Samaroli Evolution Pure Malt Scotch Whisky

Born in Bologna, Italy, just over 70 years ago, Silvano Samaroli has been hand-selecting and bottling the world's finest whiskies since 1968. When he began his career, Samaroli was the only non-British independent bottler in the world. Today, bottlers such as Compass Box Whisky Co. and Gordon & MacPhail have joined Samaroli in blending casks to produce a whisky greater than the sum of its parts. Samaroli Evolution Scotch Whisky is a vatting of single malt scotch whiskies that have matured for up to forty years, either in casks that were previously used to mature bourbon or in casks that were previously used to mature sherry. Each cask of whisky, which originated from some of Scotland's most prestigious distilleries, was hand-selected by Samaroli based on his four decades of experience in the Scotch whisky industry. The blend includes: 1957 Mortlach; 1959, 1962, 1965, 1979 and 1985 Springbank; 1964 Bruichladdich; 1967 and 1970 Laphroaig; 1968 and 1971 Glenlivet; 1971 Glen Garioch; 1973, 1974 and 1987 Longrow; 1974 and 1976 Ardbeg; 1975 Glen Garioch; 1977 Ardmore; 1977 Caol Ila, 1978 Talisker; 1979 Glen Grant; 1980 and 1984 Highland Park, 1981 Port Ellen; 1988 Lagavulin; and 1989 Bowmore. Once the casks were selected, they were blended together and subsequently re-blended every two to three months during maturation. This unique blending process, which was abandoned long ago by most companies in the industry, ensures that the various casks of maturing whisky are able to harmonize with each other. Once the various casks of whisky had matured together, Evolution 2011 was bottled without the use of any artificial coloring or chill filtration (chill filtration removes the cloudiness that is natural to whisky, but also removes the fatty acids and esters which contribute to the whisky's overall flavor and complexity). As a result, the whisky has an aroma of spices, stewed fruits and caramel apples. The aroma gives way to notes of honeyed oak, figs, nougat and rich caramel on the palate.
