We work closely with our partner producers and set them up for success.  No haggling.  No exclusivity contracts.  We guide producers through the complicated steps to export in their own names for the first time, and cover necessary expenses including local attorneys, accountants, license fees, and more.  We absorb our producers’ marketing and supply chain costs as our own. We believe in autonomy for producers, be it hiring their own workers or using their own bottling facility. We only step in if they want our help. We connect our partner producers to share knowledge and help each other in production. It starts with fully matured Maker's Mark straight out of the barrel. But then it takes a bold twist. We add seared French Oak staves to the barrel, and then age it a bit longer only in winter, when bourbon matures more slowly. The result is a whisky with bolder, more complex flavors, but one whose every sip delivers the smooth, approachable whisky that Maker's Mark is famous for.

We treat our peppers like grapes, fermenting them to create a 100% pepper wine that is then blended into our dry rosé.

Born in December 1839, William Grant became a cattle herder at the age of 7 to supplement his family's income. As a teenager, Grant apprenticed as a cobbler and a clerk, and in 1866, he joined Mortlach Distillery as a bookkeeper. For the next two decades, Grant managed the affairs at the distillery, while secretly learning the art of distillation. In 1886, he resigned from his position as distillery manager and, together with his seven sons, two daughters, and one sporadically working stonemason, built his family distillery in Scotland. William Grant & Sons is now a behemoth that is among the largest producers of Scotch in the world and is home to several massively successful labels. Yet it is still family-owned, run by Grant's descendants, and independent. Glenfiddich, Balvenie, Girvan Grain, Tullamore, and several other distilleries operate under them. With the release of Fistful of Bourbon in 2018, William Grant & Sons entered into the world of bourbon whiskey. It's a blend of 5 straight bourbons, aged 2 years and up in new charred oak barrels, before being bottled at 90 proof. The blend was crafted by Master Blender Brian Kinsman and Kelsey McKechnie to balance sweetness and spice, and have 5 distinct flavors: A balanced sweetness, green and floral notes, spice and nutmeg, buttery toffee, and a touch of cinnamon and licorice.

At Dovetail Distillery we malt our own wheat for use in our mash bill in a hand-built cedar cabinet. We then grind the malted wheat, wheat and oats into a fine flour which is then weighed out for our small batch process. We use local water from the Sierra Nevada snow melt to cook our mash and then allow it to ferment in open containers until it is ready to distill. At Dovetail Distillery we use the tried-and-true process of double distilling in a copper pot still to produce a spirit with both a full body and flavor. White Dove is unfiltered to maintain a full flavor.

TASTING NOTES:  White Dove has a strong peppery taste up front which is followed by a buttery caramel finish that lasts on the palette for several minutes.

AROMA:  White Dove has a strong aroma of cut grass and toasted oats.

MAKER'S NOTES:  White Dove pairs well with stone fruits and anything with a floral note. White Dove can easily be substituted in place of gin due to its strong botanical flavor. White Dove is unfiltered in order to maintain a rich, full flavor and body as is the tradition of an authentic Whiskey.

Distillery Information

Bruichladdich is living proof that the traditional whisky regions of Scotland make no sense. Please dont think that labelling a whisky Islay has anything to do with taste because the truth is far more complicated and interesting. Built in 1881 when puffer-supplied coal was available as an alternative fuel to local peat, it is likely that Bruichladdich was specifically designed to produce the purest unpeated spirit possible. The great Alfred Barnard supports this view with a tantalising clue the Laddie is the only distillery on Islay that he does not describe as drying its malt using peat in his fascinating exploration of the island's distilleries in 1885.

About the Wine

With attractive aromas of black fruit and spice, this smooth, ready-to-drink Cabernet Sauvignon is made in Paso Robles with the same care as the highest quality, traditionally crafted Bordeaux-style wines. Our grapes are hand-picked and sorted by-the-berry for consistent quality and flavor. JUSTIN Cabernet Sauvignon then spends fourteen months in traditional small oak barrels to impart depth and complexity, highlighting the exceptional balance of flavors and textures that the unique climate and soils of Paso Robles add to the classic Cabernet character in this exceptional wine.

TASTING NOTES

Appearance: Bright with a deep ruby core that lightens at the rim of the glass, with moderately thick, slow forming tears.

Aroma: Aromatic with ripe black cherry, red berries and blackcurrant fruit with spice notes of vanilla and cinnamon with fresh sage, subtle dried rose petal, and toasted oak.

Palate: Nearly full-bodied with red plum, ripe bing cherry, and blackberry on entry with savory dried herbs, baking spice and toasted oak on the midpalate supported with balanced, fine tannins. The complex finish shows sustained ripe fruit and spice mixed with dried flower and camphor elements.

Madre Mezcal is created at the Garcia Morales Ranch, nestled in the rolling hills of the Oaxacan Sierra. Produced by Jose Garcia Morales and his family, this blended mezcal is a traditional Zapotec recipe. Handmade in the hills of San Dionisio, Oaxaca, the family has been cultivating agave on their land in Oaxaca for centuries, creating high quality, small-batch artisanal mezcal. Madre Mezcal is distilled from agave Espadin and agave Cuishe using a family heirloom copper pot still. These agaves are roasted in an earthen pit, before being fermented with local well-water and wild mountain yeast. Madre has a hint of sweet smoke accentuated by earthy herbal notes of sage, and minerals on the palate, followed by a lingering floral finish. Agave Cuishe (or Cuixe) is a wild agave in the Karwinskii family that includes Madre-cuishe and Barril. It grows in a cylindrical, stalk-shaped pia, with leaves spreading at the top. It's often slightly smaller than Madre-cuishe, and yields intensely flavored mezcal with high minerality and spice notes.

Celebrating 60 years of marriage between the cognac and the oak, the Prestige collection carries with it the emotion of passing time. Very large cognac whose complexity is characterized by rancio charentais (slow maturation of tannins). In the mouth, orange notes and hints of ginger dominate without excess bitterness. Its length takes us on a hot and powerful way of spice where the aromas of saffron and old leather mingle. The pleasure is velvet.
