BIRD CREEK WHISKEY

Our story began with a thirst for adventure. We needed to capture the thrill of being out in our incredible environment and cross it with the integrity of our carefully selected ingredients. We wanted to explore what the great Northwest could offer in terms of flavor since it had so much to offer in terms of fun.

Today, we have five barleys from across the upper left, that range from rare to heritage, that include a plethora of beautiful tasting notes. The landscapes where these barleys grow are second to none. Take a trip out to the rolling vistas in the Palouse hills to visit Baronesse or head down to the sprawling valley floors on the west side of the Wallowas to see the waving fields of Francin.

Wherever our whiskey tasting takes you, it's sure to be an adventure.

Tasting Notes

Nose: A spicy, well-integrated aroma with the mouthwatering scents of tarte tatin, polished oak, and vanilla custard.

Palate: The first sip delivers a warming hug to the palate before unfolding into mellow oak spice, rich grain sweetness and cinnamon spice. Blackberry pie and peppercorns lead into a long, warming finish.

TINCUP is a robust and spicy bourbon that's blended with pure Rocky Mountain water sourced by distilling legend Jess Graber. The whiskey derives its intense flavor from a mash profile rich in rye, a deliberate choice made by Graber due to his belief that most American Whiskey was too mild. At the forefront, TINCUP presents notes of pepper, cinnamon, and orange, which gradually transition to a smoother vanilla undertone and a concise, clean finish. Graber suggests enjoying it neat or with a single ice cube, but this intricate whiskey can also be incorporated into classic cocktails with ease. Named after a historic mining town from the gold rush era nestled in the Colorado mountains, TINCUP pays tribute to the state's earliest imbibers: the miners who settled in the rugged mountains and sipped their whiskey from tin cups. The bottle's cap doubles as a twist-off metal cup, adding an extra layer of homage to the whiskey's name and its origins.

Pinhook 2023 Bourbon War 8 Year Old Whiskey is a testament to the artistry of bourbon crafting. Aged for eight years, this bourbon has reached its peak of maturity, offering a symphony of flavors and complexity.

Aged more than 3 years, the 2023 vintage of our Flagship Bourbon showcases a warm nose of butterscotch, dried apricot, and graham cracker. These transition to a palate of coffee, roasted peanuts, candied cinnamon, and crème brûlée.

TASTING NOTES

NOSE: Sweet aromas of caramel, vanilla, and charred oak from the bourbon with earthy pot still notes with some orchard fruits

TASTE: Peppery virgin oak, pot still creaminess and caramelized vanilla sweetness intertwined with herbal earthy notes of the pot still delivering an exciting burst of flavor

FINISH: Pot still spice balanced with lingering bourbon sweetness and herbal notes giving way to freshly charred oak character and subtle barley cereal notes

Distilled from a mash bill of 51% Rye and 49% Malted Barley. Big, bold, and unapologetically intense! The Malted Barley really shines through upfront, starting the flavor journey off sweet and creamy with flavor notes of caramel, cereal and what can only be describes as..well..malt. The Rye kicks off the finish with tons of cinnamon spice, big black pepper, combined with smoky flavor notes courtesy of the Malted Barley. Being cask strength only adds to the beautiful intensity of the finish.

The first batch of Beluga Noble Russian Vodka was produced in 2002. It was the first and the dearest to our hearts! This was the result of the meticulous hard work of the Mariinsk Distillery masters. The refined, rich taste of Beluga Noble Russian Vodka results from its unique composition, mainly due to the malt spirit and the purest water of the Siberian artesian wells. This helps to smoothen the taste of vodka.

These carefully selected natural components pass through a triple filtering system. Afterwards, Beluga Noble is left to «rest» for thirty days. Such method helps to neutralize the harsh smell of the spirit and to enhance the rich taste and soft flavor of Beluga Russian Noble Vodka.

Just like our Old Cockney Gin we use a proprietary blend of botanicals and an all organic wheat base.  We then rest our gin in new American oak barrels for a minimum of 6 months before we bottle.  The oak aging adds a very subtle toasted vanilla note and accentuates the citrus peel.
