Nestled amongst the rolling hills of the Cotswolds countryside, the Cotswolds Distillery was born from a dream to produce delicious spirits in one of the most beautiful regions in the world.

From hedgefunds to HEDGEROWS
It all started back in 2014, when our founder Dan, a native New Yorker and whisky connoisseur, had moved to the Cotswolds after working in finance in London for many years. Seeking to leave behind that world and spend more time in the picturesque countryside of the Cotswolds with his family, it eventually dawned on him that he could combine his love of whisky with his desire to start a new business. A dedicated whisky fan, Dan saw the fields of golden barley around his house in the Cotswolds and had a brainwave ‘I suddenly thought, there’s barley all over the Cotswolds and nobody’s distilling it, let’s be the first!’ Having found a derelict site near his house, he set about building a distillery and a team to run it, and the doors of the Cotswolds Distillery opened in July 2014.

Launching our WHISKY
After three years of eager anticipation, in October 2017 we released our Cotswolds Signature Single Malt Whisky, the first whisky ever to be distilled in the Cotswolds and the one which remains at the heart of our DNA. In the years since its launch, we have expanded our range of single malt whiskies to include our Cask Collection comprising four unique cask expressions, a yearly limited edition Hearts & Crafts series drawing inspiration from the Arts & Crafts movement, and hand-picked single cask releases.

Our Sherry Cask Single Malt Whisky is a marriage of carefully selected and blended sherry casks and features in our Cask Expressions Collection. Each yearly batch is unique, drawn from the finest American and Spanish oak hogsheads and butts, some of which have been seasoned with dry Oloroso sherry and others with sweet Pedro Ximénez. All have been sherry-aged through their full maturation for a deeper and more flavourful whisky. Full of dried fruits, chocolate and a touch of spice.

The first whisky ever made in the Cotswolds, our award-winning Cotswolds Signature Single Malt Whisky is crafted using the finest locally grown, traditionally floor-malted Cotswold barley. Belonging to our Classics Collection, our Signature Single Malt favors the rich and bold, fruity notes which result from maturation in our highly active STR (Shaved, Toasted and Re-charred) ex-red wine barriques. Blended with whisky matured in premium first-fill ex-Bourbon barrels, this single malt has notes of honey, red fruits and a hint of treacle.

CAREFULLY SOURCED INGREDIENTS

Malt: 100% locally grown, traditionally floor malted barley from the Cotswolds.

Yeast: Two complementary varieties - Anchor and Fermentis - to ensure good yields and excellent fruity flavors.

Water: Village water supply - filtered, softened and demineralized before use.

Wood: STR (Shaved, Toasted and Re-charred) American oak ex-red wine casks and premium first-fill ex-Bourbon barrels.

TASTING NOTES

Nose: Honey and butterscotch layered with light fruits (peaches & apricots) and a hint of marzipan.

Palate: Strong notes of tannin-rich malt, oils and dark sugar with lots of spice, caramelized Seville orange marmalade.

Finish: Long and resinous, with dark red fruits and a hint of treacle.

SERVING SUGGESTIONS

Best enjoyed on it’s own, but we don’t believe in rules when it comes to drinking whisky – sip this neat, over ice, in a cocktail – however you like!

St. George Single Malt Baller Whiskey

Founded in 1982 by German-born Jrg Rupf, St. George Spirits is one of the oldest craft distilleries in the United States. The distillery, housed in an old World War II airplane hangar on a former naval base on the edge of San Francisco, is home to Lance Winters, mad scientist and St. George's master distiller. Winters, who is widely-known for experimenting with different types of spirits, has a laboratory dominated by a 10-liter test still in addition to the glass beakers and graduated cylinders that cover every inch of counterspace. Next to the dusty chalkboards caked with equations for the conversion of sugar to alcohol and intricate diagrams of molecular structures are bottles of experimental whiskeys, vodkas and even an aging balsamic vinegar (it's 14 years old already). According to St. George Master Distiller Lance Winters, St. George Single Malt Baller Whiskey is a California take on the Japanese spin on Scotch whisky. It is crafted from 100% American barley, mostly made of two-row pale malted barley, the remainder lightly roasted. The whiskey is filtered through maple charcoal and matured for 34 years in ex-bourbon and French oak wine casks, before being finished in umeshu barrels, a Japanese style of plum liqueur crafted from 100% California-grown ume fruit. The distinctive label, which re-imagines the legend of St. George as a samurai was designed by Oakland artist Sylvia Solochek Walters, and calligraphy by Eri Takase of Takase Studios.

