Single Malt whisky has always been the drive and passion behind Balcones. Over the years we have been inspired by and drawn to other spirit traditions, including the classic American spirit: Rum.  After a few small batches of our Texas Rum, we refilled the same casks with select Texas Single Malt, marrying two of our favorite things together to create a unique Texas Whisky. Bottled at cask strength, this is a bold Single Malt with notes of rock candy, spice cake and toasted oak.

Tasting Notes

NOSE: caramelized sugar, cherry cola, banana bread, sassafras, pistachio, peanut brittle, apple skins, peach cobbler

TASTE: big and full-bodied with tropical fruits, molasses, sweet black tea, gingerbread

FINISH: dry and long, hints of prickly cinnamon, burnt sugar and heavy oak

Veuve Clicquot Vintage 2008 is the first Vintage to be aged in wood barrels. It intensifies the natural aromas of wines and adds some spicy notes on the palate.

As with every Vintage, this wine is a reflection of the year's weather and climate. 2008 ended wonderfully with the grapes maturing in ideal conditions. The harvests, grouped together throughout Champagne, took place between Mid-September and early October, in perfect weather. The quality of this harvest was exceptional, with great potential for aging. Naturally then, 2008 was declared a Veuve Clicquot Vintage, the third in the decade following 2002 and 2004 and the House's 65th since its first Vintage of 1810. New to this 2008 Vintage: 5% of the wines were produced and aged in wooden casks from forests in Central France, from Allier and Vosges. This was to increase the complexity and aromatic richness of our Vintages, our gourmet wines. These cask-aged wines act as the spices for the blend. They bring very lightly woody, vanilla and toasted aromas.

TASTING NOTES

The infusion of organic elderflower through a maceration process gives our classic American Dry Gin a light floral taste and heady fragrance.

Batanga, born in the heart of Tequila, is made using 100% blue Weber agave with traditional, old-world methods, that have been used for generations. Our jimadors hand-harvest the agave piñas from the agave fields, which are then cooked in traditional style masonry brick ovens, imparting nuances of cinnamon, clove and other warming spices from the delicate process of caramelizing sugars. The ‘mosto’ released is then fermented and double distilled, giving Batanga the crisp, bright finish that has won the hearts of people near and far.

Batanga Blanco offers extraordinary brilliance, clarity and a great body. It’s crisp with flavors of pineapple, guava, hints of cinnamon, clove and warming spices.

Jos. A. Magnus & Co. distillery revived Joseph Magnus Bourbon in 2015 after rediscovering a 122-year-old family heirloom. The bourbon combines 12-year-old MGP bourbon with triple-cask finishing, resulting in rich flavors like vanilla, citrus, dark chocolate, and dark stone fruits, with numerous awards to its name. The Cigar Blend Bourbon, a blend of 11 and 18-year-old whiskeys, is perfect for cigars, boasting tobacco, spice, and fruity notes from Armagnac brandy cask finishing, with Double Gold Medals at the San Francisco World Spirits Competition in 2018 and 2019.

Old Carter is the passion project of “flavor chaser” partners Mark Carter and Sherri Carter, whose beverage industry roots trace back to award-winning careers in the California wine business. After resurrecting the long-dormant bourbon brand Kentucky Owl in 2011, the two were irreversibly hooked on the art of whiskey making and blending. Kentucky Owl sold unexpectedly in 2017, but by then Sherri & Mark were so enamored with the vibrant spirit of Kentucky’s whiskey community, they made a commitment to carry on their love affair with whiskey by making a statement of their own, right in the Bluegrass. And Old Carter Whiskey Co was born.

The first whiskey distilled in Dublin in nearly 50 years from small batch, hand selected barrels featuring our founder's signature on the pack. We've matured in American Virgin Oak (25%), Bourbon (50%), & Sherry Casks (25%) and bottled at 46% with no chill filtration which completes this whiskey of true character.

Cool coastal influence abounds in this Chardonnay, brimming with fresh energy. Perfumed citrus swirls with pear, crushed almond, and an earthy, wet-stone minerality expressing the region's savory appeal. Juicy citrus on the palate gives way to complex layers of white stone fruit and herbs, while a backbone of vivid acidity carries the wine through a beautifully textured finish.

