In the early 1800’s, New York produced more than half the young nation’s Barley and Rye and the Hudson Valley was the country’s breadbasket. With abundant high quality grain, local craft spirits flourished and over 1000 farm distilleries produced Whiskey and Gin reflecting the unique terroir of the region. In the 1930’s, Prohibition forced these distilleries to shut their doors and this wellspring of American spirits was left dry.

Hillrock Estate Distillery is changing this. Our mission is to produce the finest hand-crafted spirits made with our own grain, floor malted, craft distilled in our copper pot still, aged in fine oak and hand bottled at our estate in the Hudson Valley Highlands. Crowned by a fine 1806 Georgian house built by a successful grain merchant and Revolutionary War Captain and meticulously restored to its original beauty, Hillrock Distillery overlooks our rolling barley fields and the distant Berkshire Mountains. Like our premier spirits, every detail refined, no expense spared, quality steeped in the tradition of 200 years of rich history.

Hillrock is proud to be one of the few “field-to-glass” whiskey producers in the world and the first USA distillery since before Prohibition to floor malt and hand craft whiskey on site from estate grown grain. Hillrock’s commitment to quality embodies the rich history of artisanal distilling in the Hudson Valley. By controlling every aspect of production from planting & harvesting heirloom grains, to smoking our malt, to crafting whiskies in our copper pot still, to aging in small oak barrels and hand bottling, we are able to create the highest quality whiskies reflecting the unique local terroir.

After aging in Hillrock's Solera and Oloroso Sherry casks, this unique American whiskey is then finished in fine Shea Vineyard Willamette Valley Pinot Noir wine casks. The multi-barrel aging of this copper/amber whiskey with slight chestnut hues offers a nose full of bright red fruit (ripe cherries, blackberry and plums) and sweet desserts (taffy, crème brûlée, creamy caramel and candied almonds). Warm vanilla and cherries, with sweet notes of toffee and French oak complimented by a bouquet of floral and fruity notes – complete the palate before leading to lingering rye spice, dried plums, allspice, nutmeg and vanilla flavors.

The Balvenie DoubleWood 17 Year Old Single Malt Scotch Whisky

Born in December 1839, William Grant became a cattle herder at the age of 7 in order to supplement his family's income. As a teenager, Grant apprenticed as a cobbler and a clerk, and in 1866, he joined Mortlach Distillery as a bookkeeper. For the next two decades, Grant managed the affairs at the distillery, while secretly learning the art of distillation. In 1886, he resigned from his position as distillery manager and bought a field beneath the towering shadows of Balvenie Castle, which he eventually converted into Balvenie Distillery. Today, Balvenie Distillery, situated in the Speyside region of Scotland, remains one of the most independent and prestigious distilleries in all of Scotland. Balvenie Single Malt Whisky is made from fresh, plump barley grown on Balvenie Mains, a 1,000 acre farm situated adjacent to the distillery (the farm has been the distillery's source for barley for over a century). After the barley is harvested, it is malted at the distillery with spring water sourced from the rolling Speyside hills that overlook the distillery. During the malting process, the barley is turned up to four times a day in order to ensure that it germinates evenly (Balvenie is the only single malt Scotch whisky distillery that continues to grow and malt its own barley). Once the barley has been malted, it is milled and mashed at the distillery before being fermented using a proprietary strain of yeast. Following fermentation, the wash is distilled twice, first through Balvenie's copper-pot wash still and then again through its copper-pot spirit still. "The most important reason for using a copper still,"explains Dennis McBain, Balvenie's coppersmith, "is that it acts as a catalyst. It removes any sulphur which may be carried over from the fermentation process prior to distillation." McBain, who joined Balvenie Distillery in 1959, is one of the oldest coppersmiths remaining in the industry. In addition, the size and shape of Balvenie's stills the stills' necks have unique boil balls that are nicknamed "Balvenie Bowls" results in Balvenie's signature bold and malty flavor profile. "The size and shape of the boil ball allow for the vapors to mix before continuing up the head,"explains McBain. "That helps make The Balvenie special." The Balvenie 17 Year Old Doublewood Single Malt Scotch Whisky was originally made in homage to David Stewart (Balvenie's Master Blender), who celebrated five decades of working at the distillery in 2012. Following distillation, The Balvenie 17 Year Old Doublewood matured in traditional, American oak casks before being double-barreled, or finished, in European oak casks that were previously used to mature sherry. As a result of spending seventeen years in oak casks, the whisky has deep notes of vanilla, green apple, and toffee. Aroma of oak, vanilla and green apple. Notes of dark fruits, raspberries, toasted almonds, coffee and butterscotch lead to a finish that is deep and lush, with notes of fruits mingled with spices. Balvenie 17 Year Old Doublewood earned a score of 95 points from The Tasting Panel Magazine, which said that the whisky had a "long, smooth toasty finish" that was "elegant."

The largest surf break off California is called Mavericks.  It was first conquered when a one-of-a-kind teenager paddled miles off shore to find the phantom giant waves of California.  Common wisdom was that California had no giant waves.   But when storm season hit,  one young man was certain that he could see giant waves breaking out on the horizon.   He grabbed his surfboard, and paddled, alone,  miles off shore, and proved that the monster waves were a reality.  He followed his vision, and discovered his dream. When Samuel Maverick, a Texas rancher, refused to brand his herd,  his cattle ran free on the range, independent, unclaimed and unbranded.   Those “Mavericks”  gave their name to a unique American archetype.   A Maverick is an independent individualist, a strong non-conformist who doesn’t follow the crowd.  When everyone else is branded with the mark of the herd, Mavericks stand alone.When we set out to create our own one-of-a-kind small batch finished whiskeys,  we just had to name them Mavericks.  Each expression is a unique California Original.  The Mavericks series is our chance share our vision of what whiskey can be.DoubleWood is our high rye bourbon shaped by exposure to two very different varieties of oak.  CALI Mavericks DoubleWood Whiskey starts out in charred new American Oak barrels, and finishes with toasted French Oak. In the small town of Kirby, Wyoming population 92 Brad Mead, a fifth-generation rancher whose family first came to Wyoming in 1890, is continuing a tradition of "firsts." While his family has produced U.S. senators, lawyers, extreme skiers and two governors of Wyoming, Brad, along with his wife Kathy and their son Sam, established the first legal distillery in Wyoming State in 2009, and has been making exceptional, handmade whisky ever since. Mead developed the recipe for his Wyoming Small Batch Bourbon Whiskey with the help of Bourbon Hall of Fame member Steve Nally, who previously spent over 30 years at Maker's Mark, and Lincoln Henderson, the founder of Angel's Envy. The mash bill itself reflects the rustic and beautiful terroir of Wyoming State all of the grains (corn, wheat and barley) are grown within 100 miles of the cutting-edge distillery. Once distilled through both a column and pot still, Wyoming Small Batch Bourbon Whiskey is aged for at least five years in charred, white oak barrels stored at one of three warehouses in Kirby. During the summer, temperatures can reach sustained levels of 130 degrees, whereas the winter frequently brings sub-zero temperatures. This extreme fluctuation results in a whisky that is more dynamic in less time aging. Wyoming Whiskey's first cask-finished whiskey uses Pedro Ximenez casks which impart a deep, complex richness, color, and sweetness to its Straight Bourbon whiskey. A wheated Straight Bourbon whiskey aged first in new charred oak for 5 years then finished in Pedro Ximenez casks and bottled at 50% ABV. Each release is crafted from no more than 5 Pedro Ximenez casks.
