2021 DESCRIPTION
Immediate aromatics escape the glass: blueberry, Mirabelle plum, ripe raspberry, Bing cherry and enchanting musk. On entry, the wine is seamless and enveloping with notes of Black plum, sweet cassis and blueberry compote on the mid-palate. Textured and long on the finish, the wine closes with a hint of dried lavender and dark chocolate.

About this product
The 2021 Apothic Red is a rich Zinfandel-led Red blend with red silky, smooth layers of black cherry, boysenberry and black pepper. Syrah and Merlot add intriguing notes of ripe blueberry and boysenberry, while a mix of other red varieties add dimension and depth with hints of spice. Soft and plush on the palate, the long finish brings vanilla and mocha characteristics, a reflection of the selective oak aging used to enhance and support the wine’s elegant appeal.

Viticulture Notes
We selected the majority of the grapes for Apothic Red from the Lodi and Central Valley areas in California. We sourced the Zinfandel from Lodi, a premium producer of intensely concentrated, silky textured fruit. California’s 2021 growing season was cool and mild, excellent conditions for developing mature, layered fruit. A heat spell in August resulted in an earlier than average harvest. Wines from this vintage showcase vibrant acidity and concentrated flavors.

Winemaking Notes
Red was our first Apothic release: a daringly bold and original blend of California-grown red grapes that created a phenomenon. Grapes for 2021 Apothic Red were de-stemmed, with a portion selected for whole-cluster fermentation. We fermented the wine for five to seven days in a combination of cone-sweep and upright tanks at a temperature averaging 85-88°F. Across all lots, we exercised meticulous temperature control to maximize the extraction of color and dark fruit notes.

Being stranded in a desert leaves a lot to be desired—how to get back home, where to find food, water and shelter, and thoughts of survival. For eight years in the early 2010s, Orin Swift Cellars was barred from making any Zinfandel wines. From the grape that started everything OSC, the ‘desert’ gave us an opportunity to explore the diverse range of California’s grape varietals. But, as soon as those eight years were up, we had a plan in place to pay homage to our home.

2021 DESCRIPTION
Evolving aromatics present themselves first with black and white pepper, then a ripe fruit core of brambly raspberry and sweet persimmon, finishing with savory notes of allspice, clove and fig leaf. Boisterous yet elegant on entry, the wine shows its plush layers with distinctive strawberry preserves, blackberry and raspberry pie topped with fresh crème. Round, ripe tannins close the palate menacingly with well-integrated acidity and enduring energy.

At our estate vineyard in Coombsville, Napa’s newest AVA, grapes are challenged throughout a long, cool growing season.
Both the newest in Napa Valley and the furthest south, Coombsville benefits from ancient volcanic soils, marine breezes coming off the nearby San Pablo Bay, as well as a long and cool growing season due to its location in the valley.

Located just east of the town of Napa, close to the bay, Coombsville is a physically cooler region. In the early days, many thought it was too cold to grow cabernet there, considering it to be primarily chardonnay country, but some visionaries planted anyway. Besides being the latest-to-ripen vines in Napa, the soil profiles are very different given it’s closer to the Vaca Mountain range, so there is a lot of eroded volcanic soil, which means, lots of minerals in the soil.

In Napa Valley you get more red fruit, more spice. The tannins can be a bit more rustic. Down in Coombsville you get more intense color, a blue-black fruit profile. A brighter acidity and minerality in the wines. Coombsville is just very unique.

In 1998 the Huneeus family found this property, fell in love with it and saw the potential. A never-planted before, former dairy farm, the Lewis Dairy, in Coombsville had many of the distinct elements that are a signature of the Huneeus estates—beautiful creeks, native trees, teeming with wildlife, an island. This red blend wine opens with jammy aromas of raspberry and plum with subtle hints of spice and the toasty aromas of oak and vanilla. The flavors are a delicious array of ripe fruit and balanced acidity with the sweet headiness of French oak. The fruit -centric finish is long and delicious and begs for the next sip.

