Our Winery Exclusive wines allow us to create small lot offerings each vintage from unique vineyards where we can highlight both the varietal and the terroir of the region. These limited release wines are available only to guests of the winery and our wine club members, and often result in just a few barrels each vintage.

Tasting Notes

The Sterling Vineyards Napa Valley Red Blend wine is a beautiful, crushed velvet red color in the glass. The pronounced nose gives bright aromas of fresh blackberry, raspberry jam and dark violet. On the palate, this medium-bodied wine is juicy, plush and soft. The wine offers complex layers of flavor with ripe currants, baked black cherry pie alongside spiced tea and sweet vanillin notes. The wine is beautifully structured with a lush texture, good body and well-integrated tannins.

Vintage

The relatively even 2016 growing season followed welcome winter rains that eased California’s ongoing drought and gave vines plenty of moisture to pull from throughout the season. With no frost during bloom nor heat spikes during the summer, harvest was received with relative ease. The ripening season enjoyed cooler than average daytime highs with plenty of sunshine so fruit had lengthy hangtime and developed very good color and flavor concentration. The region’s typical area cold nights enabled the fruit to maintain excellent acidity.

One of the world's most beloved and recognized champagnes, Yellow Label is a signature of the Veuve Clicquot House. This golden-yellow wine is immensely pleasing to the nose while its complexity explodes on the palette. The initial notes of fruit are followed by more discreet aromas of brioche and vanilla. Pairs beautifully with a variety of foods, including roast duck, smoked salmon and shrimp.

In 1895, Masataka Taketsuru the father of Japanese Whisky was born in the small town of Takehara, Japan. At the time, Masataka's family owned a sake brewery, and in preparing to carry on the family trade, Masataka studied chemistry and biology at Osaka Technical High School. After graduating high school, Masataka showed more interest in whisky than in sake and in 1918, he enrolled at the University of Glasgow in Scotland, becoming the first Japanese ever to study the art of whisky-making. While in Scotland, Masataka took chemistry courses during the day while apprenticing at distilleries at night, learning to distill and blend whisky first-hand at some of Scotland's most prestigious distilleries. In 1920, Masataka returned to Japan, and within the decade, had produced the country's first single malt whisky. In 1934, Masataka moved to the town of Yoichi and opened the doors to Nikka Whisky Co. In 1960, as the Yoichi Distillery was reaching capacity, Masataka began searching for another suitable location in Japan to open a second distillery. Following a three-year search, Masataka found a wide forest valley at the junction of the Hirosegawa and Nikkawagawa rivers. The localized humidity from the rivers and surrounding hills, together with the quality of water from Nikkawagawa River, created the perfect location for a second distillery, which he named Miyagikyo. Meticulously crafted at the Miyagikyo Distillery, Nikka Coffey Malt Whisky is a single malt made with 100% malted barley. Once the grains arrive at the distillery, they are milled and mashed before being distilled through copper-pot stills (sometimes called Coffey stills) that were imported from Scotland in 1963. As a result of their age and shape, the stills produce a whisky that is more flavorful and complex than modern column stills. Following distillation, the whisky is matured in traditional oak casks. Nikka Coffey Malt Whisky has an aroma of cinnamon, lemon and butterscotch, which gives way to an intoxicating palate filled with clove, coconut, orange marmalade and oak. The finish is soft, with hints of mint, grapefruit zest and potpourri.

Ocho Tequila, dating back to 1937, is a collaboration between Carlos Camarena and Tomas Estes. It's made traditionally from 100% agaves, with each bottle marked with the production year and specific agave field. The number "8" is significant, representing the years of agave maturation, the amount of agave per liter, and the family's eight decades in distillation. Ocho Extra Aejo, aged three years in ex-American Whiskey barrels, is bottled at 80 proof and presented in a wooden box.

DESCRIPTION: This white sparkling wine (formerly known as Almond Champagne) is naturally fermented, with just an essence of natural almond added so it's guaranteed to dazzle your guests. In the 18th century, a Swiss Mennonite farmer by the name of John Shenk settled his family near Pennsylvania's Blue Mountain Valley. After a few years of hard work and long hours, Shenk was harvesting more grains that he could sell at the local market. As a result, Shenk purchased a still and began distilling the excess grains he harvested into whiskey. His distillery, which was eventually named Michter's, became the United States first distilling company. The passage of Prohibition in 1919 forced Michter's, along with nearly every other distillery in the United States, to close. In the early 1990s, however, Joseph J. Magliocco teamed up with Richard Newman in an effort to resurrect the brand. When we set up our whiskey program for Michter's, says Magliocco, Dick and I wanted to get back to the cost be damned roots and produce the finest whiskey possible. Our goal was to show that whiskey made in the United States could be the equal of great whiskey made anywhere in the world. Michter's award-winning US1 Sour Mash Whiskey is the cornerstone of this Toasted Barrel Sour Mash Whiskey, made by taking Michter's US1 Sour Mash Whiskey and aging it for an additional period of time in a secondary bespoke barrel. This custom made barrel is assembled from 18-month air-dried wood before being toasted (not charred). Several different levels of toast were carefully evaluated for the second barrel before the Michter's production team led by Master Distiller Dan McKee and Master of Maturation Andrea Wilson decided on the final bespoke cask that would best display the elegant nuances of this special whiskey. An authentic 100% Blue Weber Agave tequila made in the Traditional Method. Produced with fully mature 7-10 year agave from 50% Highlands and 50% Lowlands of Jalisco, slow-roasted in brick ovens, slow-fermented, never diffused, roller press extraction, double distilled, Bourbon Barrel Aged 18 months, and additive free.

Tasting Notes

Aroma: Its roasted-pineapple opening aroma; more time in the glass allows a peppery almost viscus, floral perfume to develop. Nice aromas of toasted oak and vanilla bean also emerge.

Palate: palate entry shows roasted peppers, orange blossom, and tropical fruit. Then the mid-palate showcases luscious flavors of chocolate, orange, and sugar cookies.

Finish: Aftertaste is naturally sweet, sugary and long. A ton of chocolate, caramel, and dulce de leche flavors are very notable. This is the choice of the most sophisticated consumers searching for the full-body obtained from the more dominant wooden essence.

TASTING NOTES

Taste: fresh agave, stone fruit, leather and a hint of vanilla give way to dry lemon & white pepper.

Finish: long smooth finish of lightly smoked & caramelized agave, wild marigold, earthy minerality.

Color: crystal clear, platinum liquescence.

Aroma: subtly smoked agave, honey & butterscotch, gentle florality, roasted green chili and white pepper

Aviation is distilled using a proprietary maceration recipe that produces a pure medley of botanical flavor.

STEP 1: INFUSION
It all starts with our precise blend of botanicals – cardamom, coriander, French lavender, anise seed, sarsaparilla, juniper, and two kinds of orange peel. The botanicals are suspended in a neutral grain spirit for 18 hours in macerating tanks.

STEP 2: DISTILLATION
The macerate is then pumped into a still along with pure water. Steam jackets heat the macerate, the vapors go into the condenser, which cools the vapors to form the gin distillate.

STEP 3: THE CUT
In a meticulously monitored process, the first fluid leaving the still, the "heads," is removed. Collecting the "heart of the spirit" throughout the run, the distillers then determine the end of the cycle and make the final cut, "the tails." This process takes approximately 7 hours and at this point, the "heart cut" is 142 proof.

STEP 4: BLENDING & BOTTLING
The "heart cut" is transferred to a blending tank where pure water is added, bringing the gin to the desired 84 proof. It is then sent to the bottling line for filling, capping, and labeling. Aviation is then packed into boxes and ready to ship.
