Pascal Jolivet Sancerre Le Chene Marchand Sancerre France Wine
Municipality of Bué, we operate 1.84 hectares out of the 26 hectares of this plot. Higher up and facing south, “Le Chêne Marchand” is more “solar” than the other plots. Aging on fine lees for 5 months in temperature-controlled stainless steel vats, this historic “cru” of the appellation has a generous and gourmet profile. Its soil, limestone brings a great minerality, freshness and salinity.
Grape variety: Sauvignon Blanc grape variety (9534 bottles, 252 magnums, 40 jeroboams).
Terroir: Commune of Bué, the house has 1.83 hectares out of the 26 hectares of this plot selection. Limestone terroir, old vines.
Winemaking
Manual harvest of 40-year-old vines, southern slopes. Each grape is sorted upon receipt of the harvest, we work by gravity in order to respect the natural circuit of winemaking. We do a light press and only keep the drop and core juices from the press. Natural vinification in thermoregulated stainless steel vats with aging on fine lees for 8 months.
Character: Wine with a lot of complexity, dry, fruity, nice salinity.
Agreements: Wild sea bass, ceviche and raw fish.
