Situated in Seattle's Capitol Hill Neighborhood, Oola Distillery was founded by Kirby Kallas-Lewis as "a labor of love, intellectual curiosity and commitment to the neighborhood." Oola Waitsburg Single Barrel Cask Strength Bourbon is crafted from a mash of approximately 65% corn and 20%-28% rye, with the remaining balance split evenly between malted barley and white winter wheat "All our grains are sourced from two organic farms in Eastern Washington," says Kirby. In addition, the use of wheat in the bourbon's mashbill "allows me to hold back on the corn and add more rye. This results in a more complex, balanced and less overly sweet bourbon." Once the ingredients arrive at the distillery, they are milled and mashed before being distilled through Kirby's copper-pot still. Following distillation, the bourbon is matured in small, American white oak casks that are subjected to large temperature swings of up to 50-70 each day. "The idea is to extract a lot of the influence from the barrel early on in the aging process." After this initial beautyrest, the bourbon is transferred to 53-gallon, American white oak casks that boast an alligator char. The alligator char allows the whiskey to penetrate the wood, which hails from the Ozark Mountains of Arkansas, up to a inch. There, the bourbon rests for an additional three to four years. Whereas at that point, multiple casks are typically married together to create a blended bourbon whiskey, Oola Waitsburg Single Barrel Cask Strength Bourbon represents a single barrel bottling from Oola's finest stock of maturing whiskey. This particular batch no. 6, bottled at cask strength exclusively for members, produced only 216 bottles at a robust 114 proof. Doing so allows "the full richness of the nose and flavor profile to stay as intact as possible," says Kirby. Oola Waitsburg Single Barrel Cask Strength Bourbon has a spicy aroma, with touches of cinnamon, ginger and black peppercorn that give way to notes of caramel, vanilla, cherry and oak on the palate. The finish is warm and balanced, with hints of brown sugar, toffee and maple syrup complementing each other. The bourbon was "highly recommended" by the Beverage Testing Institute, and has a "pleasingly long and mellow finish," according to the Capitol Hill Times. In addition, it earned the Gold Medal at the San Francisco World Spirits Competition in 2013 and the Silver Medal at the Beverage Testing Institute Competition in 2012. Pick up a bottle today!

Our story begins in 1905 when the state of Chihuahua used to produce 472,752 liters of Sotol every year, the drink was used as a tonic, anesthetic, intoxicant and medical supply.

Sotol, as a fermented beverage has been produced by Raramuris (Chihuahua’s Natives) since 205 AD. With the Spanish arrival to the new continent, this beer-like drink was distilled to obtain the spirit of the desert.

In 1905 the state of Chihuahua produced around 475,000 liters of Sotol each year. Sotol distillate was used as a tonic, anesthetic, and intoxicant.

Founded in 1757 by Matthias McManus, Kilbeggan Distillery, Ireland's oldest active distillery, sits on the Brosna riverbanks, abundant in whiskey-making essentials: water, grains, and turf. Passed to John McManus, he managed it until his execution during a local uprising. Ownership changed hands often for two centuries. After closing in 1957, local efforts and John Teeling's Cooley Distillery helped reopen Kilbeggan in 2007. This single grain whiskey, made from 94% corn and 6% malted barley, ferments in wooden washbacks and is double-distilled in copper pot stills, preserving raw flavors. The second distillation uses Ireland's oldest pot still. Aged in former bourbon casks for a minimum of four years.

Chairman’s Reserve The Forgotten Casks is an extra-aged sipping rum crafted to mimic rum found in the original forgotten casks of Chairman’s Reserve, which were preserved from St. Lucia Distillers horrific fire on May 2, 2007. The cellar master was forced to find unusual storage space for his rum barrels during the rehabilitation of the distillery, and these casks were misplaced during this time of confusion. These “forgotten casks” resulted in rum which was too old for the original Chairman’s Reserve blend, so it was decided that this rum would be released on its own and was received with worldwide acclaim. St. Lucia Distillers continues to hold back select Chairman’s Reserve for extra aging to offer a limited release of “The Forgotten Casks."

MATURATION: The original Chairman's Reserve recipe is matured an additional three years in ex-bourbon barrels after blending, for a soft elegant blend of rum from 8-11 years old. 

TASTING NOTES

Spicy vanilla fruit, ripe apples and a rich, luxurious mouthfeel. This is the result of 18 long years and a generous proportion of first-fill sherry casks. And of the patience we take over the slowest distillation in Scotland.

TASTING NOTES

COLOUR: Medium gold with a rich glow.

NOSE: Awash with red apple, ripe melon and fresh banana. Heavenly and well rounded, it drifts into hot porridge topped with brown sugar.

PALATE: Full bodied, round and rich. At first macerated fruits, marzipan and walnuts; then warm spices, dry cocoa and lingering Seville marmalade.

Tumbling down from the Cooley Mountains comes fresh spring water, filtered through limestone, basalt and granite. The finest Irish barley, golden with promise, interplays with the water in an intricate balance of sugar and alcohol, presenting an outstanding quality whiskey.

Intricate layers of flavour interweave with one another, just as family and history weave through each of us. Apricot and butterscotch on the nose bring to mind a velvety tarte tatin, while dark cherry adds a sour tang, melting into an intimate, intense dark chocolate. Inside The Brollach’s raw oak box lies the carefully conceived accompaniments to raise the experience to its peak. Two Finn glasses allow you to raise a glass with a companion, after delivering the perfect drop of water from the anodised silver and glass pipette. The drawer opens to reveal four obsidian whiskey stones, a vial of Irish Spring water and one of The Brollach, allowing you to taste the rare Irish craft whiskey while saving the main bottle as an investment.
