The Origins of Luxury Rums

Distillery Information

Diageo's Italian operations started in 1985, when what was then Grand Metropolitan invested in Francesco Cinzano, fully acquiring the company in 1992. Seven years later, the Cinzano brand was sold and in 2002, the company assumed the name of Diageo Italy

Introducing Goslings Spirited Seas Rum, a generous gift from the wild Atlantic Ocean.. The voyage starts by filling vintage bourbon barrels with a superior blend of premium aged Bermuda rums. The barrels are loaded on to a vessel, and the rum ages for another year at sea, traveling back and forth from Bermuda to the Mid-Atlantic. The stormy seas and air have an extraordinary effect on the blend. The rum interacts with he charred American white oak over every wave, extracting all the barrel’s flavor. The result is an elegant and complex rum with an oaky, nose, hints of salted caramel and luscious spice, and a smooth finish.

Espadín

The Espadín agave, known as the genetic Mother of the Blue Weber Agave, is used to produce tequila and is also the predominant agave used in mezcal production. Unique in itself, the characteristics of this agave showcase the aromas of wet earth, a rich smokiness on the mid-palate, and a finish reminiscent of wild flowers. This variety of agave is a subspecies of the Angustifolia Family of agave.

Mexicano

The Mexicano agave thrives in the moist environment of lower elevations. This wild agave can grow quite large and is usually harvested when close to ten years of age. The concentration of sugar in the fully mature agave produces an extremely powerful mezcal. The palate is distinctively herbaceous and earthy with a long lasting finish in the mouth. Mexicano is a subspecies of the Rhodacantha Family of agave.

Tobasiche

A subspecies of the Karwinskii Family of agave, the Tobasiche is a wild agave that needs twelve to thirteen years to fully mature. This agave is typically characterized by its herbaceous and cedar-like aromatics with an earthy finish.

TASTE

The Jamón Ibérico expresses a citrus-forward nose of lime and grapefruit with a tropical aroma of banana. A viscous mouthfeel coats the palate with savory flavors, complemented by a slight floral note of hibiscus flower.

The annual return of the Blue Corn Bourbon unveils a 4-year expression, boasting a potent 60.8% ABV and a finishing touch in Washington Cabernet and California Grenache puncheons. Its vibrant rustic scent evokes images of an oiled leather sofa, antique china cabinet, and candied pecans, accented by hints of black cherry ice cream and strawberry jam on scones, culminating in the aroma of cola adorned with orange peel.
As for the taste, the palate offers a long and intricate journey. It commences with delicate whispers of gardenia amidst a tapestry of cocktail cherry richness, gradually unfolding into the warmth of spiced pear cobbler, and concluding with a crescendo of allspice, macerated berries, and the indulgence of mint chocolate.

Visually: Pristine and luminescent with generous legs and tears. Mercurial when swirled in a glass to release its bouquet.

When spotted, the Chamuco will alway vanish into the darkest places. Our slogan, “Si amanece nos vamos” means, “If dawn comes, we will leave.”Frequent sighting are reported at distilleries. What is commonly referred to as the “Angel’s Share,” where mysterious losses from barrel aging occurs, is thought to be consumption by “Chamucos,” thus the origin of our brand name.

KI NO BI SEI is made according to the same intricate production method as the original KI NO BI, using 11 botanicals distilled in six distinct flavour categories, known as the 6 Elements. The final blend has been recalibrated by our distilling team to bring out the best of each botanical at the higher strength. This bottling is at the traditional Royal Navy strength of 54.5% abv, often confused with 100 proof, or 57.1% abv.

In contrast with the original KI NO BI, which has a delicate and gentle profile, KI NO BI SEI has a thicker mouthfeel and full-bodied flavour, which works well in cocktails.

Tasting Notes

The higher proof allows the distinctive taste of KI NO BI’s flavour profile to prevail. It’s punchy at first on the palate, while retaining the cleanness and harmony of the original KI NO BI. All of the flavours are enhanced while remaining well-balanced. A perfect gin for cocktails.

That's why we use red wine barrels to mature our whisky. We source all our whisky ingredients from just a day's drive away. Then, in the wildly varied Melbourne weather, our whisky draws out its signature fruity, delicious flavor in just three short years. We call this elemental maturation and it's why we couldn't make our whisky anywhere else.

Our Melburnian founder, David Vitale, grew up in a big Italian family. He was born and raised around a food-obsessed, flavor-forward dinner table. And he knows our whisky feels right at home at those moments spent enjoying a meal with others.

The Oversized Barrel 500L, part of Buffalo Trace's Experimental Collection, revolutionizes whiskey aging by introducing an unprecedented size that transforms the maturation process, infusing the spirit with unmatched flavors and complexities. In examining the impact of barrel size on the final product, bourbon was aged in larger barrels—250L and 500L—alongside the standard 200L, all on the same aging floor and for identical durations. Surprisingly, while the 250L showcased familiar flavor notes similar to standard barrels, the 500L revealed a distinct character, rich in tannins, oakiness, and dryness. Each batch is a unique blend of our signature three bourbon mash bills and all have different custom chars & toasts – making each bottle unique and different.
