The Sloe
Pacharán is traditionally made by macerating sloes in anise. The sloe, known as arañón in Navarre, is the fruit of the Prunus spinosa bush, which we commonly call blackthorn. It belongs to the plum family but is much smaller in size, smaller than cherries. It is bluish black in colour and has an acidic and astringent flavour.
Its lack of sweetness is surprising, which is why it has never been consumed as a fruit.
Tasting Notes
Pacharán Navarro is made by macerating sloes in aniseed and, therefore, in the glass of Pacharán Zoco we will find the characteristics of its two ingredients perfectly integrated. We pour the glass of Pacharán Zoco and at first sight it presents itself with that red colour so closely linked to Navarra. A medium-intensity red, with a cherry hue that will evolve to brick tones as the pacharán acquires maturity. When we swirl it in the glass we perceive the density provided by the anise in the thick tears that form in the glass. The aroma of Pacharán Zoco is softly fruity on an aniseed background.
