The Arran Port Cask Finish Single Malt Scotch Whisky

The Arran Whisky

Founded in 1994 by Harold Currie, the Arran Distillery is one of the last remaining independent distilleries in Scotland. "The reason the distillery was built on the Isle of Arran," says James MacTaggart, Arran's master distiller, "was because there is a very good water supply here. In fact, it was tasted and it was decided that it was probably one of the best water supplies in Scotland for making whisky." When the distillery was finally completed in 1995 construction was halted for nearly a year when a pair of Golden Eagles built their nest near the distillery it became the first legal distillery on the Isle of Arran in over 150 years. Arran Single Malt Whisky is made exclusively from unpeated Scottish barley, which is malted and then fermented using a proprietary strain of yeast. Once the barley has been fermented, the wash is distilled twice first through Arran's copper-pot wash still and then again through Arran's copper-pot spirit still. The stills were custom designed, says MacTaggart, and "shaped to allow the lighter vapors to come up through the stills." As a result, Arran Single Malt Scotch Whisky has an appreciably softer and more delicate flavor profile as compared to other Scotch whiskies. Arran Single Malt Whisky Port Cask Finish was matured for approximately eight years in traditional oak casks. Following its initial beauty rest, the whisky was finished in used Port casks sourced from Portugal. Much as with Arran Sauternes Cask Finish, the whisky was closely monitored by Arran's master distiller in order to ensure that the whisky was well-balanced yet bold. The whisky has a reddish-bronze color, along with an aroma of red fruits, roasted nuts and vanilla spices. The palate is layered, with touches of fruits and spices complementing notes of cinnamon, apples and raisins, and leading to a sweet, honeyed finish.

Teeling BLACKPITTS Peated Single Malt

Inspired by the old ancient Blackpitts area just behind the new Teeling Whiskey Distillery based in Newmarket in the old Liberties area of Dublin City, this area was synonymous with many industries and in particular malting houses. Blackpitts was traditionally home to some of the largest barley malting houses in Ireland. By using smoke from peat to dry the barley during the malting process, the resulting peated malt produces a distinctive smoky taste profile which is the signature of a Peated Single Malt.

However, what makes Teeling Blackpitts so unique is the triple distillation process, which reduces some of the medicinal character you would get from a traditional Scottish Peated Single Malt and allows the more barbeque smoke characteristic to shine. This is then combined with signature Teeling innovative cask maturation using both ex-bourbon and ex-Sauternes white wine casks, which is bottled at 46% with no chill filtration to produce a truly different and unique expression of Teeling and Irish Whiskey. The inspiration for the use of these casks came from a previous bottling of Teeling 24-Year-Old Single Malt which was honoured as the “World’s Best Single Malt” in 2019 at the World Whiskies Awards

Tasting Notes

An inviting nose where barbeque smoke and cloves are intermingled with fresh notes of butterscotch and orange peel.

On the pallet a fascinating blend of Applewood smoke, honey and all spice are married with stewed pears and fresh grilled pineapple. This whiskey finishes with the return of a savoury smoke over a lingering wood undertone, which combines delightfully with notes of salted caramel.

Pike Creek 10 Year Old Rum Barrel Finish Canadian Whisky

In 1832, an Englishman named Henry Corby emigrated to Belleville, Ontario (he was only 26 years old at the time). After arriving in Canada, Corby opened up a bakery and began supplying bread and other grains to the local militia. Within a few years, Corby was shipping his excess grains to Kingston, where they were sold to other bakeries and restaurants. After purchasing a gristmill in 1855 (a gristmill grinds grains into flour), Corby began distilling his excess grains into whisky, and opened the doors to Corby Distillery in 1859. Corby Distillery initially released Pike Creek Whisky in Canada during Christmas 2012. At the time, the distillery had no intention of releasing the whisky into the United States, but after much fanfare and incredible reviews, the whisky was imported into the United States in 2013. Pike Creek Whisky is a traditional Canadian whisky, and is distilled twice through small, copper stills. After distillation, the whisky is matured in first-use bourbon barrels, which are laid to rest in a warehouse in Pike Creek (a suburb of Windsor, Ontario) for an average of seven to eight years. "In Pike Creek's non-climate controlled warehouse, the dramatic swings in temperature play a key role in the whisky's maturation process," explains Wayne Hartunian, a Corby Distillery representative. Temperatures plunge during the frigid Canadian winters, and soar during the hot summers Windsor has one of the greatest annual temperature configurables of any whisky region in the world. As a result of the dramatic changes in temperature, the wood barrels are forced to contract and expand, ultimately maximizing interaction with the whisky. "This interaction with the barrels adds character, complexity and concentrated flavors to the whisky, resulting in a one-of-a kind product distinctive to Pike Creek," says Hartunian. This rum-finished whisky is a departure from Pike Creeks signature spirit. For this 10 year expression, after the whisky has matured in used bourbon barrels, it is finished for several months in ex-rum casks. The rum barrels impart a distinctive sweetness onto the spirit.

The Black Button Team suggests using Citrus Forward in a classic Bee’s Knees cocktail; just add lemon juice and honey syrup (1:1 honey to boiling water), shake with ice and pour — perfect for porch sipping on a hot summer day.
