside their local communities in Mexico; and bring their craft to mezcal lovers in international markets for the first time.

We work closely with our partner producers and set them up for success.  No haggling.  No exclusivity contracts.  We guide producers through the complicated steps to export in their own names for the first time, and cover necessary expenses including local attorneys, accountants, license fees, and more.  We absorb our producers’ marketing and supply chain costs as our own. We believe in autonomy for producers, be it hiring their own workers or using their own bottling facility. We only step in if they want our help. We connect our partner producers to share knowledge and help each other in production. Revenue from every Erstwhile bottle sold creates jobs in our partner producers’ and vendors’ local communities in Mexico.  Our producers hire their own team of local men and women, on their own terms.

We add seared French Oak staves to the barrel, and then age it a bit longer only in winter, when bourbon matures more slowly. Born in December 1839, William Grant became a cattle herder at the age of 7 to supplement his family's income. As a teenager, Grant apprenticed as a cobbler and a clerk, and in 1866, he joined Mortlach Distillery as a bookkeeper. For the next two decades, Grant managed the affairs at the distillery, while secretly learning the art of distillation. In 1886, he resigned from his position as distillery manager and, together with his seven sons, two daughters, and one sporadically working stonemason, built his family distillery in Scotland. William Grant & Sons is now a behemoth that is among the largest producers of Scotch in the world and is home to several massively successful labels. Yet it is still family-owned, run by Grant's descendants, and independent. Glenfiddich, Balvenie, Girvan Grain, Tullamore, and several other distilleries operate under them. With the release of Fistful of Bourbon in 2018, William Grant & Sons entered into the world of bourbon whiskey. It's a blend of 5 straight bourbons, aged 2 years and up in new charred oak barrels, before being bottled at 90 proof. The blend was crafted by Master Blender Brian Kinsman and Kelsey McKechnie to balance sweetness and spice, and have 5 distinct flavors: A balanced sweetness, green and floral notes, spice and nutmeg, buttery toffee, and a touch of cinnamon and licorice.

At Dovetail Distillery we malt our own wheat for use in our mash bill in a hand-built cedar cabinet. We then grind the malted wheat, wheat and oats into a fine flour which is then weighed out for our small batch process. We use local water from the Sierra Nevada snow melt to cook our mash and then allow it to ferment in open containers until it is ready to distill. At Dovetail Distillery we use the tried-and-true process of double distilling in a copper pot still to produce a spirit with both a full body and flavor. White Dove is unfiltered to maintain a full flavor.

TASTING NOTES:  White Dove has a strong peppery taste up front which is followed by a buttery caramel finish that lasts on the palette for several minutes.

AROMA:  White Dove has a strong aroma of cut grass and toasted oats.

MAKER'S NOTES:  White Dove pairs well with stone fruits and anything with a floral note. White Dove can easily be substituted in place of gin due to its strong botanical flavor. White Dove is unfiltered in order to maintain a rich, full flavor and body as is the tradition of an authentic Whiskey.
