Oak & Eden was birthed out of an ideal for innovation. We believe authority is released when a creator creates, and we believe everyone carries the spirit of creation in them. Because of that, we pioneered a precious technique that would become the lifeblood of Oak & Eden; in-bottle finishing.

Wood; it's what makes whiskey taste like whiskey. When someone prefers a certain flavor in a whiskey, they are really saying they like the naturally occurring flavors that come from the barrel wood the whiskey was aged in.

At Oak & Eden, we follow traditional distillation and aging to the letter, aging our whiskeys for at least three years in American Oak barrels.

We break tradition in the finishing (or double barrel) process, where instead of putting our fully aged whiskey in a second barrel to add more flavor coming naturally from the wood, we place in the bottle a Spire; a spiral-cut piece of oak fashioned from the same species and treatment as barrel oak.

This allows our whiskey to "finish" or flavor naturally, producing rich, sweet flavors that could only come from the power of wood.

WHEAT & HONEY : Wheated bourbon finished with a honey soaked American Oak spire

Our Wheat & Spire begins with a remarkably smooth combination of 51% corn, 45% wheat and 4% malted barley. Once distilled, we age our bourbon in new American Oak barrels producing a rich, deep yet sweet spirit. After bottling our four grain bourbon, we place an American Oak spire in the bottle, which contains hundreds of naturally occurring botanicals, ranging from butterscotch to vanilla to toasted marshmallows. The combination produces a bold, complex, sweet, slightly spicy whiskey. After bottling our fully aged wheated bourbon, we place a honey soaked American Oak spire in the bottle. The partnership of wood and honey is toasted to the perfect degree, ultimately producing a finish that is deep and rich with subtle notes of candied fruit, vanilla and toffee.

1792 12 Year Old Kentucky Straight Bourbon Whiskey

In 1876, John D. Willett one of Kentucky's original bourbon aristocrats transferred his interest in the Willett & Frenke Distillery to his son-in-laws, Benjamin Mattingly and Thomas Moore. Mattingly and Moore continued to operate the Willett & Frenke Distillery together until 1881, when Mattingly finally sold his stake in the company to a group of investors. Within a few years, Thomas Moore acquired complete control over the distillery and eponymously renamed it. Moore would continue to operate the distillery for another five decades, until he was ultimately forced to close his doors at the onset of Prohibition. Today, the Barton 1792 Distillery operates on the same site as the historic Tom Moore Distillery, and continues to use the same methods that Moore used over a century ago when distilling his own bourbon. 1792 Small Batch Kentucky Straight Bourbon Whiskey is made from a mash of corn, rye and malted barley. While the use of corn in the bourbon's recipe adds classic notes of buttered bread, biscuits and roasted nuts, the heavy use of rye in the bourbon's mash bill yields a more complex and full-bodied whiskey. After the grains are harvested, they are mashed and fermented before being distilled through a copper-pot still. After distillation, the bourbon is aged in new, American oak casks in Warehouse Z on the distillery's estate in Bardstown, Kentucky. Warehouse Z is situated on the edge of a bluff and as a result, enjoys the intense heat and humidity that are ideal for maturing whiskey. "When it comes to barrel aging," says Ken Pierce, Barton 1792's master distiller, "it's just like real estate location, location, location. That's why 1792 ages in Warehouse Z up there on the bluff." In addition, during the maturation process, Pierce samples each cask of bourbon as it rests to determine when the bourbon has reached its peak of maturity. "Quality in, quality out," says Pierce, who has over two decades of experience at the distillery. Once the bourbon has matured for a minimum of 12 years, it is brought to proof with water drawn from the Tom Moore spring. The iron-free, Kentucky limestone water the same water used by Moore over a century ago when crafting his own whiskey adds a subtle touch of complexity and depth to the bourbon. YellowStone Limited Edition Finished in Marsala Superiore Cask 2022 Bourbon Whiskey

Yellowstone National Park was established in 1876, and just a few short years later, the Yellowstone Kentucky Straight Bourbon Whiskey brand would emerge with an equally-rich story. J.B. Dant, legendary distiller and son of J.W. Dant, first began distilling in the late 1800s, using a "log still" instead of the more popular yet more expensive copper pot stills (a log still is made by hollowing out a tree trunk and lining the interior with copper pipes, a cheaper yet still effective way of distilling). As Dant's Yellowstone brand gained popularity in Kentucky, he was able to purchase other nearby distilleries and formalize his process. In the early 1900s, it was through this expansion that Dant began working more closely with M.C. Beam of the illustrious Beam family. Together, Dant and Beam operated their network of facilities as the Yellowstone Distillery and continued to produce Yellowstone Kentucky Straight Bourbon Whiskey for "medicinal purposes" throughout Prohibition. Although the Yellowstone brand changed hands several times throughout the 20th century (first to Diageo and recently to Luxco) and eventually fell out of favor, Luxco, along with the Beam family's new Limestone Branch Distillery, has recently revitalized the brand, unearthing an old Beam family recipe and partnering with Paul and Steve Beam to create a spectacular bourbon that pays homage to the original. The annual Limited Edition series of straight bourbons from Yellowstone has been around since 2015. The blended bourbons are on the experimental side, having been aged in (sometimes re-charred, even multiple times) wine casks, resulting in unique expressions. The 2022 edition is a 7-year-old small-batch affair that was finished in French armagnac casks, imparting the bold, oaky, and sweet bourbon with toffee, butterscotch, and chocolate notes.

Rowan's Creek Kentucky Straight Bourbon Whiskey

Soon after the end of the American Revolutionary War, John Rowan's parents moved from Pennsylvania to the western frontier in Kentucky County. At the time, Kentucky was still considered to be part of Virginia, and was overseen by a military governor named John J. Bowman. Rowan was raised in Bardstown, and eventually studied law under Kentucky Attorney General George Nicolas. At the age of 26, Rowan was elected to the state's constitutional convention, and eventually served in the Kentucky State Legislature and United States Senate. In his honor, a small limestone-rich creek that eventually feeds into the Kentucky River was named Rowan's Creek. Rowan's Creek Kentucky Straight Bourbon Whiskey is the slightly-younger brother of Noah's Mill Small Batch Kentucky Bourbon Whiskey. Much like Noah's Mill, Rowan's Creek is made by marrying together small batches of bourbon that are maturing in charred, American oak casks. The bourbons each contain unique mash bills, which provides Rowan's Creek with a distinctly layered flavor profile. After the bourbons have matured for approximately twelve years, they are brought to just over 100 proof with water from Rowan's Creek, and bottled by hand (each bottle is adorned with a label that includes a handwritten batch number). Rowan's Creek Kentucky Straight Bourbon Whiskey has a spicy aroma that is balanced by hints of caramel, vanilla and dried pears. The aroma opens up to notes of cinnamon and oak on the palate, along with touches of charred wood, chili peppers, baking spices and dates. The finish, which is smooth and layered, ends with a warming touch of vanilla. The bourbon earned the Gold Medal at the San Francisco World Spirits Competition twice, and earned a score of 93 points from Wine Enthusiast. In addition, it earned a score of 92 points from Whisky Advocate.
