Tanduay has been crafting Asian rum since 1854, bringing a mysterious Eastern twist to the spirit. Headquartered in the Philippines, its origins go back to a distillery from Hagonoy, Bulacan, that was bought in 1856 by Ynchausti y Compaia, a multi-national company that was owned by the Ynchausti family, the seal of which still decorates their bottles today. By the 1900s the production had moved to the Manila distillery, and the brand Tanduay Rhum was formed, named after the area in which the distillery was located. The rum was produced in the significantly upgraded distillery in Manila until 2013, when it was decommissioned and the production moved to a much larger facility in the Philippines, capable of producing 100,000 cases each day. Since 1999 Tanduay Distillers, Inc. is owned by LT Group, Inc. In 2011, Tanduay was the 7th largest spirits brand in the world. Today their operation spans 4 plants that take care of aging, compounding, and bottling. At the heart of their lineup is an award-winning 5-year-old rum that matures in charred oak barrels. The brand has received over a hundred various awards over the years and sells over 20 million cases each year, making it one of the best-selling rum brands in the world. CURADO TEQUILA

The agave plant has existed on earth for an estimated 12 million years. Pre-Hispanic Mesoamerican cultures found many uses for the plant: the cooked Piña for food, the dried fibers for rope, clothing and paper, and – perhaps most importantly – the fermented Agave juice (Pulque as it is known in Mexico) as the first alcoholic beverage of the American continent. It is a miraculous plant, full of life, that spends long years maturing under the Mexican sun. Nourished by the earth’s minerals, the plants absorb this energy, which becomes their life essence. Mexico is home to an abundance of different spirits – Tequila, Mezcal, Raicilla, and many more. These distillates are all products created from this plant, all unique in their flavors and aromas, depending on the type of Agave that is used to make Curado, we use a blanco Tequila from the Highlands of Jalisco as a canvas, then we infuse the liquid with pieces of cooked Agave. At first the infusions only used Blue Agave from the state of Jalisco, but the project soon evolved to include other varieties of Agave from other regions of Mexico. We want to build bridges, not walls.

Curado’s current expressions are: Blue Weber from Arandas, Espadín from Oaxaca and Cupreata from Michoacán. We have taken an anthropological approach in our search for knowledge, connecting with – and learning from – people with generations of wisdom and experience.

Each variety of Agave is cooked using the technique of each respective region and then taken to Jalisco. There we infuse it in the best 100% Blue Agave Tequila from the Highlands of Jalisco region. The proportion of agave to tequila varies in each expression depending on the type of Agave received.

Curado embodies the union of three families: Estes, Camarena and Vantguard. The inspiration to create the brand originally came from two factors. The first influence came from traditional Mexican Curados, which is the name given to Pulques infused with natural flavors (Pineapple, Coconut, Coffee beans, etc.). The second part of our inspiration stemmed from observing the maceration of various spirits undertaken by bartenders across the world, using various spices, herbs and fruits. The result was Curado, the first Tequila to be infused with cooked Agave. The idea that other Agave varieties could be represented in this evolved spirit, providing variety and complexity of flavor whilst always respecting the denomination of tequila, is what set us apart.

Each animal on the different expressions of Curado represents its land of origin; all of them belong to the oneiric world of Alebrijes. Alebrijes are a modern form of art and expression from the local Mexican artist Pedro Linares, who “saw” these animals carrying him from the world of the living to the world of the dead and back. Often defined with features that belong to other creatures (wings, tails, patterns and colors), Alebrijes are impossible animals that will take you to unexpected places… so is Curado.

Parce 12 Year Old Straight Colombian Rum

According to a 2013 poll by WIN/Gallup International Association, Colombia is the happiest country on earth Parce founders (and brothers) Brian, Jim and Patrick Powers hypothesize that this has something to do with the rum. Upon travelling to Colombia, the three brothers were taken by the country's beauty, culture, and the warmth and hospitality of its people, and they wanted to share the time-honored Colombian tradition of celebrating quality rum with others. In South America, they would be drinking rum much more as a sipping rum, enjoying the complexity and character Certainly sipping rums have existed here [in the United States], but I dont think there's been much awareness of them, and we thought maybe we could get the sipping rum on the map here, too. The Powers brothers were inspired to go into business together by their father, and they found the perfect partners for their venture in another family business the father-and-son duo of master blenders from Bogota, Colombia, Arthur and Brojen Fenandes Domecq. Together, Arthur and Brojen have over 50 years combined experienced working with rum, and the Domecq family boasts nearly three centuries of history crafting traditional wine, sherry and brandy in the south of Spain (Brojen's grandfather, Jose Ignacio Domecq, was known in the industry as "La Nariz" the nose for his expertise in sniffing and blending). Parce 12 Year Old Straight Colombian Rum is crafted from sugar cane carefully selected from both local (San Cristobal) and foreign (Barbados, Trinidad) sources, all of which is harvested manually every season. Under the guidance of master blenders Arthur and Brojen Fenandes Domecq, the sugar cane is processed and then fermented with natural spring water and homegrown yeast for 36 to 48 hours. Once fermented into cane wine, the resulting spirit is distilled through a stainless steel, 4-column still each still produces a slightly different unaged spirit for use in the final aging and blending process. The spirit is then transferred to spent, charred American oak casks where it is aged for 12 years before being bottled in the lush Andean mountains of Quindo, Colombia. Parce 12 Year Old Straight Colombian Rum has an attractive aroma of creme brulee, toffee, dried tropical fruits and baking spices. The palate, which is medium-bodied and semi-sweet, leads to a long, meandering finish complete with notes of mocha, toasted nuts and pipe tobacco. Parce 12 Year Old Straight Colombian Rum earned a score of 92 points from the prestigious Beverage Testing Institute.

Situated in Seattle's Capitol Hill Neighborhood, Oola Distillery was founded by Kirby Kallas-Lewis as "a labor of love, intellectual curiosity and commitment to the neighborhood." "All our grains are sourced from two organic farms in Eastern Washington," says Kirby. In addition, the use of wheat in the bourbon's mashbill "allows me to hold back on the corn and add more rye. This results in a more complex, balanced and less overly sweet bourbon."Once the ingredients arrive at the distillery, they are milled and mashed before being distilled through Kirby's copper-pot still. Following distillation, the bourbon is matured in small, American white oak casks that are subjected to large temperature swings of up to 50-70 each day. "The idea is to extract a lot of the influence from the barrel early on in the aging process." After this initial beauty rest, the bourbon is transferred to 53-gallon, American white oak casks that boast an alligator char. The alligator char allows the whiskey to penetrate the wood, which hails from the Ozark Mountains of Arkansas, up to a inch. There, the bourbon rests for an additional three to four years. "These casks are then combined to marry together subtle flavors that compliment each other usually two barrels are married together, but sometimes 3 or 4 work best to get to the optimum flavor profile before bottling."Once the barrels have been blended, the bourbon is bottled without the use of chill filtration. "We want the full richness of the nose and flavor profile to stay as intact as possible," says Kirby. Oola Waitsburg Bourbon has a spicy aroma, with touches of cinnamon, ginger and black peppercorn that give way to notes of caramel, vanilla, olives, dill pickles and chutney on the palate. The finish is warm and balanced, with hints of honey and oak spices complementing each other. The bourbon was "highly recommended" by the Beverage Testing Institute, and has a "pleasingly long and mellow finish," according to the Capitol Hill Times. In addition, it earned the Gold Medal at the San Francisco World Spirits Competition in 2013 and the Silver Medal at the Beverage Testing Institute Competition in 2012. Pick up a bottle today!
