Proof and Wood The Cabinet Barrel Proof Straight Whiskey
Proof & Wood Ventures has unveiled The Cabinet, a limited-edition whiskey that highlights its finest ryes and bourbons. Part of the award-winning DC Collection, it features The Senator, named Best American Rye at the 2022 World Whiskies Awards, and The Representative, recognized as the World’s Best Bourbon in 2023.
Originally launched in 2022 in Washington, D.C., the 2023 edition will be available nationwide but limited to around 600 six-bottle cases.
The blend includes whiskies aged five to nine years, distilled in Indiana, and features:
> 2014 Rye: 95% Rye, 5% Barley
> 2015 Rye: 95% Rye, 5% Barley
> 2016 Rye: 95% Rye, 5% Barley
> 2017 Rye: 95% Rye, 5% Barley
> 2016 Bourbon: 99% Corn, 1% Barley
> 2017 Bourbon: 75% Corn, 21% Rye, 4% Barley
Dave Schmier, founder of Proof & Wood, describes The Cabinet as showcasing intense rye flavors with spices and floral notes, balanced by dried fruits, nutmeg, and mint, complemented by bourbon sweetness from vanilla and tobacco. He notes that it pairs well with a cigar and thoughtful moments.
