The Burning Chair Bourbon Whiskey
Dave Phinney, a renowned Napa Valley winemaker known for creating The Prisoner label and selling his wine assets for over $300 million, has ventured into the spirits world with his brand, Savage & Cooke. One of his latest releases is The Burning Chair Bourbon, a 4-year bourbon finished in Napa Valley red wine barrels. Despite its simple bottle design, the bourbon offers an intriguing experience.
Tasting Notes
On the nose, it opens with big, sweet red fruits like apple and raspberry jam, alongside floral notes of pink flowers and rosewater. There’s a clear red wine influence, complemented by hints of praline, simple syrup, wood shavings, and burnt toast.
The palate is soft and sweet, featuring flavors of milk chocolate, hazelnut, and baked apple. The texture is delicate yet chewy, with the wine finish present but not overpowering. A subtle dry wood note is elegantly executed, adding depth to the flavor profile.
The finish is spicier and more complex, with bold oak and sugared berries accompanied by allspice and burnt toffee. It has a medium length, building heat as it lingers, creating a satisfying and well-rounded conclusion to the tasting experience.