Central to the flavor profiles created at El Pandillo is the source of water used and in the case of Terralta, it all comes from a deep well, 150 meters down in the earth. What does this mean for flavor? To answer this question, we will first have to talk about the two other water sources at the distillery for contrast.

First, there is the harvested rain water, and secondly, a fresh spring. These two sources are used in a close to 50/50 ratio for 3 of the 4 other brands made at El Pandillo - Pasote, G4, and ArteNOM. The flavors here are clean and crisp, as one would expect from rain water, backed by floral and herbal notes. Volans, the 4th brand produced at 1579 is a blend of spring and well water, and it’s here where the minerality of the earth encasing the deep well begins to come through. But in Terralta, as it’s only source for water, the soil and earth are king.

Where the other profiles are lofty and light, you’ll find Terralta firmly secured in the ground from which the agave grow. The soils of Los Altos are rich in iron, giving them a red coloring, and softness compared to the rockier soils of the Valley of Tequila.

A breathtakingly beautiful place set among centuries-old oak trees and a patchwork of meticulously planted vineyards, Oakville has become recognized as one of the world’s preeminent wine regions. Here soil and climate coalesce, allowing us to produce elegant, age-worthy and immensely enjoyable Oakville Cabernet Sauvignon. The fruit for this delicious wine comes from our Oakville Estate and carefully selected lots from our grower neighbors.

The alluring dense, dark plum color of the 2016 Oakville Cabernet is the first indication of the rich extraction in this wine. Sweet aromas of blackberry tart, ripe plums and marzipan are complemented with a savory hint of toasted coriander seed. The palate opens smoothly, building to a rich, full mouthfeel — the young tannins hinting at a restrained power. A beautifully balanced acidity dances throughout — giving an undercurrent of freshness and a counterpoint to the sweetness of the new French oak, lifting the dark fruits and bringing forward ripe red berries. The finish is layered with baking spices, wild blackberries, and a hint of dried black currant. This wine is enjoyably exuberant now but has the fruit and structure to last another 15+ years should you desire.

Sandeman Sherry Character Superior Medium Dry is a premium quality Amontillado Sherry, aged for an average of nine years in small casks where the pale wines slowly evolve into medium gold amber colours and flavours of subtle complexity develop. Later a small amount of rich Pedro Ximénez Sherry is blended in to make a dry and complex wine with a touch of sweetness.

Aromatic and complex on the nose, slightly pungent, with notes of Pedro Ximénez. Medium golden in colour with hints of red amber. Very harmonious on the palate, with an agreeable touch of sweetness at the first moment, giving way to a nutty complexity and a long clean finish

We have been producing Cabernet Sauvignon since 1978. Blending fruit from estate vineyards and top Napa Valley growers, this wine embodies the complexity of the valley, while offering a seamless balance between fruit, oak and tannins. To add nuance, the Cabernet is blended with Merlot, yielding a wine that is approachable in its youth, yet worthy of cellaring.

2020 brought another exceptional vintage to Napa Valley, resulting in wines with alluring polish and poise! The season began with a wet winter followed by a mild spring. While this led to a slightly later-than-normal start to the season, ideal summer weather with no significant heat spikes ensured ideal flavor development, yielding complex and vibrant whites, and refined reds with elegant tannins, enticing aromatics and beautiful fruit flavors.

This allowed the grapes to ripen slowly, developing pure, vibrant flavors and supple, fleshy textures. In late September, harvest was impacted by the outbreak of wildfires and the arrival of hot weather. The elevated temperatures gave many vineyards a final push to ripeness as we worked to bring in the grapes. During this period, we did extensive testing to ensure quality, excluding any fruit that did not meet our standards. While our meticulous selection process resulted in a smaller 2020 crop, the wines we produced live up to the Duckhorn name, displaying beautiful aromas, soft elegant textures, lively complexity and lush flavors.
