Papalome Ixcateco Spirits Distilled From Agave Mezcal

Ixcateco represents the local traditions, customs and ancestral techniques that have been preserved for centuries as part of the production of this spirit. Ixcateco seeks to become a medium for the development of social and cultural projects, to promote environmental responsibility for producers and consumers, and to dignify one of the most important economic activities in the village of Santa María Ixcatlán, in the Cañada region of Oaxaca.

Ixcateco is produced and owned by Amando Alvarado Alvarez, who has been distilling agave spirits since the age of fifteen. Mainly utilizing wild Papalomé (agave potatorum), Amando is one of a dwindling number of mezcaleros who maintain the centuries-old, ancestral practices of fermenting in rawhide and distilling in clay. Ixcatec is the native ethnic group of Santa María Ixcatlán, where fewer than 10 people still speak the 1,300+ year
old language known locally as Xwja

Ixcateco mezcalero Amando Alvarado Alvarez typically harvests his maguey in the dry season. This is the time of year when greater yield is achieved because the sugar content of the agave is greater. Papalomé (agave potatorum) is traditionally the only maguey used by in
Ixcatlan to make agave spirit, although there are many other maguey species around including rabo de leon, cimarrón, maguey blanco, and pulquero. These are used for construction, textiles, and pulque. The agave's fructans are transformed into fermentable sugar by slowly cooking the heart of the maguey in an underground oven covered by palm leaves for three nights. The roasted agave is then milled into smaller pieces first with a machete, then by pounding those pieces with large wooden mallets. The milled agave is placed into rawhide vessels with spring water where natural fermentation takes place. Distillation takes place on clay pots made in nearby
Oaxaca City. The spirit is distilled twice over direct fire and adjusted to proof with colas, or tails.

For our second Single Barrel release, we have hand-selected casks from an extremely limited number of Boxergrail Kentucky Straight Rye Whiskey barrels. Each is a study in patience and creativity. To complement this one-of-a-kind whiskey, the packaging for each season of barrel releases will be unique and feature a different series of six original Limited Edition illustrations commissioned by our Founder, Kaveh Zamanian. The result is a true work of art inside and out that could only be bottled at cask strength.

Artist Series Labels

Six different label designs featuring artwork commissioned by our Founder, Kaveh Zamanian, from renown artist Sue Todd. Each 6-bottle case will contain a bottle with each label design.

Cask Strength

Boxergrail Kentucky Straight Rye Whiskey with a sour mash rye mash bill bottled at full cask strength. Proof will vary by bottle - but will generally fall between 100 and 125.

Limited Edition

Approximately only 150-200 bottles produced at 750mL. Yield will vary by barrel.

The Barrel

Aged in #3, wood-fired, toasted & charred new American Oak barrels for 4+ years.

Sue Todd

The bottles from all 10 barrels of Rabbit Hole’s Boxergrail Single Barrel release will feature the illustrations of the award-winning scratchboard illustrator Sue Todd. Kaveh commissioned Sue to create linocut prints of the classic Lewis Carroll characters and the result is six, vibrant illustrations featuring Alice, The White Rabbit, The Hatter, The Queen, The Catepillar and The Footman. Each six-bottle case will contain a bottle with each label design and features special glass and cork sourced exclusively for the Single Barrel program.

The Mexican Día de los Muertos – Day of the Dead – is a unique celebration of life and death, of eternal friendship, and the memory of those who have been lost. For several days, Mexico is transformed into an explosion of color and light: bright orange flowers, colorful decoration, candlelight... and the streets are full of ‘Catrinas’ – people dressed up as skeletons, with artfully painted faces in the style of the elegant skull ‘Calavera Catrina’.

Padre Azul wants to pay tribute to this wonderful tradition: From now on, we will honor the Day of the Dead with a limited special edition. We proudly present: the Día de los Muertos Limited Edition 2021.

The Limited Edition 2021 definitely lives up to the Día de los Muertos: Tequila Añejo at its finest, 100% blue agave, matured for 18 months in hand-selected oak barrels, coming in a unique bottle designed by the Mexican artist José Parra. This limited special edition is a feast – for the eyes and the palate.

The artist: José Parra

The Mexican José Parra was born into a family of artists. That’s how he discovered his love for art and his own talent already at a young age. He immersed himself in the world of art at the Art Students League of New York, studied at the School of Arts at the University of Guadalajara, joined the atelier of Carlos Vargas Pons and the Studio Gallery Parrech, and also learned about the art of marketing at the ITESO University in Guadalajara. The work of José Parra has been published in various books in Mexico, the US, and Europe.

His paintings have been exhibited in Canada, the US, Germany, France, Italy, Denmark, the Netherlands, Poland, Colombia and South Korea. Since 2014 he has organized the exhibition ‘Lotería Mexicana’ together with the French group ’Libellule’ and the Black Coffee Foundation. He is also involved the projects “El Mural del Milenio” and “El Arte del Vino” of MILENIO Arte, and he is the creator of a striking portrait of Fernando del Paso, painted for the National College in Mexico City.

The artwork ‘Catrina de Velas’ from José Parra shows the Day of the Dead’s most ubiquitous symbol: the famous Calavera Catrina, a traditional Mexican character based on the artwork of José Guadalupe Posada from the early 20th century. On the Day of the Dead, people in Mexico paint their faces to resemble this iconic skull.

But José Parra’s Catrina holds a secret: Is she really one of the many who celebrate the Day of the Dead dressed up as Catrina? Or could it be the real Catrina hiding behind the elegant costume, looking at the list of those who will be her guests on the Day of the Dead, in the flickering light of the candles, each candle representing the life of one guest? The answer is only known by José Parra, born in Guadalajara and artist behind this mesmerizing artwork.

 Erstwhile Madre Cuishe (2021 Ancestral Limited Edition)

Distilled in clay pots and quiote.  A legacy of the era when Mezcal production was illegal in Oaxaca, this extraordinary batch of Madrecuishe crafted by Silverio García Luis – a 2021 Ancestral Limited Release – rescues a García family tradition that had been lost for about 50 years.  In the 1960's and 1970's, mezcal production was illegal in Oaxaca and other parts of Mexico.  Don Lencho, Silverio's father, used a hollowed out quiote (the flowering stalk of agave plants) instead of a copper tube, to evade the military that would come and seize his distillation equipment by force.  The García family went back to using copper stills around 1980, as prohibition came to a gradual end in Oaxaca.  Now you too can partake in this unique distillation method and family tradition from the García family in Rancho Blanco Güilá, Oaxaca, available for the first time in the United States in partnership with Erstwhile Mezcal.

Must-have for any serious mezcal collector. This Bacon Pechuga Mezcal is an all-women collaboration and 2021 Limited Release between Erstwhile Mezcal and the Hernández Women Mezcaleras from Santiago Matatlán, Oaxaca.  Only 300 liters made.  Ripe mango, guava, pineapple, and bacon locally sourced in Oaxaca are the star ingredients.  Three distillations total.  Bacon is slow-steamed in the still for the last two distillations, giving an amazing creamy and smooth texture to each sip.⁠
