Michter's 20 Year Old Single Barrel Straight Bourbon Whiskey

In the 18th century, a Swiss Mennonite farmer named John Shenk established his family near Pennsylvania's Blue Mountain Valley. Over the years, Shenk found himself with a surplus of grains and began distilling the excess into whiskey. This distillery, eventually named Michter's Distillery, went on to become the United States' inaugural distilling company. Just two decades after its inception, General George Washington turned to Michter's Distillery Whiskey to fortify his troops during a challenging winter at Valley Forge, earning the distillery the moniker of the whiskey that warmed the American Revolution.

The advent of Prohibition in 1919 led to the closure of Michter's Distillery, along with numerous others across the United States. However, in the early 1990s, Joseph J. Magliocco and Richard Newman collaborated to resurrect the brand. Magliocco shared, "When we established our whiskey program for Michter's Distillery, Dick and I aimed to return to the 'cost be damned' origins and produce the finest whiskey possible. Our objective was to demonstrate that American whiskey could rival the best from anywhere in the world."

Michter's Distillery 20 Year Old Bourbon, masterfully crafted by distiller Willie Pratt, reflects Pratt's meticulous approach to maturation developed over his forty-year distilling career, earning him the nickname "Dr. No" for his tendency to reject aging barrels that don't meet his standards. Pratt explains that whiskey aged for over a decade faces a critical juncture, where it can either become extraordinary or unsuitable. Magliocco adds, "We reject barrels that are excessively woody or lack consistency. Willie identified a barrel that tasted delightful but had the consistency of molasses, which we obviously couldn't sell."

Michter's Distillery 20 Year Old Single Barrel Bourbon, sourced and curated by Pratt, displays a rich amber hue and releases a bouquet of coffee, vanilla beans, and smoked chips. The palate is dominated by spicy notes, complemented by hints of milk chocolate, citrus, molasses, and caramel. The medium-long finish features touches of chewy leather, smoked dates, and oak, culminating in a remarkable expression of aged bourbon craftsmanship.

Yellow Spot 12 Year Old Single Pot Still Irish Whiskey

In 1805, the Mitchell & Sons Wine Merchants Company was established in the heart of Dublin, Ireland. By the turn of the 19th century, the Mitchells sold a range of Irish whiskeys under the name "Spot." This name originated from the company's practice of marking casks of different ages with a spot of colored paint. As a result, Mitchell & Sons sold whiskies named Blue Spot, Green Spot, Red Spot and finally Yellow Spot, which was last seen in the mid-to-late 1960s. Today, Yellow Spot Single Pot Still Irish Whiskey continues to be crafted in the heart of Ireland. The whiskey is made from malted and unmalted barley, which are milled and mashed before being triple-distilled through a traditional pot still. Following distillation, the whiskey is matured for 12 years the Yellow Spot brand was always aged for this amount of time in a combination of American Bourbon casks, Spanish sherry butts and Spanish Malaga casks. The inclusion of the single pot still spirit aged in Spanish Malaga casks gives Yellow Spot its famously sweet character. After the various casks have been blended together, Yellow Spot Single Pot Still Irish Whiskey is bottled at 92 proof, just a bit higher than other traditional Irish whiskies which are bottled at 90 proof. "Pot Still Whiskeys define the traditional flavor character of Irish whiskey and we have seen a renewed interest and growth in the category over the last few years," says Brian Nation, the master distiller at Midleton Distillery, which makes Yellow Spot Whiskey. Yellow Spot Single Pot Still Irish Whiskey has an aroma of red bell peppers, nutmeg, green tea and sweet peaches from the Malaga casks. On the palate, there is a honey sweetness accented by cloves, baked apples, milk chocolate, coffee and creme brulee. The finish is dry and complex, with notes of toasted oak, red grapes and barley. Yellow Spot Single Pot Still Irish Whiskey was released in the United States in 2015 in extremely limited quantities. The whiskey was named Irish Whiskey of the Year by Whisky Advocate in 2016, in addition to winning Gold in the Wizards of Whiskey competition that same year.

To maintain an unadulterated flavor of the whiskey, Taconic never chill filters, and distill their whiskeys below 160 proof to retain the flavors from the grains. It is the flavor of the grains that are transferred through the distilling process as fatty molecules or flavor oils which results in a cloudiness in the whiskey. Those flavors are transferred through the distilling process as fatty molecules (flavor oils). Some distillers will chill filter the fatty molecules and sacrifice a certain amount of flavor for clarity. Taconic uses distinct Coopers Select, Char #3 new oak barrels made by the Independent Stave Company. Their barrels have a unique maturation process; aged in shipping containers. Less is lost to the angel's share, due to the saturation of the air inside the containers. Being exposed to great temperature fluctuations, results in greater movement of spirit in and out of the barrel staves. Aging occurs in cycles, during times of increased temperature such as in the summer, the whiskey expands through the char, through to the untreated wood beneath. While in the wood, the whiskey dissolves various flavorful compounds. When temperatures drop, the liquid contracts and brings out all of the flavors of the wood, producing flavors that complement the body of the whiskey. John Emerald Distilling Company is a family-run small batch craft distillery from Opelika, Alabama that has been operational since 2014. It is the first legal distillery that opened in the state since the end of the Prohibition era, a year short of a hundred years later. It all started when John and his son Jimmy Sharp, both homebrewers, started looking into opening a brewery. Finding the market to be oversaturated, they turned to craft distilling instead and started rigorous training and education. They came upon an old cotton warehouse in Opelika, a small and business-friendly town where the mayor welcomed them with open arms. The distillery now operates on 8 thousand square feet and has a tasting room that is open for visitors. They produce several spirits using their 350-gallon hybrid pot, each product named after one of John's and Jimmy's ancestors their (grand) father John Emerald Sharp, a successful businessman, being the distillery's namesake. The spirits include award-winning gin, vodka, rum, and single malt. At the very core of their lineup is the John Emerald Alabama Single Malt Whiskey, the only one to share the name with the distillery itself. The style is between bourbon and Scotch whisky, or as they like to call it American single malt. A part of the 100% malted barley grain recipe is smoked with peach and pecan wood, and Alabama wine barrel staves are added for a touch of smoke and added complexity. The spirit then matures in Missouri Ozark charred oak barrels in a room that simulates the changing of seasons with variable temperature.
