STRAIGHT RYE WHISKEY FINISHED IN PORT WINE CASKS

Indiana Rye whiskey is brought to Texas where we batch it in our warehouse and finish it in old Port Wine Casks. The Texan sun influences the rate and strength of flavor imparted into the whiskey. Some casks take longer than others. The team tastes the whiskey finishing in the Port Wine Casks regularly until the optimal flavors are achieved. Casks are then batched together, tested regularly and proofed before bottling.

When Prohibition outlawed the manufacture and sale of alcoholic beverages in 1920, a few enterprising residents of Iowa chose to become outlaws rather than teetotalers. Alphonse Kerkhoff, a farmer by trade, began cooking batches of rye whiskey near his home in Templeton to supplement his income. "The Good Stuff," as Kerkhoff's rye was known, was so popular that he began tying a white horse named Babe to a polein his front yard as a signal to residents that another batch of Templeton Rye was ready. Shortly thereafter, Kerkhoff partnered with notorious bootlegger Al Capone to distribute his rye across the country. Capone bootlegged hundreds of barrels of Templeton Rye to speakeasies in New York, Chicago and as far west as San Francisco legend has it that he even had a case smuggled into his jail cell at Alcatraz. Following Prohibition, Kerkhoff continued to cook Templeton Rye for his friends and family, before eventually passing the recipe on to his son, Meryl. Today, nearly a century after it was first distilled, Templeton Rye pays homage to that recipe by Keith Kerkhoff, Alfonse's grandson. Templeton Rye is made in Indiana from a variety of winter and spring rye grains that possess specific organoleptic qualities. The rye (which comprises over 90% of the mashbill, with the remainder being malted barley) is fermented for 72-84 hours using a yeast culture that was developed specifically for whiskey production. After fermentation, the mash is double-distilled and then aged in charred, American white oak casks (sourced from a Missouri cooperage) for a minimum of four years. The whiskey is bottled in Templeton, Iowa, where Iowa's hot summers, cold winters and wet springs (monthly average temperatures range from a high of 86.2 F to a low of 6.3 F) result in more contact between the whiskey and the oak prior to bottling, helping the whiskey mature faster and giving it more complexity and flavor. Templeton Rye earned the Gold Medal at the 2009 and 2010 San Francisco World Spirits Competition and was named "Rye Whiskey of the Year"in the 2009 Whisky Bible. It also earned the title "Best of Whiskey"at the 2008 Los Angeles Wine and Spirits Competition, beating out more than 4,000 other entrants in the competition. Now that Prohibition is over, you can enjoy Templeton Rye conspicuously.

Steve Beam launched Limestone Branch Distillers, Inc. in October 2010, and coming from a long line of distillers, the distillery is truly a family affair. Located in Lebanon, Kentucky, the location was chosen for its location, just a stone's throw away from the now-long-gone distilleries of the family's past. This setting, in addition to the local grain and limestone water, is crucial to the unique and personal recipes, of limestone distillery products. The mission of Minor Case whiskey is to create a genuine and uncompromised product, using long-standing whiskey-making traditions. Minor Case Whiskey explores what might have been had the talent-fueled M. C. Beam had the opportunity to have his stills unsilenced, and his production reawakened throughout prohibition. Each bottle of Willett 6 Year Old Single Barrel Rye Whiskey is unique, as it is sourced from an individual barrel, hand-selected by the distillers themselves. Grander Panama Rum is an independent bottler founded by Dan DeHart. DeHart is from Kentucky, meaning he was raised in the way of the bourbon. Once he discovered the wonderful world of great-quality rum that could be drunk neat, everything changed. After he met the people at Las Cabras Distillery in Panama, the groundwork was set for the launch of Grander Panama Rum in 2015. The bottler now deals in bringing authentic Panama rum to the discerning drinker without the limitations and restrictions that come from larger rum producers and suppliers. The Las Cabras Distillery is located in Herrera, Panama, and led by Jose Fernandez Perez, who oversees the blending and barrel aging. The distillery grows their own sugar cane. A proprietary yeast strain and local water are used in production, along with ex-bourbon and some ex-sherry barrels are used for maturing, with others (ex-rye, ex-scotch) are used for finishing the rum. The distilling takes place in four independent columns of varying sizes. The rum is bottled without chill filtering and additional colors. The Barrel Series features limited-release rums that are finished in different casks. This expression has spent 8 months in American white oak barrels that used to hold Kentucky rye whiskey, an uncommon pairing. It's a blend of 65% 12-year-old- and 35% 15-year-old rum that is bottled at 100 proof sans chill-filtering, coloring, or sugar added. 

This exquisite rye whiskey is distilled by the Diageo-owned Orphan Barrel Whiskey Distilling Company, which is known for its unique and rare blends of whiskey.

The Scarlet Shade is a limited-edition release that is aged for 14 years in charred oak barrels, giving it a rich, deep amber color and a complex flavor profile. The nose is filled with notes of vanilla, caramel, and toffee, with hints of spice and a subtle smokiness. On the palate, the whiskey is smooth and mellow, with flavors of dark fruit, oak, and rye spice, and a touch of sweetness from the aging process.

One of the unique features of Orphan Barrel Scarlet Shade is its high rye content, which gives it a distinct spiciness and complexity that is highly sought after by whiskey aficionados. The rye grain used in the whiskey is sourced from various distilleries across North America, giving it a unique blend of flavors and aromas.

This whiskey is bottled at 90 proof, which is slightly higher than the typical proof for rye whiskey. This higher proof gives the Scarlet Shade a more robust flavor and a longer finish, making it ideal for sipping straight or mixing in a classic whiskey cocktail.

This style of whiskey is made of 100% malted rye grain, which is quite rare, even in today’s craft distilling scene. Plump, medium-full palate; finely dovetailed elegant spices; saltwater taffy, fruits, clove, and an interesting toasty - malty note.The finish is focused spice with clove and pink peppercorn. Wolves is American whiskey made in California from an equally creative group of founders, also based in California.  Wolves is distilled in Sonoma County by 13th generation Master Distiller Marko Karakasevic using an old, slow, brandy still that was imported from Cognac in 1983.

Uniquely, Wolves signature blend consists of whiskey created from refined craft beer, and Rye whiskey.  The flavor profile is unlike anything else on the market.

Wolves is launching The Hotel Series, which are whiskey collaborations with some of the world’s finest hotels. The first release, titled Table 9, is with the Peninsula Beverly Hills.  Table 9 is a variation of Wolves signature blend, with a high-pilsner content, and is named after the most sought after the table in the hotel.

The bottle will not be sold to the public and is initially available exclusively in the hotel.  Certain Wolves clients will be invited to purchase a bottle as well.  320 bottles were produced.

In celebration of the partnership, Michelin-starred chef of The Peninsula, Ralf Schlegel, prepared a private, four-course dinner experience at the hotel, with each course paired with a different Wolves expression.

It is produced by taking the US1 Kentucky Straight Rye at barrel strength and then age it for an additional period in a second custom barrel. This second barrel is assembled from 24 month air-dried wood and then toasted to the brand's specifications. The result is a unique rye whiskey.

One of our most limited production items, Michter’s 10 Year Single Barrel Kentucky Straight Rye continues the legacy of America’s first whiskey variety (rye) from America’s first whiskey company (Michter’s, originally known as Shenk’s). After a nearly three year absence from the market, Michter’s then Master Distiller Willie Pratt finally gave the green light for the re-release of Michter’s 10 Year Straight Rye in April 2014.