Nikka Yoichi Single Malt Whisky

In 1895, Masataka Taketsuru the father of Japanese Whisky was born in the small town of Takehara, Japan. At the time, Masataka's family owned a sake brewery, and in preparing to carry on the family trade, Masataka studied chemistry and biology at Osaka Technical High School. Upon matriculation, however, Masataka showed more interest in whisky than in sake and in 1918, enrolled at the University of Glasgow, becoming the first Japanese ever to study the art of whisky-making. While in Scotland, Masataka took chemistry courses during the day while apprenticing with distilleries at night, learning to distill and blend whisky first-hand at some of Scotland's most prestigious distilleries. In 1920, Masataka returned to Japan, and within the decade, had produced the country's first single malt whisky. Deeming the terroir perfect for whisky production, Masataka moved to the town of Yoichi in 1934 and opened the doors to Nikka Whisky Co. Yoichi is encapsulated by mountains (to the east, south and west) and by the Sea of Japan (to the north), creating a unique and isolated environment for whisky-production. The clean air, humidity and access to underground water filtered through a layer of peat results in a rich and masculine malt. Years later, Masataka established the Miyagikyo Distillery, which is also situated in northern Japan. Surrounded by mountains and two rivers, the Miyagikyo Distillery produces a more mild and feminine whisky as compared to Yoichi. This Yoichi single malt is full of pleasant peaty notes and smokiness, resulting from the traditional direct coal-fired distillation. The whisky also has subtle briny notes imparted onto the spirit by the sea breeze during the aging process.

According to Indian mythology, when Gods and Rakshasas, or demons, churned the oceans inside Mount Meru (a mythical mountain thought to be the center of physical, metaphysical and spiritual worlds), a golden pot containing the nectar of life sprang out of the mountain. The nectar was called "Amrut," which literally translates into "immortality." Amrut Distillery traces its history back to 1948 when, just one year after India declared its independence from Great Britain, Radhakrishna Jagdale began manufacturing rum and brandy, which he supplied to army canteens throughout India. After his death in 1976, the mantle was passed to his son, Neelakanta Rao Jagdale. When the younger Jagdale became Chairman of Amrut Distillery, he began experimenting with more innovative whiskies. Amrut Peated Single Malt Whisky is made from Indian barley grown at the foothills of the Himalayan mountains in a region known as Punjab (Punjab means "the land of five rivers), and peated malt sourced from Scotland. The Himalayan mountain water, along with the cold winters and fiery summers, result in a unique type of barley that is rich in nutrients and flavor. After local Indian farmers harvest the barley, it is carefully mashed and distilled in small batches to preserve the natural aroma of the Indian terroir. The whisky is then aged at an altitude of 3,000 feet above sea level in oak barrels that are laid to rest for a minimum of 4 years. During maturation, the incredibly intense Indian sun causes the whisky and oak to mingle often. In addition, the heat also leads to much greater rates of evaporation approximately 12% of maturing whisky evaporates each year in India (this is referred to as the angel's share), compared to just 2% in Scotland. As a result of the intense temperatures and humidity, whisky ages nearly three times faster in India as compared to Scotland. Pick up your bottle today!

But just because the British Parliament gerrymandered the official boundaries doesnt mean whiskey-lovers have to pay any attention. Macallan single malts are famous for their classic Speyside style and the heavily sherried influence of their core rage. The Macallan has been creating single malt whisky for so long at such a high volume and such a high level that they have what sports teams call a very deep bench. Their incredible inventory of rare, aging single malt gives them the ability to pinpoint flavors and special editions for the refined whisky palate that satisfy a huge, global following. Their achievements are numerous, including setting the record price ever paid at auction for a single bottle of scotch at auction this year. At the higher end of the Macallan line is the Masters Decanter Series, of which there are four The Macallan Reflexion, The Macallan no.6, The Macallan M, and The Macallan M Black. Each is special in craftsmanship and in the unique, artistic decanters crafted of fine French crystal by the famous House of Lalique. Macallan M Black takes this superior level of presentation a bit further in that not only is this a gently peated dram almost unheard of at Macallan but the decanter is cut from black crystal. So here we have a combination that will likely be one of the most collectible single malt whiskies of the year.