WINEMAKER NOTES

VINTAGE 
The 2021 vintage gave us beautiful wines by way of a challenge. In the second year of our most recent drought, winter brought only small, infrequent rains on the Sonoma Coast, followed by widely fluctuating early-spring temperatures. The dearth of moisture and mixed weather messages slowed canopy development, and ultimately resulted in smaller clusters. Patience and hopeful perseverance paid off, though, as mild temperatures prevailed through the end of the growing season, encouraging even, optimal ripening. Small berries resulted in lower yields, but when the grapes began hitting the crush pad—slightly earlier than usual in August—the superb quality of the small vintage was clear, in outstanding purity, complex flavors, and dense textures.

VINEYARDS 
Together, with our vineyard partners, our Sonoma Coast Chardonnay is a reflection of the unique characteristics of our estates: coastal influence, elevation, topography, and unique soils. To craft this wine, we work with vineyards from like-minded growers that reflect the energy and purity of this coastal and natural region. Some of our long-standing vineyard partners are Anderson-Ross Vineyard, Wildcat Mountain Vineyard, and Bohan Ranch, along with our Camp Meeting Ridge Estate. 

Pyrat Rum is a brand owned by owned by Patrn Spirits, and was released in 1997. The company is not a distiller, but rather a blender of spirits. Pyrat Rum was previously produced by the Anguilla Rums Company, but is now produced and bottled in Guyana South America, in the Diamond Bottling Plant owned by Demerara Distillers Ltd. (DDL). Pyrat XO Reserve, is a blend of 9 different Rums, sourced from all over the Carribean, primarily consisting of 2-year-old Demerara rum. Demerara rum is produced by DDL, which produces well over 20 million liters of rum a year. Though they have their own label, El Dorado, their rum is also commonly used in blends like Pyrat XO Reserve. The Diamond Bottling Plant -which is owned by DDL- has its own private bottling line within the plant itself. The rum in Pyrat XO Reserve is partly produced in a traditional pot still, and a portion of the blend is produced using Demerara Distillers High Ester Still, which is a John Dore Still. The oldest rum in the Pyrat Rum XO blend is 15-years-old, and all of the XO rum is aged in a combination of American Oak and French Limousine oak casks. Bottled at 40%, ABV Pyrat XO has a stout corked bottle said to resemble the type of bottles used by Caribbean rum runners, ship captains, and pirates in the 19th century. This XO Reserve has a dark amber color. It is sweet on the nose with notes of molasses, toffee, citrus, and spice. The palate is sugary, with signature bright citrus notes of orange liqueur and lemon, and tobacco. The deep flavors of Demerara rum are also present. It has a long finish with hints of ginger and cinnamon.

The story of Cane Run rum is not in the swashbuckling past, it is a story of today. A gold and silver medal winner, this premium, imported white rum is an expert blend of smooth, charcoal-filtered rums that have been aged up to five years.

Cane Run delivers a superior drinking experience with its aroma of sweet, light brown sugar. It tastes of delicate vanilla spice on the mid palate and finishes with peppery spice and mild, sweet molasses. It’s a classic rum for today's sophisticated rum drinkers.

Tickle's Dynamite Cinnamon moonshine starts off sweet and ends with some heat. This candied cinnamon flavor works as a spicy shot or a kick to any cocktail. Tickle's Cinnamon is much different than a cinnamon whiskey. Instead of a cinnamon infused, aged whiskey flavor youre going to taste a sweet, less spicy cinnamon candy profile.

Dynamite Cinnamon pairs will with: vanilla, gala apples, chocolate, ginger and peach. Pour a glass to accompany your meal when it consists of gamey meat, pork or yams.

This premium tequila was first matured in ex-bourbon oak casks, before being finished in barrels that have been seasoned with Madeira wine. This results in a rich and fruity spirit with toasted oak, caramel, and spice notes.

Saint Liberty Whiskey celebrates and honors the untold stories of pioneering, Prohibition-era bootleggers and pairs them with great craft whiskies from all over the country. Our first bootlegger is Bertie Brown who was a woman of great courage and determination. She arrived in what was then the Montana Territory in 1898 from Missouri, a young, single, African American woman determined to make it on her own. We honor Bertie with a distinctive and wonderful 4yr Texas bourbon out of Central Texas and then we perfect it in Montana by proofing it with the same pure Rocky Mountain Water Bertie would have used 100 years ago.
