After numerous releases of our Triple Cask Alter Ego Bourbon, Jesse Parker, Doc's blender, started to notice a late-night trend as we sampled the base bourbon. After witnessing copious nights in the warehouse with glasses that refused to be set down, it became apparent that the Blenders Cut needs to be shared! Aged 5 years, we offer this to you at a whopping 115 proof, from the cask. Enjoy straight from the bottle or add a little water to bring out some more flavors.

TASTING NOTES: apricots, brown sugar, peanuts, toasted almond, charred oak, dark chocolate, and cream 

HOW TO DRINK: Spectacular neat, but we also find that it goes well with ice or in a classic cocktail such as an old-fashioned, Manhattan, or your favorite bourbon cocktail.

Maker Notes

This limited bottling of rum we blend and age in house, designed specifcally to infuence the barrels used in our Solera system. Our ex-bourbon casks are filled with this rum to impart its characteristics into the oak then emptied out. The now rum soaked barrels are used in producing our awarded Doc Swinson’s Alter Ego Solera Method Rye Whiskey. When explaining how we make our own blend of rums for the solera system we kept getting asked; “but where does the rum go?” So here it is! A limited offering for 2022.

Sensory Notes: A unique rum with expressive notes of citrus and holiday spice cake, silky with a punch straight or bold enough for a solid rum drink

Nose: Pineapple, apricot, whipped honey butter, tropical fruits and toasted oak

Taste: Pineapple rinds, apricots, caramel, cedar, palm sugar

Pineau des Charentes is a truly unique French aperitif, produced from a blend of fresh grape juice and young cognac, which is then aged in French oak barrels for several years. We let Doc Swinson’s blend of two five-year bourbon whiskeys rest in these barrels bringing hints of apricot, sultanas, and wildflower honey to the already delicious caramel and stone fruit notes of the bourbon.

TASTING NOTES

Nose: Honey drizzled over warm roasted nuts leaning towards a sauternes wine

Taste: Honey crisp apple with fig jam and toasted rye bread warms to a bold flavor of French oak and baking spices.

Finish: Vanilla ice cream drizzled in maple and pie crust with a bold oakiness

INSPIRED BY THE OLD-WORLD TECHNIQUES OF SCOTTISH AND IRISH WHISK(E)Y DISTILLERS WHERE MUCH OF THE MAGIC LIES WITH THE ART OF BLENDING. 
We borrowed and twisted many of these techniques to produce Doc’s Alter Ego Bourbon. Our goal was to take good whiskies, blend them together and see how we could enhance these blends as well as maintain the flavor of the whiskey itself. After years of finishing whiskies in a variety of casks, we believe we have struck success using Olorosso Sherry, Pedro Ximenez Sherry, and Cognac casks from a number of curated producers. 

Whether accentuating or layering in characteristics, we believe these techniques enhance the spirit and still focuses on the bourbon. These casks allow the delicate characteristics of past occupants to mingle and marry with the smooth yet bold aspects of Doc’s Straight Bourbons. Each release is then meticulously blended and married in ex-Cognac Foeders prior to bottling. Our finishing and blending techniques impart a dry nuttiness, subtle sweetness, and an extended finish to an already great whiskey, while still allowing the bourbon to shine.

Tasting Notes

Nose: Crakers jacks, caramel, nut brittle, dark cherries and chocolate-covered caramels

Taste: Marzipan, bright cherry, spearmint, whipped cream, spice cinnamon, and numteg

Finish: A complex bourbon that keeps you sipping for more. This cask strength edition really showcases, the finishing casks  

STRAIGHT BOURBON WHISKEY FINISHED IN AMBURANA CASKS

When Brazil comes to mind we often think of the amazon rainforest, legendary football tournaments, white sand beaches that stretch as far as the eye can see - this exotic finish is exactly that! 

A bountiful expression of butter cream, vanilla, and cinnamon notes will fill the room, transporting you to memories of fresh baked snicker-doodles coming out of the oven. Bossa Nova is a genre of Brazilian music inspired by samba and jazz and literally translates to "new wave." But the word "bossa" is also an old Brazilian slang word meaning something done with particular charm. We feel this "new charm" (Bossa Nova) was a fitting name for this bourbon whiskey finished in Brazilian amburana wood.

BATCH NOTES: Mashbill 1 - 60% corn, 36% rye, 4% malted barley | Mashbill 2 - 75% corn, 21% rye, 4% malted barley

FINISHING AND MATURATION: American Oak Char #4 (200L) min. 5 years ; Brazilian Amburana Wood (200L) 

TASTING NOTES 

Nose: Sweet vanilla, cinnamon, and cookies dominate the nose

Palate: Brown butter, apple pie crust, gooey cinnamon buns with a hint of sage

Finish: Sweet and unfolding, a flavor that keeps on giving