Our waste goes to a local farmer. We are a tourist attraction for the area and we pay a ton of taxes. This business is what small business in America is all about. Embedded in the rolling Appalachian hills of Greenbrier County, West Virginia, Smooth Ambler Spirits is a testament to the craftsmanship and hard-work of Little and his co-founder, TAG Galyean. At their 5,200 square-foot distillery, Little and Galyean combine traditional distillation techniques with state-of-the-art equipment to produce remarkable spirits that are bold, complex and perfectly balanced. Very Old Scout is steeped in the tradition of the Highland Valley. Little sourced some of the last mature stocks of bourbon from Lawrenceburg Distillers Indiana and has been secretly blending them in a special cuve. The result Very Old Scout 11-Year-Old Straight Bourbon Whiskey is a marriage of an eleven year, twelve year and thirteen-year-old bourbon. After blending the different bourbons together, Little brings them to proof using pure mountain water from West Virginia before bottling the bourbon without chill or carbon filtration. This select, 13YO Old Scout Single Barrel is a single barrel release distilled from 84% corn, 8% rye, 8% malt. A low-rye bourbon mash bill from TN. Using a continuous column distillation process. Each bottling of Old Scout Single Barrel Select is unique in age and proof, with a 13-year minimum. It's 95.2 proof (47.6% ABV) but may vary.

Part of our Cask Expressions Collection, our Cask Strength Founder's Choice Single Malt Whisky is aged exclusively in our founder Dan's favorite casks: STR (Shaved, Toasted and Re-charred) ex-red wine barriques. These highly active casks were created by our mentor and renowned whisky consultant, the late Dr. Jim Swan, and give a rich and intense maturation to our fruity new make spirit, offering strong notes of toffee, chocolate and red fruits, as well as a beautiful, deep color.

John Emerald Distilling Company is a family-run small batch craft distillery from Opelika, Alabama that has been operational since 2014. It is the first legal distillery that opened in the state since the end of the Prohibition era, a year short of a hundred years later. It all started when John and his son Jimmy Sharp, both homebrewers, started looking into opening a brewery. Finding the market to be oversaturated, they turned to craft distilling instead and started rigorous training and education. They came upon an old cotton warehouse in Opelika, a small and business-friendly town where the mayor welcomed them with open arms. The distillery now operates on 8 thousand square feet and has a tasting room that is open for visitors. They produce several spirits using their 350-gallon hybrid pot, each product named after one of John's and Jimmy's ancestors their (grand) father John Emerald Sharp, a successful businessman, being the distillery's namesake. The spirits include award-winning gin, vodka, rum, and single malt. At the very core of their lineup is the John Emerald Alabama Single Malt Whiskey, the only one to share the name with the distillery itself. The style is between bourbon and Scotch whisky, or as they like to call it American single malt. A part of the 100% malted barley grain recipe is smoked with peach and pecan wood, and Alabama wine barrel staves are added for a touch of smoke and added complexity. The spirit then matures in Missouri Ozark charred oak barrels in a room that simulates the changing of seasons with variable temperature.

Sullivans Cove Old & Rare American Oak 17 Year Old Single Cask

Situated along the banks of the River Derwent on the island of Tasmania, Sullivans Cove was the site of one of Britain's first penal colonies in Australia. In 1804, at the order of the Governor King of the British settlement of New South Wales, Lt. John Bowen transported some of the most heinous British criminals to Sullivans Cove, which eventually developed into the city of Hobart. Hobart was the perfect penal colony the area's dense forests required a huge labor force in order to establish a settlement, and its isolation and inaccessibility ensured there was no escape. Today, the island of Tasmania remains one of the most isolated and natural places on earth approximately 37% of the island is protected as natural reserves. Sullivans Cove Single Malt Tasmanian Whisky is made from barley grown exclusively on the island of Tasmania. "The island's deep red basalt soil, pure water and mild temperatures result in a barley that is perfect for distillation," says Patrick Maguire, the distillery's founder and master distiller (his ancestors were convicts that were imprisoned on the island). In addition, the island has one of the oldest and strictest quarantine programs in the world, ensuring that the barley remains untainted. Once the barley has been harvested, it is malted at the Cascade Brewery by Roger Ibbott, who has over four decades of experience malting barley. The malted barley is then mashed and fermented at Sullivans Cove Distillery using a unique strain of yeast developed specifically for the production of Sullivans Cove Whisky. Then, the wash is distilled twice through a handmade copper-pot still. "The real trick is to cut the run short, so that only the sweetest, best flavors and purest alcohol from the heart of the run is captured", says Macguire. "It's not the most sensible approach by an accountant's standards, but then it's a good thing that we are not accountants!" The Old & Rare series holds their most precious whiskies. While they normally age their spirits between 10 and 12 years, some casks with exceptional qualities are singled out during maturation. These qualities make them suitable for longer aging periods, benefiting from the extended process. These Single Cask bottlings contain the oldest and rarest Australian whiskies. This particular expression has spent 17 years in its ex-bourbon American oak cask, before being bottled at 95 proof and labeled by hand. The bottle is presented in a unique wood box with a letter of authenticity that's signed by head distiller Patrick Maguire and production manager Heather Tillott.
